1 lb or veal, boneless, cut into 2-inch cubes pork
1 tbsp garlic powder
1 tbsp onion powder
½ tbsp smoked paprika
1 tsp salt
1 tsp ground black pepper
¼ tsp chili powder
½ cup milk
4 tbsp all-purpose flour
4 beaten eggs
3 cups breadcrumbs
enough to cover skewers frying oil

Steps:

  • In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, smoked paprika, and chili powder.
  • Sprinkle the spice blend over the meat and mix until all pieces of meat are well-seasoned.
  • In a mixing bowl, whisk together milk and eggs. Pour the breadcrumbs into another separate tray.
  • Preheat the oven to 350 degrees F and prepare a large baking dish with a wire rack.
  • Heat the oil for frying to 350 degrees F.
  • Once the oil is hot, dip your skewers first into the flour, then into the egg mixture, and then into the breadcrumbs, and then back to the egg mixture and breadcrumbs again. Skewer the chunks of meat.
  • Fry the skewers for 2 to 3 minutes on each side or until the coating is crispy and golden brown.
  • Place the fried skewers onto a wire rack and bake at 350 degrees F for 20 minutes.
  • Serve with dipping sauce and your choice of sides.

1 egg, room temperature, lightly beaten
1/2 cup cornflake crumbs
1/4 cup milk
2 tablespoons finely chopped green pepper
1 teaspoon salt
3/4 pound ground pork
3/4 pound ground veal
12 Popsicle sticks
COATING:
1 egg
1/4 cup milk
2 cups cornflake crumbs
Oil for frying

Steps:

  • In a large bowl, combine the first five ingredients. Crumble ground meat over mixture and mix well. Shape a 1/4 cupful of meat mixture around each Popsicle stick to resemble a 3-in. log., In a shallow bowl, whisk egg and milk. Place cornflake crumbs in another shallow bowl. Coat each leg in crumbs, then dip in egg mixture and recoat in crumbs. Let stand for 5 minutes. Preheat oven to 350°., In an electric skillet, heat 1/4 in. oil to 375°. Fry legs, a few at a time, for 1 minute on each side or until golden brown. Drain on paper towels. , Arrange on an ungreased baking sheet. Bake until no pink remains and a thermometer reads 160°, 15-20 minutes.

MOCK CHICKEN DRUM STICKS
1 1/2 lb lean ground pork
1 1/2 lb lean ground veal
1 tsp each: salt and onion powder
1/2 tsp each: ground black pepper and poultry seasoning
EGG COATING
2 large eggs (beaten well)
1/3 c milk
BREAD COATING
1 c fine, dry bread crumbs
FOR FRYING
1/3 c shortening
OPTIONAL INGREDIENTS
3/4 c meat stock or water
paprika (to sprinkle lightly... optional)
bamboo skewers or popsicle sticks

Steps:

  • 1. Mix all mock chicken leg ingredients together well. Form into chicken drum stick shapes.
  • 2. Beat together the egg and milk. Dip the "drum sticks" into egg and milk mixture.
  • 3. Put Bread crumbs in a bowl. Dip the "drum sticks" into the bread crumbs to totally coat them.
  • 4. PAN FRIED METHOD: .
  • 5. Fry the "drum sticks" in shortening in a medium-hot skillet. Turning to brown on all sides.
  • 6. Pour the meat stock (or water) into the pan. Cover and simmer slowly on low heat for about 1 hour until "drum sticks" are cooked and a gravy has formed. 10 servings.

1 white onion, diced
2 cups chicken, cooked, shredded

4 oz cream cheese
3 tablespoons fresh parsley, chopped
1 tablespoon unsalted butter
2 cups whole milk
¼ cup chicken broth
2 cups all-purpose flour
egg
2 cups panko breadcrumbs
oil, for frying

Steps:

  • In a medium pot, heat olive oil, then sauté garlic and onions until soft and brown. Add shredded chicken, salt, and paprika (or cayenne pepper). Stir to incorporate.
  • Transfer mixture into a bowl, add cream cheese and parsley. Mix well.
  • In the same pot, add butter, chicken broth, and milk. Bring to a boil. Stir in flour until dough is formed.
  • Transfer dough to a flat surface. Knead the dough while it is warm, but not hot.
  • Pinch a piece of dough, about the size of a large egg, and roll into a ball. Using your hands, flatten the dough and spoon filling into the center. Wrap the dough into a pear shape and make sure there aren't any holes.

Her birthday is August 16, so she remembers how it was always really hot, yet her Mom would still prepare everything for her special day. She would make enough for 2 skewers per person, and with all of her family that meant feeding 12 people. The amount of meat I have listed is an estimate, as the paper this was originally written on didn't list specifics, so I don't know how much she bought to feed that many!

cooking oil, for frying
1 1/2 kg chicken cutlets
1 -2 cup water
1 small onion, chopped
2 garlic cloves, minced
salt and pepper
1 cup breadcrumbs, or as needed
1 cup rice flour
2 1/2 cups milk
1/2 cup butter
3 egg yolks
1/4 teaspoon chili sauce
chili salsa (optional if you want it hot or not)

Steps:

  • Heat cooking oil on a pan and when hot enough, add and brown the chicken at both sides.
  • Add 1-2 cups of water enough to boil chicken for 20 mins or until tender. Don't forget to cover it. Drain and set aside liquid.
  • When chicken is cool enough, separate the meat from the bones. Cut the breast into12 long strips and set aside.
  • Mince the rest of the meat and combine with onion, cloves, salt and pepper. You can use a food processor to make the mincing and mixing quick just by pulsing it. Set aside. You can also set aside the thin bones to serve as a sticks for the chicken later on.
  • For the dough: mix rice flour with milk, add enough chicken juices that was set aside to make a firm dough. Then, add butter and egg yolks to soften it. Add and mix the minced chicken. Add chili sauce and mix.
  • Divide dough in 12 equal parts. Flatten it a bit with palm, add a piece of chicken breast from near the edge. Roll to cover then shape it like a bulb or teardrop with a tapered end. You can push in the thin bones at the thin part of the shaped dough so they looks like chicken drumsticks.
  • Roll in breadcrumbs and fry in hot oil until golden brown putting it on strainer or napkins to help drain excess oil.
  • Serve with chili salsa.

1 large chicken, about 3 pounds
1 bay leaf
1 medium onion
1 teaspoon salt
1 clove minced garlic
1 chipped tomato (without skin or seeds)
1 tablespoon chopped parsley
5 large potatoes
1 egg beaten
2 1/2 cups flour
bread crumbs
oil to fry

Steps:

  • Cook the chicken with the chopped onion, garlic salt and parsley and bay leaf. When tender, remove from broth and either add water or boil down to 1 cup. Save 1 tablespoon chopped onion to use later. Peel the potatoes and boil until tender. Mash the potatoes. Beat the egg and add to the potatoes. Add 1/2 cup of the chicken broth to the mashed potato mixture and salt to taste. Add 2-3 cups of flour. It should look like bread dough. Set aside. Remove the chicken from the bones and skin and cut the chicken meat into small pieces. Thicken the other 1/2 cup chicken broth with a little flour. Add the cut up chicken to make the filling. Make the dough into small circles about 2 inches by 2 inch in diameter. Place a spoon full of filling on the circle and close and shape to look like a chicken leg. Roll in bread crumbs and deep fry. Insert decorated tooth pick into narrow end.
