1/2 cup shortening
1/2 cup sugar
1 egg
1/2 cup molasses
1 1/2 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 cup very strong coffee (or 1/2 c. water mixed with 1 tsp instant coffee)
confectioners' sugar or icing, of your choice

Steps:

  • Grease a 9x13 pan and preheat oven to 350F Cream shortening and sugar until fluffy Add beaten egg, coffee/water and molasses.
  • Mix well.
  • Sift together dry ingredients and add to wet.
  • Mix well Pour into pan and bake 25 minutes.
  • While still warm sprinkle w/ confectionary sugar or glace with a thin icing.

½ cup shortening
½ cup white sugar
1 egg, beaten
½ cup molasses
⅓ cup hot, brewed coffee
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
2 teaspoons ground cinnamon
½ cup raisins
¼ cup butter
2 cups confectioners' sugar
2 tablespoons cold, brewed coffee

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, cream together the shortening and sugar. Blend in the egg, molasses and hot coffee. Sift together the flour, baking powder, baking soda and cinnamon; stir into the molasses mixture until well blended. Mix in the raisins. Pat the mixture evenly into the prepared pan.
  • Bake for about 25 minutes in the preheated oven, or until firm. To make icing, combine butter, confectioners' sugar and cold coffee in a medium bowl; beat until smooth. Frost bars while warm, but allow them to cool before cutting.

½ cup Crisco® All-Vegetable Shortening*
⅓ cup molasses
¾ cup firmly packed brown sugar
1 large egg, lightly beaten
1 ¼ cups Pillsbury BEST® All Purpose Flour
½ teaspoon salt
¼ teaspoon baking soda
½ cup chopped walnuts
Powdered sugar

Steps:

  • Heat oven to 350 degrees F. Coat 9 x 9-inch pan lightly with no-stick cooking spray.
  • Heat shortening and molasses to boiling in large saucepan, stirring constantly. Remove from heat. Stir in brown sugar. Add egg. Beat until fluffy. Combine flour, salt and baking soda in small bowl. Stir into molasses mixture. Blend in nuts. Spread in prepared baking pan.
  • Bake 22 to 25 minutes. Cool. Sprinkle with powdered sugar. Cut into 16 bars.

1/2 cup packed brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon allspice
1/3 cup molasses
3 tablespoons vegetable oil
1 egg (large)
3/4 cup flour
1/2 cup quick-cooking oats (or old fashioned)
1 teaspoon baking powder

Steps:

  • Preheat oven to 350°F.
  • Spray 8 inch square baking pan with nonstick spray and set aside.
  • With a whisk or electric mixer, beat together brown sugar, spices, molasses, oil and egg.
  • In a separate bowl, combine flour, oats and baking powder.
  • Add to molasses mixture; stir until blended.
  • Spread in baking pan.
  • Bake for 18-20 minutes or until a toothpick inserted in centre comes out dry.
  • Cool on wire rack.
  • Cut into squares.

RAISIN MOLASSES BARS

I've been going through a lot of old family recipes, and recipes I collected back when I was a young bride and new mother. Most of them were for baked goods. Here is another one - from a bygone era. Not sure where I got it, but we've enjoyed these bars a few times over the years.

Number Of Ingredients 18

6 Tbsp butter
1/3 c sugar
2/3 c molasses or sorghum
1 slightly beaten egg
1 tsp vanilla
1 c white whole wheat four
1/8 tsp each salt and baking soda
1 tsp cinnamon
1/8 tsp each cloves and ginger
1 c raisins
3/4 c chopped walnuts (optional)
TOPPING
2 tsp cinnamon
1/3 c sugar
OR, USE LEMON GLAZE:
2/3 c confectioners sugar
1/8 c lemon juice
1/2 tsp vanilla

Steps:

  • 1. Melt butter and cool slightly. Stir in sugar, molasses, egg, and vanilla.
  • 2. Sift together the flour, salt, baking soda, cinnamon, cloves, and ginger. Stir the raisins and nuts (if used) into the flour to coat well.
  • 3. Combine dry ingredients with the sugar mixture until well blended. Pour into a greased 15 x 10 x 1-inch cookie or jelly roll pan. Bake at 375 degrees for about 12-13 minutes.
  • 4. Cut the cake into bars when cool and dust with the cinnamon-sugar topping. *OR, top with the lemon glaze: Stir together, adjusting sugar or juice to desired consistency.

I don't remember where I found this recipe, but I happen to love Molasses, and this is fantastic!

1 1/2 c sifted flour
1 1/2 tsp baking powder
3/4 tsp salt
1/4 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves
1/2 c shortening
1/2 c sugar
1 egg
1/2 c molasses
1/3 c water

Steps:

  • 1. Sift flour with baking powder, salt, soda, cinnamon and cloves; set aside. Beat shortening and sugar on medium speed until light and fluffy; beat in egg, 1/2 cup molasses and 1/3 cup water. At low speed, beat in flour mixture just until combined. Turn into prepared pan. (Lightly greased 9 x 13 pan). Bake 20 - 25 minutes or until knife comes out clean. Frost while still warm by mixing 2 Tbls. melted butter, 1 cup sifted powdered sugar, and 1 Tbls. molasses together and spreading over warm molasses bars. (Add a tiny bit of water if necessary) Cool; cut into 2 inch bars. (These bake like brownies! EASY AND DELICIOUS!)
  • 2. BAKE AT 350*.

MOLASSES NUTTY BARS

My grandma and I used to make these cookies when I would go to stay at her house in the city for a week in the summer. They were so good, especially when we would make them together. I got to grease the pan, grate the orange, chop the nuts and break the eggs in the bowl.

CRUST;
1 1/2 c flour
1/2 tsp baking powder
1/2 c brown sugar, firmly packed
3 tsp grated orange rind
1/3 c butter or margarine
FILLING:
3 eggs
1/4 c flour
1/2 c brown sugar,packed
1/2 c light molasses
1 1/2 c sliced almonds or chopped pecans
1 tsp vanilla

Steps:

  • 1. Crust: In a bowl, mix all dry ingredients and cut in butter with pastry blender until crumbly. Spread crumbs evenly in a greased 9 x 13- inch baking pan- pressing in firmly. Bake in 350^ oven for 10 minutes.
  • 2. Filling: In medium bowl, beat eggs until foamy. Add flour, sugar and molasses. Beat only until mixture is smooth and well blended. Stir in nuts and vanilla. Pour over crust. Bake 20 minutes or until top is firm to the touch.

6 Tbsp butter
1 egg
1/3 c molasses (i prefer dark but you can use light)
1/8 tsp salt
1/8 tsp baking soda
1 tsp vanilla extract
7/8 c flour (sift before measuring)

Steps:

  • 1. Preheat oven to 375 degrees. Grease an 8x8 pan
  • 2. put softened butter into medium bowl and beat until very soft
  • 3. sift powdered sugar and add gradually to butter. Beat until light and creamy
  • 4. beat in 1 egg, molasses, salt and baking soda.
  • 5. add sifted flour in 3 parts to butter mixture beating well after each addition
  • 6. stir in vanilla until well incorporated
  • 7. pour into pan and bake for 15 minutes
  • 8. cut into bars before it is completely cooled.
  • 9. roll in powdered sugar until welll coated
