1 banana, peeled and mashed
1 cup peanut butter
½ cup white sugar
½ cup packed brown sugar
2 egg whites
2 cups whole wheat flour
1 teaspoon baking soda
1 cup rolled oats
1 cup raisins

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a medium bowl, stir together mashed banana, peanut butter, white sugar and brown sugar until smooth. Then mix in the egg whites. Add flour and baking soda, mix until just blended, then stir in the rolled oats and raisins.
  • Drop cookie dough by heaping spoonfuls onto an unprepared cookie sheet. Bake for 15 to 17 minutes in the preheated oven. When cookies are done, remove from the baking sheet and cool on wire racks.

This is the first food that I ever made. I felt like such a "big girl" rolling a peanut butter coated banana in raisins the way that Mister Rogers taught me. Healthy and delicious snack, dessert, or breakfast for little and big kids.

1 banana
2 tablespoons peanut butter
2 tablespoons raisins

Steps:

  • Wash hands. Give your child a banana and show how to peel it. Spread peanut butter on all sides of banana using a dull butter knife or spoon.
  • Sprinkle raisins on a plate and roll peanut butter coated banana in raisins or sprinkle all sides of peanut butter coated banana with raisins (rolling the banana is messier). Eat with fingers. Wash hands. Note: Amounts for peanut butter and raisins are approximate.
  • Fun Tip: Children are curious about the insides-especially when those things are hidden. When they peel a banana, they see that there's something very different on the inside. The peeling is a protection for the banana. What other foods do they know that have a peel? What kind of fruit becomes a raisin? How does a grape become a raisin?

I just came up with this recipe while trying to figure out what to do with some wheat germ I had. I must say, it's pretty tasty (although I love peanut butter on just about anything!!). This would be a good, healthy snack for kids. Wheat germ is a good source of Vitamin E and Folic Acid. * edit - I've just tried it using Grape Nuts cereal instead of the wheat germ and it is really good as well, so I am listing it as an optional ingredient. Of course the Grape Nuts are a whole lot crunchier than the wheat germ.

1 1/2 tablespoons peanut butter
2 tablespoons wheat germ
2 tablespoons Grape-nuts cereal (optional)

Steps:

  • Slice the banana into bite sized pieces.
  • Smear the top of each slice with peanut butter.
  • Dip the peanut butter top into the wheat germ.
  • Enjoy!
  • * Or you could do like I did and peel the banana most of the way, take a butter knife and smear the top with peanut butter. Then dip it into the wheat germ and bite.
  • Repeat until all that's left is the peel. Hey, it's quicker that way. :).

1 small banana
1 small tortilla
1 tablespoon creamy peanut butter

Steps:

  • Spread peanut butter on the tortilla.
  • Slice banana into thin pieces.
  • Place banana pieces onto half of the tortilla, on top of the peanut butter. Don't try to over fill the tortilla!
  • If the banana is too big, just eat the extra slices.
  • Fold the tortilla in half, to cover the banana slices.
  • Microwave 20-30 seconds.

1/3 cup shortening
1/3 cup peanut butter
1/8 cup peanut butter
1 1/4 cups packed brown sugar
1 egg
1/4 cup milk
1 1/2 teaspoons vanilla
1 cup flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon baking soda
1 cup mashed ripe banana (about 2)
4 cups quick oats
3/4 cup raisins
1/2 cup chopped nuts

Steps:

  • Combine shortening, peanut butter and brown sugar.
  • Mix in egg, milk and vanilla.
  • Sift and combine flour, cinnamon, salt, nutmeg and baking soda mix in well to wet misture.
  • Mash and add banana, mix well.
  • Stir in quick oats, fold in raisins and nuts of your choice.
  • Place round tablespoonfuls on greased baking sheet spaced 1-2-inches apart.
  • Bake at 375° for 12-13 minutes or until done.
