Steps:

  • Dissolve cornstarch in brandy in a small bowl and set aside.

1/4 cup cold water
2 1/2 teaspoons unflavored gelatin (from 2 packages)
3 cups whipping cream
1 cup sugar
1 1/2 teaspoons vanilla extract
4 1/2-pint baskets assorted fresh berries (such as raspberries, blueberries, blackberries, and strawberries)
1/3 cup sweet white wine (such as Moscato)

Steps:

  • Pour 1/4 cup cold water into small custard cup. Sprinkle gelatin over. Let stand until gelatin softens, about 15 minutes. Bring 1 inch of water in small skillet to boil. Place cup with gelatin in water. Stir until gelatin dissolves, about 2 minutes. Remove from heat.
  • Combine cream and 2/3 cup sugar in heavy medium saucepan. Stir over medium heat just until sugar dissolves. Remove from heat. Mix in vanilla and gelatin. Divide pudding mixture among 8 wineglasses. Cover and chill until set, at least 6 hours and up to 1 day.
  • Combine berries and remaining 1/3 cup sugar in medium bowl. Crush berries slightly with back of spoon. Mix in wine. Let compote stand until berry juices and sugar form syrup, stirring often, at least 1 hour and up to 2 hours.
  • Spoon compote over puddings.

6 tablespoons water
1 1/2 teaspoons unflavored gelatin
3 large egg yolks
1/2 cup pure maple syrup
1 cup chilled whipping creaming
1/4 teaspoon maple flavoring
Compote
1 10-ounce package frozen raspberries in syrup, thawed
3/4 cup frozen blackberries, unthawed
2/3 cup frozen raspberries, unthawed
2/3 cup frozen blueberries, unthawed
Fresh mint sprigs

Steps:

  • For Mousse:
  • Place 2 tablespoons water in small bowl. Sprinkle gelatin over; let stand 10 minutes to soften. Whisk yolks, syrup and 4 tablespoons water in medium metal bowl. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until candy thermometer registers 160°F, about 7 minutes. Remove from over water. Add gelatin mixture to yolk mixture; whisk to dissolve. Using electric mixture, beat mixture until cool and slightly thickened, about 8 minutes. Whip cream and maple flavoring in large bowl to medium-stiff peaks. Fold yolks mixture into whipped cream. Divide among 6 glasses. Cover; chill until mousse sets, about 4 hours. (Can be made 1 day ahead. Keep chilled.)
  • For Compote:
  • Puree raspberries in syrup in processor. Strain into heavy large saucepan. Boil 1 minute. Remove from heat. Add remaining berries; stir gently just until coated with sauce. Cool completely (berries will thaw as they sit). Spoon over mousse. Garnish with mint.

1 tablespoon granulated sugar

Mixed Berry Compote, recipe follows
1 cup heavy whipping cream
3 tablespoons sugar
1/2 cup blueberries
1/2 cup raspberries
1/2 cup strawberries
3 tablespoons sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a regular-sized muffin tin with 12 aluminum cupcake liners.
  • For the graham cracker crust: Put the melted butter and graham crackers in a food processer. Blend until the graham crackers are crushed. Press 1 tablespoon of graham cracker mixture into the bottom of each cupcake liner, making sure to pack it down. For the cheesecake cupcakes: In the bowl of an electric mixer fitted with the whisk attachment, beat the cream cheese on medium speed until fluffy, about 3 minutes, scraping down the sides as needed. In a large bowl, whisk together the sugar and flour. With the mixer on low speed, gradually add the sugar mixture to the cream cheese and mix until smooth. Add the sour cream and vanilla paste and mix until smooth. Add the egg, beating until just combined; do not over mix. Fill the cupcake liners three-quarters full. Bake for 15 minutes. Cool slightly until the cupcakes become concave.
  • For the sour cream glaze: In a medium bowl, stir together the sour cream, sugar and vanilla paste. Place a heaping tablespoon of glaze in the center of each cupcake. Return to the oven for 10 minutes. Cool to room temperature on a wire rack, and then chill in the refrigerator until cold, at least 2 hours.
  • To assemble: Pipe Fresh Whipped Cream around the rim of the cupcake leaving an empty space in the middle. Fill the empty space in the middle with Mixed Berry Compote.
  • Using the bowl of an electric stand mixer fitted with whisk attachment, whip the heavy cream and sugar until soft peaks form. Put into a pastry bag fitted with a star tip.
  • In medium saucepan over medium-high heat, bring the berries and sugar to a boil, stirring constantly until thick. Remove from the heat and chill until cold.

