CUBAN MOJO

Refered to as Cuba's barbecue sauce, it's more of a garlic/cumin vinaigrette flavored with sour orange juice that is splashed on just about everything-it is delish! If you have a sour orange source-lucky you! If not see the note at the end of the recipe instructions for another option. If you hate cilantro use flat leaf parsley.

Yield 1 1/2 cups

Number Of Ingredients 9

1/2 cup extra virgin olive oil
10 garlic cloves, minced
2/3 cup sour orange juice
1/3 cup water
1 teaspoon dried oregano
1 teaspoon cumin
1 1/2 teaspoons salt
1 teaspoon pepper
3 tablespoons cilantro, chopped fine

Steps:

  • In a medium or large saucepan heat olive oil over medium heat.
  • Add garlic and cook until JUST light brown.
  • Turn off heat and let stand 5 minutes.
  • Stir in the sour orange juice, water, oregano, cumin, salt and pepper.
  • Heat mixture on high until a full, rolling boil is reached.
  • Boil for 2 minutes stirring a few times.
  • Remove from heat and allow mixture to come to room temperature.
  • Stir in cilantro.
  • Pour into a jar or shaker bottle with a tight fitting lid.
  • Shake well before using.
  • If sour oranges are not available use 1/2 cup fresh lime juice plus 3 tablespoons fresh navel orange juice, or other tart orange.

1 small head of garlic, peeled and separated
1 teaspoon salt
1/4 cup fresh bitter orange juice or 4 tablespoons fresh lime juice
4 tablespoons fresh orange juice
1/4 cup olive oil
1/2 teaspoon fresh oregano, chopped
1/4 teaspoon ground cumin
1 pinch dried oregano, crushed
salt and pepper, to taste

Steps:

  • Crush together garlic cloves and salt with a mortar and pestle, put into a medium bowl.
  • Stir in bitter fresh orange juice, or lime juice, and fresh orange juice, olive oil, chopped fresh oregano, cumin, crushed dried oregano, and salt to taste.

1/2 cup olive oil
8 large cloves garlic, thinly sliced crosswise
2/3 cup fresh sour orange juice (or 1/2 cup fresh lime juice and 3 tablespoons fresh grapefruit juice)
1/3 cup water
1 teaspoon ground cumin
1/2 teaspoon ground oregano
1 1/2 teaspoons salt, or to taste
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped fresh cilantro or flat-leaf parsley

Steps:

  • Heat olive oil in deep saucepan over medium heat. Add garlic, and cook until fragrant and pale golden brown. Do not let brown too much, or else garlic will become bitter.
  • Stir in sour orange juice (or lime juice and grapefruit juice), water, cumin, oregano, salt and pepper. Stand back, because the sauce may spatter. Bring to rolling boil. Correct the seasoning, adding more salt and pepper, if needed. Let cool to room temperature, and then stir in cilantro or parsley. Store in bottle or jar with tight-fitting lid; shake well before serving. Serve with grilled pork, chicken, seafood and vegetables.
