MOCK CHICKEN FRIED STEAK WITH MILK GRAVY
My mother made these for us four girls. Money was tight and she couldn't afford steak very often. These use ground beef. I use a 80/20 lean to fat. You can use ground round but it tends to be a little too dry. This is great with mashed potatoes. Everyone I have ever made it for loved it. The first time my DH had it he never knew it was ground beef. He just commented on the tenderness of the steak!

Steps:
- Mix 2 cups flour with salt and pepper.
- Shape ground beef into four thin patties.
- Dip patties into flour, then beaten egg, then flour again.
- Put shortening, oil or lard into a heavy skillet over medium high heat.
- When a little flour sprinkled into skillet begins to sizzle, add patties.
- Cook for about 5 minutes per side.
- Remove and drain on paper towels.
- To make gravy:.
- Remove all but four tablespoons of fat from skillet.
- Stir in 4 tablespoons of dredging flour and 1/4 teaspoon salt.
- Stir, scraping up browned bits, for about one minute till light brown.
- Whisk in milk gradually.
- Whisk until thick and bubbly.
- Remove from heat.
- Add 1/2 teaspoon black pepper or to taste.
- Stir well.
VEGAN MOCK SOUTHERN CHICKEN FRIED STEAK
I found this interesting recipe on Epicurious. I do like mock chicken so I'm anticipating good things with this recipe. Note I didn't include the separate time to bake the biscuits in the frying time for the chicken steaks.

- Biscuits:.
- In a medium bowl mix the flour, baking powder, nutritional yeast flakes and salt together.
- With a fork, blend in the margarine until the mixture is crumbly, then stir in the soy milk and blend well.
- Drop biscuit size spoonfuls of dough onto a lightly greased baking sheet.
- Bake at 450'F for 10-15 minutes until nicely golden brown.
- Chicken:.
- While the biscuits are baking, preheat a large heavy skillet over medium high heat.
- slice the mock chicken into small round steaks.
- Pour 1/2 cup of flour into a shallow dis and pour the other 1/2 cup flour into another shallow dish and add the cornmeal, paprika, salt and pepper. Pour the 1/2 cup non-dairy milk into a separate shallow bowl.
- Dip the mock chicken into the soy milk then the plain flour. Next dip the mock chicken into the soy milk and then into the season flour cornmeal mixture.
- Add 2 tablespoons of oil to a hot pan and cook 3 steaks at a time. Brown the steaks about 2 minutes per side or until cooked and remove from the pan.
- Add 2 tablespoons more of oil and reheat with remaining steaks. Remove the steaks to a serving platter.
- Add 2 tablespoons flour to the pan and cook for 2 minutes. Whisk in the broth and parsley, season with salt and pepper.
- Whisk the soy creamer into the gravy. When the gravy bubbles remove from the heat.
- Serve steak and warm biscuits with gravy on top.

- mix beef onion powder parsely chili powder if you want eggs and 1 cup of the cracker crumbs
- mix well.
- divide mixture into 8 balls
- sprinkle rest of cracker crumbs on board
- put pattties on these and roll out thin
- be sure each side is well coated with crumbs
- put on wax paper and chill 30 minutes or may be frozen brown on both sides then put in oven to keep hot.

- 1. Put salt and garlic powder on chicken breasts. Mix bread crumbs and parmesan cheese together in separate dish.
- 2. Brush both sides of each chicken breast with mayonnaise. Dredge chicken breast in bread crumb/parmesan cheese mixture.
- 3. Place chicken breast on broiler pan. Bake in 400 degree oven for 45 minutes to 1 hour until chicken is done.
MOCK POPEYE'S FRIED CHICKEN(MILD)
please note this is not popeye's fried chicken but a close second. you want it spicey add a little hot sauce to the egg and water.

- 1. mix together your eggs and water in a med glass mixing bowl. beat eggs and water well set aside.
- 2. put your corn flakes into a second large mixing bowl set aside.
- 3. put enough corn or conola oil in a large heavy skillet to cover bottom about 1inch. heat on med/high temp.
- 4. prepare two large baking sheets. 9x12x2 by greasing lightly set aside pre heat oven to 350degrees. you will need enough tin foil to cover both pans tightly on three sides and loosly on oneside.(to allow steam to excape)
- 5. in third large glass mixing bowl mix in the following, flour,cornstarch,season salt,paprika,baking soda,dressing,soup,sauce mixes and sugar. mix well with wire wisk after each addition.
- 6. LETS GET TO DIPPING AND DREDGING: set up your bowls as follows: bowl one=flour mixture,bowl two=eggs/water,bowl three=corn flakes. dip each piece of chicken in the following order 1,2,3, then again in bowl one quickly but lightly as to not knock off the corn flakes.
- 7. place each piece of chicken skin side down in frying pan. browning on both sides. remove to baking sheet, placing chicken skin side up at this point. cover with tin foil tightly on three sides and loosly on one to allow for steam to escape. bake for 35-45 minutes check to see for chicken tenderness.remove tin foil and allow to remain cooking for a additional 5 minuts to crisp up the coating.

I'm not sure where my mom got this recipe, but she used to make it at least once a month. Although she never served it with gravy, I think peppered gravy would go great with this.

- In a medium bowl, mix together the ground beef, parsley, chili powder, salt, egg, and 1 cup of crushed saltine crackers. Form into 6 balls, then flatten into patties. Coat patties with remaining cracker crumbs, and place them on a plate. Refrigerate for at least 30 minutes.

CROCK POT MOCK FRIED CHICKEN

- Season thawed chicken - on both sides - heavily with garlic salt and black pepper.
- Rub softened butter over the surface of each piece of chicken, top and bottom.
- Put into crock pot insert, and cook on high for 2 to 4 hours or until the internal temperature is 160 degrees F.
- Remove from crock pot, and place onto a broil pan.
- Broil chicken in oven for approximately 5 minutes or until skin is golden brown and crispy. Be sure to watch chicken closely so the skin doesn't burn.

I tried this in a pinch when I needed a side dish for an "Asian" style chicken meal I was making. It's not authentic in any sense, but it'll do when you want to shortcut a rice dish :)

- Prepare rice as directed, putting the chicken bouillon cubes in the water as it heats.
- In a skillet, place soy sauce and whatever vegetables you want in your rice, cooking thoroughly. Add garlic powder and salt to taste.
- In a separate pan, cook the eggs and then shred them (optional).
- When the rice is finished, put it into the skillet with the vegetables and soysauce, then add egg shreds. Mix, serve, and enjoy.
