One 14-ounce can sweetened condensed milk
One 12-ounce bag semisweet chocolate chips or 12 ounces semisweet chocolate, cut into chunks
4 tablespoons unsalted butter
2 teaspoons instant espresso
1 teaspoon pure vanilla extract

Steps:

  • In a medium saucepan, combine the condensed milk, chocolate, butter and espresso and cook over low heat, stirring, until the chocolate is completely melted and the sauce is smooth. Remove from the heat and stir in the vanilla. Transfer the sauce to a small pitcher. Serve over ice cream.

1 1/2 cups chocolate cookie crumbs (about 6 1/2 ounces)
6 tablespoons unsalted butter, melted
3 tablespoons sugar
2 tablespoons Kahlua
1 quart chocolate ice cream
1 pint coffee ice cream
4 tablespoons Kahlua
4 to 6 heath bars, crushed in food processor or with mallet
8 ounces of chopped semisweet chocolate
2 tablespoons, plus 1 teaspoon butter
1/2 cup sugar
1/2 cup heavy cream
1/4 cup hot water
1 teaspoon vanilla
Pinch of salt

Steps:

  • Preheat oven to 350 degrees. Mix all ingredients in medium bowl. Press crust mixture onto bottom of 9-inch spring form pan with 2 3/4 inches high on the sides. Bake crust until firm, about 8 minutes. Transfer pan to rack and cool crust completely.
  • Mix ice cream, kahlua in large bowl. Mix in heath bars, saving several tablespoons for garnish. Pour ice cream into crust, smooth top, freeze until firm, about four hours. Can be prepared 2 days ahead covered.
  • Using small knife cut around side of pan to loosen torte. Remove pan sides, sprinkle saved crushed heath bar on top. Let torte stand 3 to 5 minutes. Cut into wedges and serve with hot fudge sauce.
  • Combine chopped dark chocolate with butter, sugar, heavy cream, and hot water. Melt mixture stirring, at low heat for five minutes. Remove from heat, add vanilla and salt and serve warm.

Sauce
2 tablespoons boiling water
1 tablespoon instant espresso powder or instant coffee powder
1 cup sugar
2 tablespoons unsweetened cocoa powder
1 cup whipping cream
1/4 cup light corn syrup
2 ounces unsweetened chocolate, finely chopped
2 tablespoons (1/4 stick) unsalted butter
1 1/2 teaspoons vanilla extract
2 pints caramel ice cream (such as dulce de leche)
1/2 cup chilled whipping cream
1 tablespoon powdered sugar
2 tablespoons chopped pecans

Steps:

  • For crust:
  • Preheat oven to 350°F. Blend pecans and sugar in processor until pecans are finely ground. Add cookie crumbs and cinnamon and process to combine. Add butter and blend until moist clumps form. Press crust onto bottom and up sides of 9-inch glass pie dish. Bake until crust is lightly toasted, about 10 minutes. Cool completely.
  • For sauce:
  • Stir 2 tablespoons boiling water and coffee powder in small bowl until powder is dissolved. Whisk sugar and cocoa in heavy medium saucepan. Whisk in 1 cup cream, corn syrup, and coffee mixture. Add chocolate and butter. Bring to boil over high heat, stirring constantly. Reduce heat to medium and simmer until slightly thickened, stirring occasionally, about 4 minutes. Cool 30 minutes. Stir in 1 teaspoon vanilla.
  • Soften 1 pint ice cream at room temperature 15 minutes. Spread evenly over bottom of crust. Drizzle 3 tablespoons sauce over ice cream. Freeze until sauce sets, about 15 minutes.
  • Meanwhile, soften remaining 1 pint ice cream at room temperature 15 minutes. Spread evenly atop sauce. Drizzle with 3 tablespoons sauce. Freeze pie until frozen, at least 4 hours. (Sauce and pie can be made 1 day ahead. Cover and refrigerate sauce. Keep pie frozen.)
  • Rewarm mocha fudge sauce over low heat, stirring often. Whip 1/2 cup chilled cream, powdered sugar, and remaining 1/2 teaspoon vanilla in medium bowl until peaks form. Transfer to pastry bag fitted with star tip. Pipe rosettes of cream around top edge of pie. Sprinkle with chopped pecans. Cut pie into wedges and serve with sauce.

