2 cans low-sodium beans, drained
½ cup Panko bread crumbs ((whole grain suggested))
2 Tablespoons - ¼ cup chopped fresh herbs
2 Tablespoons extra virgin olive oil
2 Tablespoons finely diced onion or shallot
2 large eggs
½ teaspoon kosher salt
Dash pepper
½ Tablespoon extra virgin olive oil ((for the baking sheet))
6 whole grain hamburger buns, lightly toasted
¼ cup pesto ((replace oil and herbs))
¼ cup diced fresh or sun-dried tomatoes
¼ cup shredded or crumbled cheese
2 small garlic cloves, minced ((or 1 large clove))
¼ - 1 teaspoon spices and/or dried herbs
1 teaspoon citrus zest
Sliced tomato
Lettuce or leafy greens
Pickled vegetables
Sliced or mashed avocado
Mustard
Ketchup, barbecue sauce, or hot suace
Greek yogurt ranch dip or aioli
Sliced or shredded cheese

Steps:

  • Preheat oven to 425ºF.
  • Place beans in a large mixing bowl and mash until almost smooth or leave slightly chunky.
  • Add bread crumbs, herbs, extra virgin olive oil, onion, egg, salt, pepper, and any optional mix-ins. Mix until combined.
  • Brush a baking sheet with oil or use pan spray. Create 6 patties with your hands or using the help of a portion scoop and place on the pan, spaced at least 1" apart.
  • Cook 8-10 minutes or until cooked through and slightly brown on the edges. Serve on toasted buns with desired toppings. Enjoy!

1 (16 ounce) can black beans, drained and rinsed
½ green bell pepper, cut into 2 inch pieces
½ onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
½ cup bread crumbs

Steps:

  • If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
  • In a medium bowl, mash black beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
  • In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  • Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
  • If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

JAMIE OLIVER'S VEGETARIAN BLACK BEAN BURGERS



Jamie Oliver's Vegetarian Black Bean Burgers image

Beans have been a staple in the human diet for more than 4,000 years, and in recent history, they've formed the foundation of countless vegetarian burgers. There are white bean burgers, kidney bean burgers and a plethora of other veggie burgers. Most have two things in common: beans and binders. This version from the chef Jamie Oliver's new book "Ultimate Veg" (Flatiron Books, 2020) combines black beans, rye bread, fresh mushrooms and ground coriander. Mr. Oliver tops his burgers with tangy yogurt, mangoes and salsa, but these crisp, oven-roasted patties are equally delicious with just lettuce and ketchup.

1 1/2 red onions
1/2 pound mixed fresh mushrooms
3 1/2 ounces rye bread, torn into 1/2-inch pieces (about 2 1/2 cups)
1 (15-ounce) can black beans, drained and roughly mashed with a fork
1 teaspoon ground coriander, plus more for dusting
Kosher salt and black pepper
Olive oil, as needed
2 ounces sharp Cheddar, grated (about 1 cup)
4 large brioche rolls, potato rolls or burger buns
4 ounces cherry tomatoes, chopped (about 1 cup)
1 lime
Chipotle hot sauce, as needed
1 ripe mango
1 ripe avocado
1/4 cup plain yogurt
4 fresh cilantro sprigs

Steps:

  • Heat the oven to 400 degrees. Peel and roughly chop 1 onion, then place it in a food processor. Add the mushrooms and pulse until just finely chopped. (Be careful not to overprocess into a paste.) Transfer mixture to a large bowl and wipe out the bowl of the food processor. Add torn bread to the processor, pulse until it forms fine crumbs, then transfer crumbs to the mushroom mixture.
  • Add black beans and coriander, season well with salt and pepper, then mix together until thoroughly combined. Divide into 4 equal portions and shape into 1-inch-thick patties. Rub all over with oil and dust with ground coriander, then place on an oiled baking sheet.
  • Roast patties until dark and crisp, 35 to 45 minutes. Sprinkle the burgers with the Cheddar. Let burgers cool slightly to firm up. While the burgers cool, transfer the buns to the hot oven and heat for a few minutes until toasted.
  • Meanwhile, peel and very finely chop the remaining 1/2 onion. Transfer to a medium bowl. Add the tomatoes. Zest the lime on top, then halve the lime and squeeze lime juice on top, to taste. Add a few shakes of hot sauce and season with salt and pepper to taste. Pit, peel and finely slice the mango and avocado.
  • Spread the yogurt on the bases of the rolls or buns, then top with half the salsa, the mango and the avocado. Add the burgers, the remaining salsa, extra Tabasco and cilantro leaves, then pop the lids on, press down lightly and serve immediately.

