This is a delicious and easy blueberry cake to make with things that are usually on hand. My grandmother passed this down to me and now I make it with my kids.

2 ½ cups all-purpose flour
1 ½ cups white sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
½ cup vegetable oil
2 eggs, beaten
2 teaspoons vanilla extract
2 cups fresh blueberries
2 teaspoons all-purpose flour, or as needed
2 tablespoons butter, melted
2 tablespoons white sugar, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking dish.
  • Sift 2 1/2 cups flour, 1 1/2 cup sugar, baking powder, and salt together in a bowl. Add milk, vegetable oil, eggs, and vanilla extract; mix into a semi-thick batter.
  • Toss blueberries with about 2 teaspoons flour in a separate bowl; fold into batter. Pour batter into prepared baking dish.
  • Bake in the preheated oven until cake is lightly browned, 25 to 30 minutes. Brush melted butter on top of cake and sprinkle with about 2 tablespoons sugar. Continue to bake until golden brown and a toothpick inserted in the center comes out clean, 5 to 10 more minutes.

This is a simple dessert that is a great way to use fresh blueberries. Mom could stir this up in a hurry on a busy day. And it is so good.

2 c flour
1 c sugar
2 tsp baking powder
1/4 c butter, softened
1 c milk
1 large egg
1 1/4 c fresh blueberries (or drained frozen, thawed berries)
2 Tbsp sugar

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour a 9 inch square pan. Combine flour, 1 cup sugar, baking powder, butter, and milk.Beat until smooth and creamy. Add egg and beat again until well combined. Fold in blueberries and pour into prepared pan. Sprinkle 2 tablespoons of sugar over batter. Bake for 35-40 minutes or until golden brown and firm to the touch. Great served warm.
  • 2. OPTIONAL: If desired serve with lemon curd on top.

MY MOM'S MAGNIFICENT BLUEBERRY CAKE



My Mom's Magnificent Blueberry Cake image

My mom is a magnificent cook, and this blueberry cake has been a favorite for many generations of people around the world. It is very forgiving, freezes very well, and can easily be doubled for a 9"x13" pan. While fresh blueberries are best, I stock up on them when in season, freeze them, and then bake this cake with frozen berries, and it is still wonderful. One issue in our family, though, is that some of us (who shall remain nameless) annoy others by picking off all the crumbles from the top, thereby diminishing the experience for everyone else. What can I say? It's hard to resist!

1/4 cup butter or 1/4 cup margarine
3/4 cup sugar
1 egg
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup milk (I use soymilk to keep it dairy-free)
1 pint blueberries
1/2 cup sugar
1/4 cup butter
1/3 cup flour
1 teaspoon cinnamon

Steps:

  • In a large bowl, beat together the butter, sugar, and egg till well blended.
  • Sift or mix together dry ingredients in another bowl.
  • Add to creamed mixture slowly, alternating with milk/soymilk; mix well.
  • Fold in blueberries.
  • Pour into greased 8" square pan.
  • Mix together topping ingredients until large crumbles are formed.
  • Sprinkle over batter.
  • Bake at 375F for about 45 minutes.
  • Try not to pick off all the topping before your loved ones get a chance at it!

1 large egg, lightly beaten
1/2 cup milk

TOPPING:
1/3 cup sugar
1/4 cup all-purpose flour
1/4 cup finely chopped walnuts
1/2 teaspoon ground cinnamon
3 tablespoons cold butter

Steps:

  • In a bowl, combine flour, sugar and baking powder. Add egg, milk, butter and lemon zest; mix just until dry ingredients are moistened. Fold in the blueberries. Spread in a greased 9-in. square baking pan. For topping, combine sugar, flour, walnuts and cinnamon. Cut in butter until mixture is crumbly. Sprinkle over batter. Nonstick cooking spray
2 1/2 cups cake flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons powdered egg replacer
2 tablespoons seltzer
1/2 cup dairy-free margarine
1 cup plus 1/4 cup sugar
1 1/2 teaspoons pure vanilla extract
1/2 cup plus 2 tablespoons soy milk
2 cups blueberries, stems removed, washed, and dried
1/2 tablespoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees. Spray a 9-by-9-inch or 12-by 18-inch baking pan with nonstick cooking spray; set aside.
  • In a medium bowl, whisk together cake flour, baking powder, and salt; set aside. In a small bowl, whisk together egg replacer and seltzer until dissolved and frothy; set aside.
  • Cream margarine in the bowl of an electric mixer fitted with paddle attachment. Add 1 cup sugar and continue mixing until creamed together, scraping down sides of bowl as necessary. Add egg replacer mixture and vanilla; beat until well combined, scraping down sides of bowl as necessary. Slowly add flour mixture in three additions, alternating with soy milk and beginning and ending with flour mixture, beating well after each addition. Continue beating until batter is smooth and stiff. Gently fold blueberries into batter.
  • Pour batter into prepared pan, spreading evenly. In a small bowl, mix together remaining 1/4 cup sugar and cinnamon; generously sprinkle over cake. Transfer cake to oven and bake until a cake tester inserted into the center comes out clean, about 45 minutes, rotating pan halfway through baking. Cake can be served warm straight from the pan.