Steps:

  • Whisk together milk, cornstarch, coffee granules, and 1 tablespoon granulated sugar in a small saucepan until smooth. Cook, whisking, over moderate heat until pudding boils and is thickened, 1 to 2 minutes, and transfer to a bowl. Stir in vanilla and put a sheet of wax paper on surface of pudding to prevent a skin from forming. Cool pudding to warm.
  • Preheat oven to 400°F. Lightly oil 2 (6-oz.) ramekins and sprinkle each with 1/2 tablespoon granulated sugar.
  • Beat egg whites with cream of tartar and a pinch salt in a large bowl until they just hold soft peaks. Gradually add remaining 3 tablespoons granulated sugar, beating until whites hold stiff peaks. Stir 1/4 of whites into pudding to lighten and fold in remaining whites gently but thoroughly.

1 quart coffee ice cream, softened
1 10.75-ounce frozen pound cake
4 large egg whites
1/4 teaspoon cream of tartar
1 teaspoon coffee liqueur
1/3 cup sugar
Sauce
1 1/2 cups freshly brewed strong coffee
10 ounces semisweet chocolate, chopped
2 tablespoons coffee liqueur

Steps:

  • For cake:
  • Line 9x5x2 1/2-inch metal loaf pan with plastic wrap, leaving overhang. Spoon ice cream into prepared pan, spreading evenly and smoothing top. Cut cake horizontally in half. Arrange 1 cake piece, cut side down, atop ice cream and against 1 corner of pan. Cut remaining cake piece into strips and arrange in pan to cover ice cream completely. Cover with overhanging plastic and freeze until firm, at least 4 hours.
  • Uncover cake. Invert onto metal or other ovenproof platter. Freeze while preparing meringue. Beat egg whites in large bowl until foamy. Add cream of tartar. Beat until soft peaks form. Beat in liqueur. Gradually add sugar, beating until stiff glossy peaks form. Spread meringue over cake, covering cake completely and sealing meringue to platter. Freeze overnight.
  • For sauce:
  • Combine coffee and semisweet chocolate in heavy small saucepan. Stir over medium-low heat until mixture is smooth. Increase heat to medium. Simmer until sauce thickens, about 2 minutes. Cool slightly. Stir in coffee liqueur. (Can be prepared 3 days ahead. Keep cake frozen. Cover sauce and refrigerate; rewarm sauce over medium-low heat before serving.)
  • Position rack in center of oven and preheat to 500°F for 20 minutes. Bake dessert until meringue is lightly browned and just set, about 3 minutes.
  • Cut baked Alaska into slices; arrange on plates. Spoon warm sauce around dessert and serve.

WHITE CHOCOLATE MOCHA SAUCE

I am so excited! I finally found a recipe that I think tastes the same, if not better than Starbucks White Mocha!!! The recipe is on the inside of the wrapper for Ghirardelli White Chocolate bars-usually found in the baking aisle (not with the candy bars) This is unbelievably good! I keep mine in a mason jar. Heat my milk and stir in some to taste, add a couple shots of espresso and top with real whip cream.......I am so so so happy I found this recipe. It's going to save me so much money!

1 (4 ounce) bar ghirardelli white chocolate baking bar (broken into 1-inch pieces)
1 tablespoon butter

  • In a double boiler, combine the corn syrup, marshmallow creme, white chocolate, butter, and milk over hot, but not boiling water.

  • Preheat the oven to 400 degrees F. Lightly butter a 9-inch springform pan. For the cake: Sift the flour, cocoa, and baking powder together. In a mixing bowl, whisk the egg yolks with the sugar until the mixture is pale in color. Stir in the butter. Fold in the dry ingredients and mix until thoroughly incorporated. In an electric mixer, beat the egg whites, salt and cream of tartar until stiff peaks form. Fold the white into the chocolate mixture. Pour the batter into the springform pan and bake for 35 minutes. Allow the cake to cool and remove the sides of the pan. Slice the cake into 4 equal layers. Leave the bottom layer in the pan and reattach the sides of the pan. For the pudding: Melt chocolate in a double boiler. Remove the double boiler from the heat and whisk in the egg yolks. In a sauce pan, bring the cream and sugar up to a boil. Whisk the cream into the chocolate mixture. Fold in the pecans and vanilla. Spread a quarter of the chocolate pudding over the first layer and top with another layer of the cake. Continue to layer the pudding and cake until the cake is completed. Let the cake sit for 2 to 3 hours to allow the cake to absorb the pudding. For the sauce: In a sauce pan, bring the cream and Tia Maria to a boil with the vanilla bean. Cover the pan and remove from the heat, and set aside to infuse the cream for 15 minutes. In a mixing bowl, whisk the eggs while gradually adding the sugar. Whisk the cream into the egg mixture. Pour back into the sauce pan and bring the sauce up to a simmer. Cook the sauce until it coats the back of the spoon, about 8-10 minutes. Strain and cool. Whisk in the coffee. Spoon the sauce in the middle of the plate. Place a piece of the cake in the center of the sauce. Garnish with the whipped cream, powdered sugar, and broken chocolate pieces.

