These are so good! It's from Taste of Home, and what a taste it is! They're everything I want in a brownie, they're delicious, smooth and creamy. If you like mocha, you'll love these as I do.

1 1/4 cups semi-sweet chocolate chips
1/2 cup butter
1 teaspoon instant coffee granules
2 tablespoons hot water
2 eggs
3/4 cup packed brown sugar
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1 tablespoon instant coffee granules
1 tablespoon hot water
1 (8 ounce) package cream cheese, softened
1/3 cup powdered sugar
6 ounces semi-sweet chocolate chips, melted
1/4 cup semi-sweet chocolate chips
1 teaspoon shortening

Steps:

  • Directions:.
  • In a heavy saucepan or microwave, melt chips and butter. Stir until smooth; cool for 5 minutes. Dissolve coffee granules in hot water; set aside. In a large bowl, beat eggs and brown sugar; beat on medium for 1 minute. Stir in chocolate mixture and coffee. Combine flour and baking powder; gradually add to chocolate mixture.
  • Transfer to a greased 9-in. square baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out with moist crumbs. Cool completely on a wire rack.
  • For filling:.
  • Dissolve coffee granules in water; set aside. In a small bowl, beat cream cheese until smooth. Beat in confectioners' sugar, melted chocolate and coffee. Spread over brownies.
  • For glaze:.
  • Melt the chocolate chips and shortening in a heavy saucepan or microwave; stir until smooth. Drizzle over filling. Refrigerate for at least 2 hours before cutting.
  • Store in the refrigerator.

2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, divided
1/4 cup butter or margarine
3/4 cup sugar, divided
3/4 cup MAXWELL HOUSE INTERNATIONAL Suisse Mocha, divided
3 eggs, divided
3/4 cup flour
2/3 cup whipping cream

Steps:

  • Heat oven to 350°F.
  • Microwave 2 oz. chocolate and butter in medium microwaveable bowl on HIGH 1-1/2 min. or until butter is melted. Stir until chocolate is completely melted. Add 1/2 cup sugar and 1/4 cup coffee; mix well. Blend in 1 egg. Stir in flour; spread onto bottom of 8-inch square pan sprayed with cooking spray.
  • Microwave remaining chocolate and cream in microwaveable bowl 1-1/2 min.; stir until chocolate is completely melted. Stir in remaining coffee.
  • Beat remaining sugar and eggs in small bowl with mixer on high speed 1 min. or until thick and lemon colored. Add cream mixture; mix well. Pour over batter in pan.
  • Bake 35 to 40 min. or until topping is set and edges begin to pull away from sides of pan. Cool completely before cutting to serve.

1 teaspoon instant coffee dissolved in 2 tablespoons water (optional)
3/4 cup flour
1/2 teaspoon baking powder
Truffle Filling
1 cup semi-sweet chocolate chips (6 oz.)
3 teaspoons instant coffee
1 (8-ounce) package cream cheese softened
1/3 cup powdered sugar
Glaze
1/4 cup semi-sweet chocolate chips (1 1/2 oz.)
1 teaspoon vegetable shortening solid

Steps:

  • Preheat oven to 350°. Grease an 8- or 9-inch square baking pan.To make brownie layer, melt 1 1/4 cups chocolate chips with butter. Cool slightly. In a large mixer bowl at medium speed, beat brown sugar and eggs. Add chocolate mixture and dissolved coffee. Mix well. Stir in flour and baking powder. Spread evenly in pan.Bake 30 to 35 minutes until a wooden pick inserted in center comes out clean. Cool pan on a wire rack.To make truffle filling, melt 1 cup chocolate chips with coffee powder.
