MIXED GRAIN PILAF

This medley owes its substantial texture to sturdy little grains of pearl barley, wheat berries, and millet, as well as to a hearty helping of wild rice. Fragrant garlic, onion, and assorted mushrooms contribute rousing flavors. When vegetable stock takes the place of chicken stock, the dish easily becomes vegetarian.

Number Of Ingredients 12

3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 large onion, finely chopped (1 1/2 cups)
2 garlic cloves, minced
4 cups thinly sliced white mushrooms (about 3/4 pound)
3/4 cup thinly sliced cremini mushrooms (about 2 ounces)
2 cups pearl barley
1 cup hard wheat berries
1 cup wild rice
1/2 cup millet
7 cups homemade or low-sodium store-bought chicken stock
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Heat oil and butter in a large ovenproof Dutch oven over medium heat. Add onion and garlic; cook, stirring occasionally, until softened, 6 to 8 minutes. Add mushrooms. Raise heat to medium-high, and cook, stirring occasionally, until mushrooms are softened, about 5 minutes. Stir in all of the grains. Cook, stirring often, 12 minutes. Stir in stock; bring to a boil.
  • Cover, and transfer to oven. Bake until grains are tender, 40 to 50 minutes (check after 40 minutes, but don't remove lid before then). Season with salt and pepper. Serve immediately.
  • Add grains, and stir well, coating them with oil. Cook, stirring often, for about 10 to 15 minutes. Stir in stock, and bring to a boil. Cover pot, and put in oven. Bake for 30 to 40 minutes (check after 30 minutes; remove lid and cook a little longer if grains need to be softer). Fold in chopped herbs. Drizzle with Marsala wine. Season with salt and pepper, and serve immediately.
  • To reheat: Place the pilaf mixture in a buttered, ovenproof casserole. Do not fold in the herbs or add Marsala. Cover, and refrigerate until ready to serve. When ready to serve, bring the pilaf to room temperature, about 20 minutes. Heat the oven to 350 degrees. Drizzle with Marsala. Cut a piece of parchment paper to fit the top of the casserole, and butter it. Place the parchment on the pilaf, butter-side down. Place in the oven until heated through, about 30 minutes.

Don't let rice have all the pilaf fun! Try this combination of wheat berries and millet studded with pomegranates, almonds, and golden raisins. Juicy chicken thighs make it substantial enough for supper.

2 cups wheat berries
8 bone-in, skin-on chicken thighs
Kosher salt and freshly ground pepper
2 tablespoons ghee
2 small onions, finely chopped
2 cloves garlic, minced
4 cups homemade or store-bought low-sodium chicken stock
1 cup millet
3/4 cup golden raisins, chopped
1 cup plain whole-milk Greek yogurt or labneh
3/4 cup peeled, diced cucumber
2 tablespoons chopped fresh mint
Juice of 1/2 lemon
1 cup flat-leaf parsley sprigs, chopped
1 cup pomegranate seeds
3/4 cup slivered almonds, toasted

Steps:

  • Soak wheat berries in water overnight. Alternatively, bring wheat berries and enough water to cover by 2 inches to a boil in a medium saucepan. Cover, remove from heat, and let stand 1 hour. Drain and set aside.
  • Preheat oven to 350 degrees. Season chicken with salt and pepper. In a large, ovenproof braiser, heat ghee over medium-high. Add chicken, skin-side down, and cook until deep golden brown, about 8 minutes. Transfer to a plate. Drain all but 1/4 cup fat from pot.
  • Reduce heat to medium, add onions and garlic, and cook until soft and translucent, about 12 minutes. Add reserved wheat berries and cook, stirring, about 3 minutes. Add stock; season with salt and pepper. Bring mixture to a boil, cover, and transfer to oven. Cook for 45 minutes.
  • Carefully remove pot from oven and stir in millet and raisins. Place chicken, skin-side up, in pot. Cover, return to oven, and cook until grains are tender and liquid has evaporated, 45 to 55 minutes.
  • In a small bowl, combine yogurt, cucumber, mint, and lemon juice; season with salt and pepper.
  • Remove pilaf from oven and sprinkle with parsley, pomegranate seeds, and almonds. Serve with yogurt sauce.

1 large onion, chopped
2/3 cup shredded carrot
2 tablespoons olive oil
1 garlic clove, minced
1/3 cup uncooked brown rice
1/3 cup uncooked medium pearl barley
1/3 cup uncooked bulgur
2 cups vegetable or reduced-sodium chicken broth
1/4 cup sherry, optional
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1 teaspoon minced fresh basil or 1/4 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup minced fresh parsley
1/3 cup sliced almonds, toasted

Steps:

  • In a large nonstick skillet, saute onion and carrot in oil for 3-4 minutes or until the vegetables are crisp-tender. Add garlic; cook 1 minute longer. Stir in the rice, barley and bulgur; saute for 4 minutes or until grains are lightly browned. , Gradually add broth and sherry if desired. Bring to a boil. Reduce heat; stir in oregano, basil, salt and pepper. Cover and simmer for 40-45 minutes or until grains are tender and the liquid is absorbed. Stir in parsley and sprinkle with almonds.