1/2 cup heavy whipping cream
1/4 cup coarsely ground coffee beans
1 1/3 cups sugar
1 cup light corn syrup

4 ounces unsweetened chocolate, finely chopped
1/4 cup (1/2 stick) unsalted butter, diced
2 teaspoons vanilla extract

Steps:

  • Sift cocoa into medium bowl. Bring cream and ground coffee to boil in heavy small saucepan, stirring to blend. Remove from heat; cover and steep 10 minutes. Strain cream through fine sieve into another bowl, pressing on coffee grounds to release as much cream as possible.
  • Bring sugar, corn syrup, 1/4 cup water, and coffee-flavored cream to boil in medium saucepan, whisking until sugar dissolves. Boil 1 minute, brushing down sides of pan with wet pastry brush. Remove from heat. Whisk in chocolate, butter, and vanilla. Pour 1/4 of chocolate mixture into cocoa to moisten, then add remaining chocolate mixture, whisking until sauce is smooth and shiny. 1/2 cup water
1/4 cup kumquats (about 6), sliced thin and seeded
2 teaspoons Grand Marnier
2 tablespoons fresh or unthawed frozen cranberries, sliced thin
1/4 cup water
1/2 cup unsweetened Dutch-process cocoa powder
2 teaspoons instant espresso powder
2 large eggs, separated
4 ounces fine-quality bittersweet chocolate (not unsweetened)
1/2 stick (1/4 cup) unsalted butter
1/8 teaspoon cream of tartar
6 tablespoons sugar
1/3 cup well-chilled heavy cream
1/2 tablespoon sugar
1/4 teaspoon instant espresso powder
Accompaniment:Phyllo Pecan Crisps

Steps:

  • In a small saucepan simmer sugar, water, and kumquats until reduced to about 2/3 cup and stir in Grand Marnier. Cool sauce to room temperature and stir in cranberries. Sauce may be made 1 week ahead and chilled, covered.
  • Have ready an instant-read thermometer in a cup of very hot water. In a small bowl stir together 1/4 cup water, cocoa powder, espresso powder, and yolks until smooth. In a metal bowl set over a saucepan of simmering water melt bittersweet chocolate and butter, stirring occasionally, until smooth. Stir cocoa mixture into chocolate mixture and cook 1 minute, stirring constantly. Remove bowl from pan and check temperature, tilting bowl to cover thermometer tip by a least 2 inches. If temperature is less than 160°F., rinse thermometer and return to cup. Check temperature every 30 seconds until thermometer registers 160°F. Remove bowl from pan, reserving simmering water over heat, and cool chocolate mixture to room temperature.
  • Clean thermometer and put in a clean cup of very hot water. In another metal bowl stir together whites, cream of tartar, and sugar with a rubber spatula and put bowl over pan of reserved simmering water. Cook mixture, stirring constantly with rubber spatula (to keep mixture as froth-free as possible), checking temperature in same manner, 30 seconds to 1 minute, or until thermometer registers 160°F. and remove from heat. Beat mixture with am electric mixer until cool and meringue holds stiff peaks.
  • Gently fold chocolate mixture into meringue until combined well and chill 15 minutes, or until just firm enough to hold its shape when piped. Spoon mousse into a pastry bag fitted with 1/2-inch star tip and pipe about 1/2 cup mousse onto each of 2 dessert plates in a mound 2 1/2 inches in diameter and 2 inches high. Mousse may be piped onto plates 1 day ahead and chilled, covered loosely with plastic wrap.
  • In a bowl with a whisk or cleaned beaters beat together espresso cream ingredients until cream just holds stiff peaks. Espresso cream may be made 2 hours ahead and chilled, covered.
  • Dollop half of espresso cream on top of each serving of mousse and lean 2 or 3 crisps against mousse. Spoon sauce around desserts.