1 1/4 cups egg whites (10-12 eggs)
1 1/4 teaspoons cream of tartar
1/4 teaspoon salt

3 cups strawberries, hulled and sliced
3 cups blueberries or 3 cups raspberries, blackberries and blueberries combined
3 tablespoons orange juice or 3 tablespoons orange-flavored liqueur
1/2 cup sugar

Steps:

  • TO MAKE THE CAKE:.
  • Preheat oven ot 325°F Rinse a 10-inch angel food cake or tube pan with cold water and drain.
  • Sift together the cake flour and 1 cup of the sugar. Repeat the sifting 3 times, then set aside. In a large bowl, beat the egg whites until foamy.
  • Add the cream ot tartar and salt. Continue beating until soft peaks form.
  • Add the remaining 1/2 cup sugar, 2 tablespoons at a time, beating after each addition. Beat in vanilla. Sift a third of the flour-sugar mixture into the beaten egg whites, folding quickly with a rubber spatula until no flour shows. Repeat the process twice again with a third of the flour-sugar mixture.
  • Transfer the batter into the prepared pan and bake for 45-50 minutes, until the cake is springy to the touch and a toothpick inserted in the center comes out clean.
  • Immeditely invert the pan onto a cooling rack. Let the cake cool ompletely in the pan. Run a thin knife around the edge to loosen before unmolding.
  • TO MAKE COMPOTE::.
  • IN a medium bowl, combine all the berries, orange juice or liqueur, and sugar. Cover the bowl and refrigerate. Stir the mixture just before serving.
  • TO SERVE:.
  • Place a slice of the cake onto a dessert plate and surround it with some of the compote.

1 1/2 cups boiling water
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1 stick unsalted butter, softened
1 cup packed light brown sugar
1/2 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
Mixed Berry Compote, recipe follows
Clotted cream, for serving

Steps:

  • Preheat oven to 350 degrees F. Butter and flour a 9-inch baking pan.
  • Place oats in a bowl, pour the boiling water over and let soak for 30 minutes. Drain well.
  • Sift together the flour, baking soda, cinnamon, nutmeg and salt on waxed paper. Place butter and sugars in the bowl of a mixer fitted with the paddle attachment and mix until light and fluffy. Add the eggs, one at a time and mix until smooth. Add the soaked oats and mix until incorporated. Add the dry ingredients and mix until just combined. Scrape the batter evenly into the prepared pan and bake in the oven until a toothpick inserted into the center comes out with a few moist crumbs, about 35 to 40 minutes. Place on a baking rack and let cool for 40 minutes; this cake is best served warm. Serve the cake topped with some of the warm berry compote and a large dollop of clotted cream.
  • 2 teaspoons cornstarch
  • 1 1/2 cups fresh orange juice plus 2 teaspoons
  • 3 tablespoons honey
  • 1 vanilla bean, split
  • 1 cup fresh blueberries
  • 1 cup fresh blackberries
  • 2 cups fresh raspberries
  • For the compote: Dissolve the cornstarch in the 2 teaspoons orange juice. Set aside. Combine the 1 1/2 cups orange juice, the honey and vanilla bean in a medium saucepan and bring to a boil over high heat, let cook for 2 minutes or until the honey has completely dissolved. Add the blueberries and blackberries and cook for 2 minutes. Add the cornstarch and cook until the mixture thickens slightly, about 2 minutes. Remove from the heat and fold in the raspberries. Discard the vanilla bean. Serve warm.

1/2 pint blueberries
1/2 pint raspberries
1 to 2 teaspoons honey
1/4 teaspoon vanilla bean paste
1 teaspoon balsamic vinegar, plus additional for drizzling
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Cut the stems off the strawberries and slice any large ones in half. Add the strawberries to a colander along with the blueberries and raspberries and wash in the sink. Dry the berries on a sheet pan lined with paper towels, then transfer the berries to a large bowl.
  • Add the honey, vanilla bean paste, vinegar, salt and pepper. Gently fold together with a rubber spatula, being careful not to crush the berries.
  • Transfer the berry mixture to a 6- to 8-quart casserole dish and roast until the berries start to release their juices and slightly break down, about 15 minutes. 1 cup orange juice
1/2 cup sugar
3 tablespoons cornstarch
6 tablespoons water
1 (8-ounce) angel food cake, cut into 8 slices

Steps:

  • Coat a 5-quart electric slow cooker with cooking spray. Combine berries, orange juice, and sugar in slow cooker. Cover and cook on HIGH for 2 hours.
  • Combine cornstarch and water in a small bowl, stirring until smooth. Stir cornstarch mixture into berry mixture. Cover and cook on HIGH for 15 minutes or until sauce thickens. Serve compote over angel food cake.
  • Ingredient Tip: If you only have one or two types of berries, you can still make this compote. Just make sure the berries add up to a total of 6 cups.
