2 cups fresh baby spinach
1 cup fresh arugula or additional fresh baby spinach
1 can (11 ounces) mandarin oranges, drained
2/3 cup chopped walnuts
1/2 cup fresh raspberries
1/2 cup canned diced beets
1/2 cup fresh blueberries
1/4 cup sliced radishes
DRESSING:
2/3 cup fat-free poppy seed salad dressing
3 tablespoons red raspberry preserves
1 teaspoon white wine vinegar

Steps:

  • In a large bowl, combine the first nine ingredients. In a small bowl, whisk the dressing ingredients. Drizzle over salad; toss to coat.

1/2 cup orange juice
1/2 cup honey
1 teaspoon ground cinnamon
1 medium jicama, cut into 1/4-inch slices
6 oranges, peeled and sliced
6 kiwifruit, peeled and sliced
8 cups bite-size pieces salad greens
1/2 cup dried cranberries

Steps:

  • To make dressing, in small bowl, mix orange juice, honey and cinnamon until well blended.
  • Cut jicama into star shapes using small star-shaped cookie cutter. In large serving bowl, place jicama stars, oranges and kiwifruit. Add salad greens and dressing; toss to mix. Sprinkle with cranberries.