2 tablespoons whole milk
2 (1 ounce) squares bittersweet chocolate, chopped
2 (1 ounce) squares semisweet chocolate, chopped
3 egg whites
1 teaspoon superfine sugar
½ cup heavy cream
2 (1 ounce) squares semisweet chocolate, chopped
1 tablespoon instant espresso powder
2 tablespoons light corn syrup
1 tablespoon coffee liqueur (such as Kahlua®)
¼ teaspoon vanilla extract
2 small scoops vanilla ice cream
8 fresh raspberries
2 tablespoons chocolate shavings, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Brush the insides of two 8-ounce ramekins with melted butter. Chill for 5 minutes, then brush again with melted butter. Add 1 teaspoon cocoa powder to each ramekin and roll around to evenly coat bottom and sides.

2 tablespoons dark rum
1 cup heavy cream
1/8 teaspoon salt

Steps:

  • In a medium-size heavy saucepan over low heat melt the butter.
  • Add the sugar, cocoa, rum, heavy cream, and salt.
  • Stir over moderate heat until the mixture comes to a boil.
  • Add the instant coffee and stir to dissolve.
  • Reduce the heat and let simmer for 5 minutes.
  • Remove from the heat and stir in the vanilla.

A fantastic, make ahead, "ice cream like" dessert! Very rich, but not too sweet. A good recipe for those times when you want an impressive dessert. This recipe comes from "La Dolce Vita" by Michele Scicolone Prep time does not include 8 hour minium freezing time. Cook time is for the sauce.

4 large eggs, separated,at room temperature
3/4 cup sifted confectioners' sugar
1/8 teaspoon ground cinnamon
3/4 cup chilled heavy cream
1 tablespoon instant espresso powder, dissolved in
1 teaspoon water
cocoa powder
4 ounces semisweet chocolate, coarsely chopped
1/2 cup brewed espresso
2 tablespoons unsalted butter
1 tablespoon rum or 1 tablespoon grappa

Steps:

  • Semifreddo: Line a 9x5x3 inch metal loaf pan with plastic wrap, leaving a 2-inch overhang on the ends.
  • Chill the pan in the freezer.
  • In the large bowl of an electric mixer, beat together the egg yolks, 1/4 cup of the confectioner's sugar, and the cinnamon until thick and pale.
  • In a large bowl, beat the egg whites until they are foamy.
  • Gradually add the remaining 1/2 cup confectioner's sugar, beating until the whites just hold stiff peaks.
  • In a large bowl, beat the cream until it just holds stiff peaks.
  • Gently but thoroughly fold in the whites, and then fold the cream mixture into the yolk mixture.
  • Pour half the mixture into the chilled pan and freeze it for 45 minutes.
  • Stir the espresso into the remaining mixture, cover, and refrigerate until needed.
  • Stir the espresso mixture and pour it over the frozen cinnamon layer, smoothing the top.
  • Cover with plastic wrap and freeze for at least 8 hours, or overnight.
  • Unmold the semifreddo onto a serving dish.
  • Sprinkle very lightly with cocoa powder.
  • Serve with mocha sauce, if desired.
  • Mocha Sauce: In a small saucepan, combine the chocolate, espresso, and butter.
  • Heat over low heat until the chocolate is almost melted.
  • Remove from heat and stir until completely smooth.
  • Stir in the Cognac.
  • Serve warm.

vanilla ice cream, scooped into 4 balls and frozen for 15 minutes
1 cup sweetened coconut (about a 3 1/2-ounce can), toasted lightly if desired and chopped fine
1/3 cup firmly packed light brown sugar
1 tablespoon light corn syrup
2 tablespoons instant espresso powder
1 1/2 ounces unsweetened chocolate, chopped fine
1/4 cup heavy cream
1 tablespoon Kahlúa

Steps:

  • In a shallow dish roll the ice-cream balls in the coconut, coating them heavily, and freeze the snowballs while making the mocha sauce. In a small heavy saucepan combine the brown sugar, the corn syrup, and the espresso powder, bring the mixture to a boil over moderate heat, stirring, and cook it, stirring constantly, for 3 minutes, or until the sugar is dissolved. Remove the pan from the heat, stir in the chocolate, the cream, the Kahlûa, and a pinch of salt, and stir the sauce until it is smooth. Pour some of the mocha sauce onto each of 2 plates, divide the snowballs between the plates, and serve the remaining sauce separately.

