Classic banana bread gets a facelift with the addition of espresso and mini chocolate chips studded throughout. It all comes together with a sweet espresso glaze.

Nonstick cooking spray, for greasing
2 cups all-purpose flour, plus more for dusting
1/4 cup plus 2 tablespoons instant espresso powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 cup granulated sugar
1/2 cup vegetable oil
4 very ripe bananas, mashed (about 2 cups)
2 large eggs
1 teaspoon pure vanilla extract
1 cup mini semisweet chocolate chips
1/2 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick cooking spray; dust with flour and tap out the excess.
  • Combine the 2 cups flour, 1/4 cup espresso powder, the baking soda, baking powder, cinnamon and salt in a large bowl. Whisk together the granulated sugar, oil, bananas, eggs and vanilla in another large bowl until smooth. Fold in the flour mixture, a third at a time, until just combined after each addition. Fold in 3/4 cup of the chocolate chips. Pour the batter into the prepared pan.
  • Bake until the bread starts to puff and is just set at the edges, about 40 minutes. Reduce the oven temperature to 325 degrees F, then continue to bake until a toothpick inserted into the center comes out clean, about 35 minutes more. Transfer the pan to a wire rack to cool completely, about 3 hours. Flip the bread out of the pan and place onto a serving platter.
  • Just before serving, mix the confectioners' sugar with the remaining 2 tablespoons espresso powder and 1 tablespoon water in a small bowl until smooth. Spread the glaze on top of the banana bread and sprinkle with the remaining 1/4 cup chocolate chips.

2 cups flour
2 tablespoons cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1/4 cup butter, softened
2 large eggs
1 1/2 cups mashed bananas (about 3 bananas)
1 teaspoon vanilla
3 tablespoons coffee
1/3 cup chopped walnuts

Steps:

  • Preheat oven to 350°.
  • In a medium bowl, combine the flour, cocoa powder, baking soda, and salt, stirring with a whisk or sift if the cocoa is lumpy.
  • In a large bowl combine sugar and butter and beat with a mixer at medium speed until well creamed, for at least two minutes.
  • Add eggs and beat well.
  • Add bananas, vanilla, and coffee and beat on low speed until blended.
  • Add flour mixture and combine just until moist.
  • Stir in walnuts and spoon batter into a greased 8 x 4" loaf pan.
  • Bake for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean.
  • Cool 10 minutes in pan on a wire rack, then remove from pan.
  • Cool completely on wire rack before slicing.

2 c flour
2 Tbsp cocoa powder
3/4 tsp baking soda
1/2 tsp salt
3/4 c sugar
1/4 c butter, softened
2 large eggs
1 1/2 c bananas, mashed
1 tsp vanilla
3 Tbsp brewed coffee
1/3 c walnuts, chopped

Steps:

  • 1. Butter an 8 x 4 baking dish.
  • 2. In a large bowl, combine flour, cocoa powder, baking soda and salt. In another bowl, using an electric mixer, combine sugar, butter, eggs, vanilla and coffee.
  • 3. Combine flour mixture and egg mixture until just combined. Carefully mix in mashed bananas and blend. Combine walnuts in a little bit of flour and then fold into mixture.
  • 4. Pour mixture into baking dish and bake at 350 degrees for approximately 55-65 minutes. Let bread rest for 10 minutes before removing to a wire rack.

1/4 cup(s) cocoa powder (preferably dutch process)
2 tablespoon(s) cornstarch
2 teaspoon(s) espresso powder
1 1/2 teaspoon(s) baking soda
1/2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
3 - extra ripe medium bananas, mashed
1/3 cup(s) unsweetened applesauce
2/3 cup(s) brown sugar
1/2 cup(s) sugar
1 teaspoon(s) vanilla extract
3/4 cup(s) reduced fat buttermilk
1/2 cup(s) fleur de sel caramel sauce* (+ more for drizzling)

Steps:

  • Preheat oven to 350. Spray a 9x5" loaf pan with nonstick spray. Set aside.
  • In a medium bowl, whisk together baking blend, cocoa powder, cornstarch, espresso powder, baking soda, baking powder and salt. In a large bowl or stand mixer, beat together bananas, applesauce, sugars and vanilla until well combined. Stir in half the flour mixture, then buttermilk, then remaining flour mixture.
  • Transfer half the batter to prepared loaf pan. Pour caramel sauce on top, then add remaining batter. Use a butter knife to gently swirl caramel into the batter. Bake until a toothpick inserted in the center comes out with just a few crumbs, about one hour. Set loaf pan on a wire rack to cool completely. Serve drizzled with extra fleur de sel caramel sauce, if desired. Store in an airtight container for up to one week.
