Of all the punch recipes I've tried, I keep coming back to this one. It's so easy to keep the ingredients in the refrigerator and mix as much as needed.-Betty B. Claycomb, Alverton, Pennsylvania

2-INGREDIENT PUNCH (MOCK CHAMPAGNE PUNCH)
I've been making this punch for years. I wish I had a dollar for every time someone asks for the receipe and then thinks that I'm truly keeping it a secret because they cant believe it only has 2 ingredients. It is the easiest, most light and refreshing compliment to any shower, tea or party gathering. It's beautiful looking too and matches any theme or color. You can make it for a few people up to 100's and still, it is a money friendly punch because it has only 2 ingredients. But don't let the 'only 2' ingredients fool you. It's delicious! (Some people say it reminds them of champagne.) Kid friendly, teen friendly, adult friendly. Enjoy!

Steps:
- Place white grape juice and ginger-ale in refrigerator overnight or until well chilled. Placing them in the freezer for a couple of hours before serving will make them 'icy' and everyones favorite.
- In a serving picture or punch bowl, pour equal parts white grape juice and ginger-ale. Stir gently. Fill each glass, and if you want garnish with frozen fruit.
- Optional Garnish: On a lined cookie sheet, place the fruit(s) in a single layer but not touching, into the freezer for several hours until frozen (or overnight). After they are completely frozen, they can be bagged together as long as they stay in the freezer so they don't stick together. Then use one of each fruit to garnish each glass. It is beautiful and also keeps it colder longer and doesn't water down the flavor.

I recently served this at a Baby Shower where, of course, the expecting Mom could not have any alcohol. Everyone loved it and didn't miss the real champagne at all. Recipe and photo given to me by a friend.

MOCK CHAMPAGNE PUNCH
I've seen several mock champagne recipes, but none have had quite this combination of ingredients. It's a really refreshingly tasty non-alcoholic punch. I had it at a work function several years ago (where alcohol was not allowed) to celebrate a co-worker's upcoming wedding. Prep time includes the minimum freezing time usually needed to freeze the ice ring.

Steps:
- Make an ice ring by filling a ring-shaped cake pan (or bundt pan) about half full with 1/2 liter of ginger ale. Place in freezer until partially frozen (about 1 hour).
- Once partially frozen, remove the pan from the freezer. At this point you can place EDIBLE flowers or fruit slices around the ring, if you wish. Fill the pan almost full with the remaining 1/2 liter of ginger ale. Return pan to the freezer for several hours or until the ring is frozen solid.
- When ready to serve the punch, add a full 2 liter bottle of ginger ale, the pineapple juice and the white grape juice to a large punch bowl. Stir gently with the ladle or wodden spoon.
- Let the frozen ice ring float on top of the punch.
- NOTE - The ice ring is made of ginger ale, not water. So it will not only keep the punch chilled, but it will also enhance the flavor of the punch (and won't water down the punch after melting-like plain ice cubes would tend to do).

Steps:
- 1. Mix the grape juice and soda in equal parts. Before serving, place mixture in glass, add a splash of Cranberry/Raspberry Juice and a frozen berry to glass. Serve in champagne glasses or small drink glasses.
- 2. For double duty, add decoration and function to the ice cubes by freezing them with a raspberry in each cube. This will keep the drink cold while being decorative after it melts, and best of all, edible!