3 stalks celery, chopped
½ cup chopped bell pepper
½ cup corn kernels
¾ cup millet
¾ cup quinoa
1 teaspoon salt
3 cups low-sodium chicken stock

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a skillet over medium heat; cook and stir onion, celery, bell pepper, and corn in the hot oil until softened, about 10 minutes.

3 cloves garlic, smashed and chopped
1/2 fresh habanero chile, seeded and coarsely chopped
1/2 medium onion, cut into a small dice
1 tablespoon Chinese five-spice powder
1 teaspoon celery salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon dried thyme
Freshly grated nutmeg (about 1/4 teaspoon)
Freshly ground black pepper
1/2 cup soy sauce
2 tablespoons canola oil
2 tablespoons malt vinegar
3 scallions, whites thinly sliced, greens cut on the bias and reserved for garnish
1/2 chicken, cut into breast and leg quarters
Canola oil, for cooking
1/2 medium onion, sliced
Kosher salt
1 cup long-grain white rice
1 cup chicken stock
1 cup coconut milk
2 to 3 sprigs fresh thyme, tied with twine
2 bay leaves
Half a 15-ounce can pigeon peas, drained
1/2 cup fresh cilantro leaves, roughly chopped

Steps:

  • For the chicken: Preheat the oven to 400 degrees F.
  • Add the garlic, habanero, onion, five-spice, celery salt, cinnamon, ginger, thyme, nutmeg and 1 tablespoon black pepper to a food processor and pulse until combined and paste-like. Add the soy sauce, oil, vinegar and scallion whites and puree until well-mixed and smooth. Set aside.
  • Arrange the chicken parts in a baking dish and pour half of the marinade over the top, brushing so that all pieces are coated. Set the remaining marinade aside. Marinate the chicken at room temperature for 15 minutes or refrigerate for up to 4 hours.
  • Heat a cast-iron grill pan over medium-high heat. Place the chicken parts in the pan skin-side down and cook for 7 minutes per side. Place the chicken back in the baking dish and baste with the reserved marinade. Place in the oven and roast until the internal temperature reaches 165 degrees F, 15 to 20 minutes. Note that the baking time for the breast may be shorter than the leg. Remove from the baking dish as finished and let rest for a couple of minutes.
  • For the rice: Coat the bottom of a small pot with the oil and sweat the sliced onions with a pinch of salt over high heat until browned. Add the rice and stir to coat. Add the chicken stock, coconut milk, thyme bundle and bay leaves. Stir and season to taste with salt. Bring to a boil then reduce to a simmer and stir in the peas. Cover and cook for 17 minutes. Turn off the heat then remove the bay leaves and thyme bundle. Fluff the rice and mix in the cilantro and scallion greens.
  • Place a large scoop of rice in the center of each plate and arrange the chicken pieces on top.

CHICKEN RICE PILAF

This Chicken Rice Pilaf is a very simple dish. It makes for a dinner that is quite comforting yet very versatile. It's a staple in my house because it uses simple, every day ingredients that we always have in our fridge or pantry.

2 tablespoon butter
2 tablespoon olive oil
1 large onion (chopped)
2 teaspoon salt
2 teaspoon pepper
2 medium carrots (chopped)
2 stalks celery (chopped)
1 ½ pounds chicken breast (skinless and boneless, diced)
2 cups rice (long grain, I used Basmati)
5 cups chicken broth (low sodium)
2 bay leaves
1 cup half and half
½ cup peas (frozen)
2 tablespoon parsley (fresh, chopped)
¼ cup parmesan cheese (grated)

Steps:

  • Add the butter and olive oil to a large skillet or Dutch oven, and heat over medium heat. Once the butter has melted, add the onion and cook for about 3 minutes until the onion softens and has become translucent.
  • Add the carrots and celery, season with half the salt and pepper, stir then cook for 3 more minutes, until the celery and carrots soften a bit.
  • Add the chopped chicken, season with remaining salt and pepper and cook for about 5 minutes until the chicken is no longer pink.
  • Add the rice, chicken broth and stir. Add the bay leaves and half and half; stir. Bring to a boil, turn down the heat to a simmer and cover the skillet or pot. Cook for 20 minutes, stirring occasionally, until the rice is cooked.
  • Stir in the peas and cook for 2 more minutes or until the peas are cooked. Garnish with parsley and more pepper.
  • Serve warm sprinkled with Parmesan cheese if preferred.
