This is a decadent and rich moist dark chocolate cake recipe, but it's quick & easy as a boxed cake mix is used. You can make this simple in a bundt pan & serve without frosting with just a dusting of confectioners sugar... or you can prepare it our favorite way by making it into a delicious layer cake using canned or homemade dark chocolate frosting... This is my hubby's favorite that I make for him on Valentine's Day and his Birthday every year...

1 (18 1/4 ounce) box dark chocolate cake mix (Duncan Hines Moist Deluxe)
1/3 cup vegetable oil
1 cup water
3 large eggs
2 tablespoons sour cream (heaping tablespoons)
1 1/2 cups milk chocolate chips
cooking spray (Bakers Joy works best)
1 (18 ounce) can ready to spread dark chocolate frosting (optional)

Steps:

  • Preheat oven to 350 degrees. Spray two 8" pans with cooking spray (or spray bundt pan).
  • Blend together cake mix, oil, water, eggs, and sour cream in large bowl on low speed for 1 minute then medium high speed for 2 minutes.
  • Stir in chocolate chips by hand then pour batter evenly into pans.
  • Bake for 30-35 minutes (or 40 minutes for bundt pan) until done. Remove from oven & let cool in pans on wire rack for 15 minutes before removing from pans.
  • Cool completely before frosting.

This cake tastes like a boxed white cake mix only better, it has never failed me yet, it is a recipe that I use over and over again for the *perfect* white cake, and so easy to make too! really anything can be addded to this cake, tiny chocolate chips, nuts, dried fruit, add in some food colouring for a pastel coloured cake with matching frosting, this makes a wonderful birthday cake!--------- * NOTE* as one reviewer stated they omitted the salt, omitting the salt will change the texture of this cake completely, so please do *not* omit, using butter-flavor Crisco is acceptable but will alter the taste somewhat but not the texture ;-)

1 1/4 cups sugar
1/2 cup Crisco shortening (white only)
2 large eggs (or extra large)
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
2 teaspoons vanilla
1/2 teaspoon almond extract

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch baking pan, and line bottom of pan with parchment paper.
  • In a medium or large bowl, with an electric mixer, cream the sugar and shortening until no granules remain (about 4 minutes).
  • Add in eggs and almond extract (if using); beat very well for 5 minutes on high speed.
  • In a small bowl sift together flour, baking soda and salt.
  • Add to the creamed mixture along with the buttermilk; mix well until blended (about 2-3 minutes).
  • Transfer to a prepared baking pan.
  • Bake on second-lowest oven rack for 30-35 minutes (check for doneness after 25 minutes, this cake bakes fast!).

2 cup All Purpose Flour
3/4 cup confectioner's sugar
3/4 cup cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons butter
To make cake
1 1/3 cups water
1/2 cup vegetable oil
3 large eggs

Steps:

  • 1. Combine flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl. Stir to combine. Add shortening, then use an electric mixer on medium speed to blend shortening into dry ingredients. Mix until no chunks of shortening are visible. This is your cake mix, which you can keep in a sealed container for several months until you are ready to make the cake. 2. To make the cake preheat oven to 350 degrees F. Grease the sides and bottom of two 9-inch baking pans or one 13x9-inch pan. Lightly flour the greased pans. 3. Blend dry cake mix (from step #1) with water, oil and eggs in a large bowl with an electric mixer at low speed until moistened. Increase speed to medium and beat for 2 more minutes. 4. Pour batter into pans and bake for 30 to 33 minutes for 9-inch pans, and 35 to 38 minutes for 13x9-inch pan. You can also make cupcakes with the mix. They take 19 to 22 minutes.

MOCHA BROWNIES

I doctor up my favorite brownie mix- Duncan Hines Dark Chocolate Fudge to make this and a couple other variations. This one is my husband's favorite, and mine, as well.... so far - I'm not done fooling around with this! If you like rich mocha flavor, you should enjoy this. The computer wants me to say "Duncan Hines chewy Fudge Brownie" mix, but it's the "Dark Chocolate Fudge" mix I use!

1 (19 7/8 ounce) box Duncan Hines chewy fudge brownie mix
1/3 cup oil (I've been using Enova, supposed to be better for you)
1/3 cup water
1 -2 large egg (one for "fudgy", two if you want the brownies "cake like")
1/2 teaspoon pure vanilla extract (optional)
1/2 teaspoon coffee extract (optional)
2 teaspoons instant espresso (dry)

Steps:

  • I dump the dry mix into a large mixing bowl and add the two tsps of instant espresso to the dry mix.
  • In a measuring cup I put the 1/3 cup oil and 1/3 cup water, then add the vanilla and coffee flavoring, makes it easier for me.
  • Add the egg to the dry mix and then all the rest of the wet ingredients.
  • Stir by hand, as directed on the box, about 50 strokes - or until there aren't any ( or many) dry lumps.
  • Scrape the bowl into a prepared baking pan. The box calls for a 13 x 9 pan, but I spray the bottom of an 8x8 square pan with cooking spray and use that.
  • The package calls for a much longer baking time than I find necessary. I use my Cuisinart Toaster/ Oven/ Broiler and it takes 35 minutes at 350 degrees for it to be perfect.
