APPLE-RAISIN COLE SLAW

1/2 cup golden raisins
1/2 teaspoon celery seeds
1 cup mayonnaise
1/2 cup sour cream
2 tablespoons apple cider vinegar
1 head savoy cabbage, shredded or sliced thin
1 cup carrots, shredded (about 4 small or 2 medium carrots)
2 Granny Smith apples, cored and shredded
Kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, stir together the raisins, celery seeds, mayonnaise, sour cream and apple cider vinegar. Add the cabbage, carrots, and apples, then toss to combine. Taste and season with a pinch of salt and a grind or two of pepper. Cover and refrigerate at least 1 hour before serving.

1 1/2 cups packed shredded green cabbage
1 1/2 cups packed shredded purple cabbage (red)
1/2 small red bell pepper, minced (or cut in thin strips)
1/2 small yellow bell pepper, minced (or cut in thin strips)
1 medium carrot, grated
1/2 cup raisins (black, golden or a mixture of both)
1/3 cup mayonnaise (home-made or store bought)
1/3 cup natural plain yogurt
1 tablespoon honey
1 teaspoon vinegar (recipe states cider vinegar)
1/2 teaspoon salt
nonstick cooking spray, for the honey spoon

Steps:

  • Combine the vegetables & raisins in a large bowl.
  • In a second container, combine the mayo, yogurt, honey, vinegar & salt. USe a fork or a small whisk to mix until uniform (''until you don't see the honey anymore'').
  • Pour the dressing onto the salad & mix well -- and then eat!

2 tablespoons apple cider vinegar
1 tablespoon honey
3 tablespoons extra-virgin olive oil
1 teaspoon whole celery seed
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large carrots, julienne
2 cups shredded green cabbage
2 cups shredded purple cabbage

Steps:

  • Combine the apple cider vinegar and honey in a large mixing bowl and whisk until combined. While continuously whisking, slowly pour the olive oil in to emulsify the dressing. Sprinkle in the celery seed, salt and freshly ground black pepper and stir to combine.
  • Add the carrots, green cabbage and purple cabbage. Toss with the dressing and transfer to a serving dish.

Scrumptious. Slightly sweet. A bit different from traditional coleslaw. I like the "angel hair" coleslaw cabbage, but the mixture with carrots and red cabbage is great too. Try it with dried cranberries instead of raisins. Inspired from a recipe received from a friend.

1 (10 ounce) bag coleslaw mix, of your choice
1/3 cup pine nuts or 1/3 cup unsalted sunflower seeds
1/3 cup raisins, seedless
1/3 cup onion, chopped
3/4-1 cup mayonnaise
1 tablespoon malt vinegar
2 tablespoons sugar
1/2 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Open the bag of coleslaw cabbage into a large mixing bowl.
  • Add raisins, onions and nuts. Combine gently.
  • In a small bowl, whisk together the remaining (dressing) ingredients until very well blended.
  • Pour the dressing over the cabbage mixture and gently combine until evenly blended.
  • Refrigerate for a minimum of 2-hours.
  • Garnish with a sprig of cilantro or parsley leaf (optional).

1 tablespoon white-wine vinegar
2 tablespoons vegetable oil
2 tablespoons water
1 tablespoon grated onion
1 teaspoon Dijon-style mustard
2-cups finely chopped cabbage
1 carrot, grated coarse

Steps:

  • In a small saucepan combine the raisins, the vinegar, the oil, the water, the onion, the mustard, and salt and pepper to taste and boil the mixture, stirring, for 30 seconds. In a blender purée the vinaigrette until it is smooth and in a bowl toss it with the cabbage and the carrot.

I just made these and they are so yummy! I did only use 1 cup of raisins and added 1/4 cup more of oats. I also used raisinets, instead of plain raisins, Awesome! Try them you won't be disappointed. I am leaving the baking time to the original, but mine baked up perfect in 13 minutes, it might be due to my elevation, I don't know.

2 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup quick oats
1 cup firmly packed dark brown sugar
1/2 cup granulated sugar
1 cup butter, softened
2 tablespoons honey
2 teaspoons vanilla
2 large eggs
1 1/2 cups raisins
1/2 cup nuts

Steps:

  • Preheat oven to 325°.
  • Whisk flour, soda, salt and oats together.
  • In large mixing bowl blend sugars. Add butter to form a grainy paste.
  • Scrape sides and add honey, vanilla and eggs.
  • Mix at medium speed until light.
  • Add flour mixture, raisins and nuts. Blend together.
  • Drop by rounded tablespoon on ungreased cookie sheets.
  • Bake about 18-20 minutes until they're pale golden.
  • Remove immediately to cool flat surface to cool.