1 medium onion, finely chopped
2 garlic cloves, crushed
750 g four-bean mix, drained, lightly mashed
1 teaspoon cumin
1/4 teaspoon salt
2 cups whole wheat bread crumbs
3 eggs, lightly beaten
1/4 cup plain whole meal flour
2 tablespoons olive oil, extra
Turkish bread, toasted, to serve

Steps:

  • Heat oil in frypan and sauté onion and garlic until soft. Place in a large bowl. Add beans, cumin, salt, breadcrumbs and eggs. Mix well.
  • Using a ¼ cup measure, form mixture into burgers and toss gently in flour.
  • Heat extra oil in frying pan or on BBQ and cook burgers until golden on both sides.
  • Serve on toasted Turkish bread with plenty of salad ingredients.

2 x 400g/14oz cans kidney beans, rinsed and drained
100g breadcrumb
2 tsp mild chilli powder
small bunch coriander, stalks and leaves chopped
1 egg
200g tub fresh salsa
150ml low-fat natural yogurt
juice ½ lime
6 wholemeal burger buns, sliced avocado, sliced red onion and salad leaves, to serve

Steps:

  • Heat grill to high. Tip the beans into a large bowl, then roughly crush with a potato masher. Add the breadcrumbs, chilli powder, coriander stalks and ½ the leaves, egg and 2 tbsp salsa, season to taste, then mix together well with a fork.
  • Divide the mixture into 6, then wet your hands and shape into burgers. The burgers can now be frozen. Place on a non-stick baking tray, then grill for 4-5 mins on each side until golden and crisp. To cook from frozen, bake at 200C/fan 180C/gas 6 for 20-30 mins until hot through.
  • While the burgers are cooking, mix the remaining coriander leaves with the yogurt, lime juice and a good grind of black pepper. Split the buns in half and spread the bases with some of the yogurt. Top each with leaves, avocado, onion, a burger, another dollop of the lime yogurt and some salsa, then serve.

5 slices (1 ounce each) Monterey Jack cheese
5 whole wheat hamburger buns, toasted

1/3 cup guacamole
5 tablespoons Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Place beans in food processor or blender. Cover and process until slightly mashed. In medium bowl, mix beans, chiles, onions, bread crumbs and egg. Shape into 5 patties, each about 1/2 inch thick. Coat each patty with cornmeal.
  • In 10-inch skillet, heat oil over medium heat. Cook patties in oil about 10 minutes, turning at least once, until crisp and thoroughly cooked on both sides.
  • Top patties with cheese. Cover and cook 1 minute or until cheese just begins to melt.
  • Top bottom halves of buns with lettuce, patties, guacamole and salsa. Cover with tops of buns.

1 can (15 to 16 oz) great northern beans, drained, rinsed
1/4 cup finely crushed saltine crackers (about 7 squares)
2 tablespoons barbecue sauce
1/4 teaspoon pepper
1 egg
Leaf lettuce, if desired
5 whole-grain hamburger buns, split
5 teaspoons barbecue sauce
Sliced tomato and sliced onion, if desired

Steps:

  • Heat gas or charcoal grill. In large bowl, mix beef, beans, cracker crumbs, 2 tablespoons barbecue sauce, the pepper and egg. Shape into 5 patties, about 1/2 inch thick.
  • Brush grill rack with vegetable oil. Place patties on grill. Cover grill; cook over medium heat 5 minutes. Turn; cook covered 5 to 6 minutes longer or until meat thermometer inserted in center of patties reads 160°F.
  • Place lettuce and patties on bottom halves of buns. Spread each patty with 1 teaspoon barbecue sauce. Top with tomato and onion. Cover with bun tops.
