Cauliflower mashed potatoes are a delicious alternative to a starchy based side dish. If you are looking for a way to cut some carbs from your diet, this is a tasty way to do it.

1 medium head cauliflower cut into small pieces
1 tablespoon cream cheese, softened
1//4 cup parmesan, grated
1 teaspoon minced garlic
1/8 teaspoon chicken base or bullion (I use Better Than Bouillon)
1/8 teaspoon ground black pepper
garnish - butter and chives (optional)

Steps:

  • Microwave or cook cauliflower over boiling water for about 6 minutes. Drain well and place pieces on a clean dish towel or paper towels and press gently to remove as mush moisture as possible.
  • In a food processor, blender puree hot cauliflower with cream cheese, parmesan, garlic, chicken base and pepper until consistency is smooth and fluffy.
  • Garnish as desired and serve immediately.

I saw this recipe made on the new low carb cooking show on Food Network. I tried the recipe tonight and it is really so good - this is my spin on the recipe. This time, I omitted the rosemary and used raw minced garlic, but you may also use a few cloves of roasted garlic if you prefer. This version is different from many others as there is no sour cream and no mayonnaise. Real comfort without all that starch. (Note: Smart Balance is a lower calorie, cholesterol reducing butter substitute).

1 head fresh cauliflower, rinsed,florets only
water, as needed
1 teaspoon fresh garlic, minced or 2 cloves roasted garlic, mashed,to taste
1 teaspoon fresh rosemary, to taste,minced (optional)
1 tablespoon whipped cream cheese
1/4 cup parmesan cheese, grated
1/8 teaspoon chicken bouillon powder (I used Better Than Bouillon brand)
1/8-1/4 teaspoon low sodium salt or 1/8-1/4 teaspoon salt, to taste
1/8 teaspoon black pepper, to taste
1 tablespoon smart balance butter substitute or 1 tablespoon unsalted butter, to taste

Steps:

  • Bring a medium-large pot of water to boil.
  • Cut cauliflower into smaller pieces, add to the pot,and boil until fork tender,approximately 6 minutes; drain well.
  • Using a stick blender or potato masher, mash the cauliflower with the cream cheese, garlic, rosemary (if using), Parmesan cheese,butter,and bouillon powder.
  • Add some salt and pepper to taste- test and adjust seasonings as needed.

1 tablespoon real sour cream, more to your taste
1 tablespoon butter (not margarine)
salt

4 quarts water
2 tablespoons salt
1 head cauliflower, cut into bite-sized pieces
1 cup mayonnaise
½ cup thinly sliced celery
3 slices cooked bacon, crumbled
4 tablespoons minced onion
3 tablespoons minced sweet pickles
1 teaspoon spicy mustard, or to taste
⅛ teaspoon ground turmeric
2 hard-boiled eggs, diced
salt and ground black pepper to taste

Steps:

  • Bring water and salt to a boil over medium-high heat. Add cauliflower; bring back to a boil. Cook for 3 minutes. Remove from heat and drain.
  • Spread cauliflower pieces onto a metal tray and freeze until cool, 20 to 25 minutes.

1 head cauliflower
2 tablespoons whipping cream
2 tablespoons butter or 2 tablespoons margarine
salt
pepper
onion flakes (optional)
shredded cheese (optional)

Steps:

  • Boil the cauliflower until it is very tender (about 15 minutes) drain and place into a mixing bowl add salt, pepper, butter, and any other spice to taste and begin mixing with a mixer add whipping cream slowly as you are mixing (be careful not to add too much!) Place the mixture into a Pyrex dish and bake for 20 minutes.
  • If you want, you can sprinkle some shredded cheese on the top before baking, some extra butter, or a bit of paprika for color.

Steps:

  • Set a stockpot of water to boil over high heat.
  • Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

This is an awesome low-carb version of loaded baked potatoes, and tastes far better than any version of mock potatoes that I have tried. In fact, this dish is soooo good, you will not believe it! I do not remember where I got this recipe, but it is a fabulous side to any low-carb meal. You will be pleased, I promise! Yum! Yum!

2 1/2 cups cooked cauliflower (I use frozen, cooked until tender, in the microwave)
1 cup sour cream (low fat works here, too)
3/4 cup shredded cheddar cheese (full-fat works best)
3 green onions, finely chopped
3 -6 slices crumpled cooked bacon or 3 -6 slices turkey bacon
salt and pepper

Steps:

  • Pre-heat oven to 350.
  • Chop cooked cauliflower into very small pieces.
  • Mix sour cream, 1/2 of the green onions, 1/2 of the cheese, 1/2 of the bacon, and salt and pepper to taste in medium bowl.
  • Stir in the cauliflower.
  • Place in medium baking dish and sprinkle remaining cheese and bacon on top.
  • Bake for 20 minutes.
  • Sprinkle the remaining green onions on top just before serving.