3 cups crushed chocolate graham crackers
1/2 cup butter, melted
4 (8 ounce) packages cream cheese, softened
1 cup sugar
1/4 cup coffee liqueur
1 teaspoon instant coffee granules
1 teaspoon vanilla extract
4 large eggs
4 (1 ounce) bittersweet chocolate squares
1 (12 ounce) package semisweet chocolate morsels
1/2 cup whipping cream
1 tablespoon butter or 1 tablespoon margarine
1/4 cup strong brewed coffee

Steps:

  • In a bowl, stir the crushed graham crackers and butter together; press mixture into bottom and up sides of a 9-inch springform pan coated with cooking spray.
  • Bake in a 350° oven for 10 minutes; cool on a wire rack; decrease oven temp to 325°.
  • In a bowl, beat cream cheese and sugar at medium speed using an electric mixer until blended.
  • Add in liqueur, coffee granules, and vanilla, beating at low speed until well blended.
  • Add in eggs, 1 at a time, beating just until yellow disappears after each addition.
  • Remove and reserve 1 cup cream cheese mixture; pour remaining batter into prepared crust.
  • Microwave chocolate squares in a medium bowl 1 minute or until melted, stirring after 30 seconds; let cool slightly.
  • Stir reserved 1 cup cream cheese mixture into melted chocolate, blending well.
  • Spoon chocolate mixture in lines on top of batter in pan; gently swirl with a knife.
  • *(Optional) If you want to bake this in a water bath--Place cheesecake/pan in a large rectangular baking pan filled with 2 inches of hot water (water bath); place in oven.
  • Bake at 325° for 1 hour or until almost set; turn oven off.
  • Let cheesecake stand in oven, with door closed, 30 minutes.
  • Remove cheesecake from oven (and water bath, if using) and gently run a knife around edge of cheesecake to loosen from sides of pan; cool on a wire rack.
  • Cover and chill at least 4 hours.
  • Remove sides of springform pan; serve with Mocha Sauce.
  • To make the Mocha Sauce: add chocolate morsels, whipping cream, and butter to a small saucepan; cook over low heat, stirring often, for 2-3 minutes or until smooth.
  • Remove from heat; stir in coffee; serve warm.

This is the last thing I want to taste before I die! It's the most fantastic sauce ever created for ice cream. The recipe comes from Nigella Lawson and I usually only make half the amount, which still serves 4. You can substitute the espresso for instant coffee powder - about 1-2 teaspoons, or add to taste. It needs to chill for about 2 hours.

2 1/4 cups heavy cream (500ml double cream)
8 ounces white chocolate (225g)
3 1/2 teaspoons instant espresso powder

Steps:

  • Break the chocolate into pieces and put into a heavy based saucepan on the lowest heat possible with all the other ingredients.
  • When the chocolate has melted, take the pan off the heat and whisk vigorously to thicken the sauce. (You can do this with a fork.).
  • Pour the blonde mocha sauce into a bowl and when cool, stick it into the fridge for about 2 hours, you can do this the day before even.
  • When you are ready, take it out of the fridge, give it a good stir and spoon over the ice cream.
  • NOTE: I now make this in the microwave - put all ingredients into a glass bowl and nuke on low heat for 1-2 minutes (maybe more/less depending on your microwave) stirring every 30 seconds. Refridgerate when cool.

8 ounces white chocolate, in pieces
2 cups heavy cream
3 1/2 tablespoons instant espresso powder

Steps:

  • Place all ingredients in a small heavy-based saucepan over medium heat. Wait until chocolate begins to melt, then reduce heat to lowest possible setting.
  • Stir chocolate until it is completely melted. Remove pan from heat, and whisk vigorously until mixture is smooth and thickened. Set aside to cool to room temperature.
  • Transfer sauce to a small pitcher. Cover and refrigerate until chilled. To use, stir well and pour as desired.
