I found this in the updated version of the "Taste of Home" cookbook. It was submitted by Mary Ann Dell of Phoenixville, PA, who says: "A friend brought this delicious, down-home dessert to church and fortunately also brought the recipe! It's wonderful with a dollop of whipped topping."

3 cups halved fresh strawberries
1 1/2 cups fresh raspberries
1 1/2 cups fresh blueberries
2/3 cup sugar
3 tablespoons quick-cooking tapioca
1/2 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/3 cup butter, melted

Steps:

  • In a large bowl, combine strawberries, raspberries and blueberries.
  • Combine sugar and tapioca; sprinkle over berries and toss gently.
  • Pour into a greased 11x7 inch baking dish; let stand for 15 minutes.
  • In a small bowl, combine flour, oats, brown sugar and cinnamon.
  • Stir in butter; sprinkle over berry mixture.
  • Bake at 350 for 45-50 minutes or until filling is bubbly and topping is golden brown. Serve warm.

3 large apples, cut in 1 inch cubes
3 large pears, chopped in 1 inch cubes
1 inch piece fresh ginger, chopped
1 tablespoon honey
2 tablespoons orange juice
1 1/3 cups refined flour, sieved (maida)
1/3 cup butter, softened
15 -20 almonds, flaked
1 cup oats
1 teaspoon spices
2 tablespoons brown sugar
1 cup honey
custard, as required

Steps:

  • Preheat oven to 175°C.
  • Grab hold of an oven-proof dish and lightly grease it.
  • Combine the flour and butter in a bowl with your fingers until the mixture resembles fine breadcrumbs.
  • Fold in the almonds, oats, mixed spices, brown sugar and honey.
  • Mix thoroughly to combine.
  • In another bowl, mix together the fruits, ginger, honey and orange juice.
  • Spoon this mixture into the greased ovenproof dish.
  • Sprinkle the crumb topping over the mixed fruits in the dish.
  • Bake at 175C for 30 minutes until the topping is golden and the fruits are tender.
  • Serve warm with hot custard.
  • Enjoy!

200 gram(s) (7oz) plain (all-purpose) flour
1 teaspoon(s) baking powder
1/4 teaspoon(s) salt
200 gram(s) (7oz) unsalted butter, softened
250 gram(s) (9oz) light brown sugar
120 gram(s) (4oz) rolled oats
300 gram(s) (10½oz) apples
4 tablespoon(s) cornflour (cornstarch)
3 teaspoon(s) ground cinnamon
1 teaspoon(s) ground nutmeg
1 teaspoon(s) ground ginger
175 gram(s) (6oz) mixed fruits (or substitute with whatever fruit you like. e.g. apple and cranberries would be awesome too!)

Steps:

  • Preheat the oven to 170℃/325℉/Gas Mark 3, and line a 22 x 31cm (9 x 12½in) tray with baking parchment. Sift the flour, baking powder and salt into a large bowl, add the butter and rub together until the consistency of breadcrumbs, then stir in the sugar and rolled oats. If you prefer, you can mix together the dry ingredients with the butter in a stand mixer with the paddle attachment, then stir in the sugar and oats by hand. After mixing, press half the mixture into the prepared tray, set aside.
  • Peel and core the apples, then cut into thin slices and mix together with the cornflour (cornstarch) and ground spices. Place the spice-coated apple slices in lines on the top of the oat mixture in the base of the tray, then sprinkle over the mixed fruit. Spoon the remaining mix over the apples and mixed fruits and press down gently.
  • Place in the oven and bake for 30-40 minutes or until the mixture is golden brown. Allow to cool completely in the baking tray before cutting into slices to serve.

for fruit filling:
2 full tablespoons sugar
1 tablespoon cornstarch
1/4 cup fresh or frozen blueberries
1/2 cup fresh or frozen whole strawberries
1 apple - cored, peeled and chopped
2 tablespoons raisins
1/2 teaspoon vanilla
for topping:
3 tablespoons unsalted butter
1 tablespoon brown sugar
1/2 cup rolled oats
1 tablespoons flour

Steps:

  • 1. In a small saucepan, whisk sugar and cornstarch together. Add blueberries and strawberries, then boil down over medium heat. Once the berries have simmered down and are soft, add apple and raisins. Gently simmer until apples are slightly softened. Remove from heat and stir in vanilla and immediately pour fruit filling into a small skillet. Preheat oven to 350 degrees F. In a small skillet, melt butter. Add sugar, oats, and flour. Over medium-low heat, toss the oats until they become slightly toasted. Remove from heat. Sprinkle the rolled oats over the fruit filling. Bake for about 10-15 minutes or until the oats are golden and the fruit is bubbling around the sides. Remove from the oven and let cool. Serve with whipped cream and enjoy.
