BREAD MACHINE CHOCOLATE CAKE RECIPE

- Add all of these ingredients into the bread pan, making sure that the melted butter, if hot, does not touch the raw eggs as it could scramble them. Place the pan into the bread machine & set it on Batter Bread. Press start & close the lid. The machine does all the work for you. It mixes the batter and then bakes it too. In 1 hour and 40 minutes, you will be smelling yummy cake. Remove the pan from the machine and place on a cooling rack for approximately 10 minutes. Then, turn upside down and the cake should "pop" right out. Allow the cake to cool completely, or serve warm. The kids like it served with a dollop of fresh whipped cream or powdered sugar. NOTES: This recipe can be cooked in a greased loaf pan in the oven too, on 350°F for 20 minutes. Then, if it isn't cooked through, just add additional 5 minutes until a toothpick inserted in center comes out clean. The cocoa powder is an additional ingredient that I have added. At this time, you could also add 2 tablespoons of raisins and omit the cocoa, or an additional 2 tablespoons of chocolate chips. I have made it with blueberries, dried cranberries, changed up the vanilla for banana extract and put bits of banana--the possibilities are endless.

- Mix eggs and milk in separate bowl. Set aside.
- Mix flour, baking powder, salt, and cocoa in another bowl.
- Add all ingredients to the bread pan in order listed above, beginning with butter, then sugar, then egg mixture, then chocolate chips, then flour mixture.
- Place bread pan into the bread machine and select batter bread function. Your batter bread will be done in 2 hours.

MOIST CHOCOLATE CAKE (BREAD MACHINE)
This recipe is from the cookbook that came with my bread machine, and I will say it is spot on as chocolate, and moist! No frosting needed! Your bread machine needs a cake function in order to make this. I have a Morrie's 19 function bread machine. Weight measurements are all done in grams on a digital scale.

- 1. Place the ingredients into the pan of the bread machine in the order listed, select Cake function, press start. About an hour and a half later, it will be done.
- 2. Remove the pan from the bread machine and set on the counter to cool for about an hour. Once it has cooled, then turn out the cake onto a wire rack to completely cool. (The indentations on the top are from dropping out of the pan onto the rack, I now use an oven mitt to catch it.)
- 3. Slice, and use a large spatula to pick up and set on plates, or it will fall apart. Top with some whipped cream, enjoy! Here is a slice served with two brownies.
