Nonstick cooking spray, for the baking dish
2 sticks (1 cup) salted butter
1/4 heaping cup unsweetened cocoa powder
1 cup boiling water
2 cups all-purpose flour
2 cups granulated sugar
1/4 teaspoon kosher salt
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
2 large eggs
One 10-ounce bag mini marshmallows (about 6 cups)
1 3/4 sticks (14 tablespoons) salted butter
6 tablespoons whole milk
1/4 heaping cup unsweetened cocoa powder
4 cups sifted confectioners' sugar
1 cup chopped toasted pecans
1 tablespoon vanilla extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with cooking spray.
  • In a saucepan, melt the butter. Whisk in the cocoa powder, then the boiling water. Let it bubble up for a few seconds, then turn it off and set it aside.
  • In a large bowl, mix together the flour, granulated sugar and salt. Pour the chocolate mixture over the flour mixture and stir a few times to start to cool the chocolate.
  • In a separate small bowl, mix the buttermilk, baking soda, vanilla and eggs. Pour over the flour-chocolate mixture and mix until everything is combined. Pour into the prepared baking dish and bake until a toothpick inserted in the center comes out clean, about 20 minutes. Remove from the oven and turn on the broiler.
  • Sprinkle the marshmallows over the cake, then return the dish to the oven to broil until the marshmallows start to turn golden, about 1 minute. Set aside to cool.
  • For the icing: Melt the butter in a saucepan, then whisk in the milk and cocoa powder. Whisk in the confectioners' sugar in 4 to 5 additions. Stir in the nuts and vanilla.
  • Pour the icing all over the marshmallows, allowing some marshmallows to remain visible. Let the icing set, then deliver or serve.

A sweet and sour version of barbeque sauce for shrimp, pork, and chicken. This sauce is very potent, so use sparingly as a baste while cooking shrimp, pork, and chicken. To make into a dipping barbeque sauce increase the amount of brown sugar to 1 cup and use white vinegar instead of apple cider vinegar.

Steps:

  • Combine ketchup, brown sugar, tomato paste, vinegar, corn syrup, pineapple juice, bourbon whiskey, water, white onion, lemon juice, mustard powder, hot pepper sauce, Worcestershire sauce, salt, black pepper, onion powder, garlic powder, allspice, Chinese five-spice powder, and celery salt together in a saucepan over medium heat. Bring to a boil, reduce heat to low, and simmer until flavors have blended and sauce is slightly reduced, 1 hour.

1/2 cup oil ((vegetable or canola oil))
1/2 cup butter (, softened)
2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon salt
3 cups mini marshmallows
1/2 cup butter (, melted)
1/3 cup unsweetened cocoa powder
1/3 cup evaporated milk
1 teaspoon vanilla extract
3 - 3 1/2 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
  • In a large mixing bowl, pour oil over cocoa powder and mix.
  • Add softened butter and mix until smooth. Add sugar and mix for 1 minute. Add eggs, one at a time, mixing after each addition. Add vanilla and mix.
  • Add flour and salt and stir to combine.
  • Pour batter into prepared pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Remove brownies from the oven and sprinkle the marshmallows evenly on top. Return to the oven for 2-3 minutes or until the marshmallows are puffed. Remove from oven and allow them to cool completely.

2/3 cup evaporated milk (don't use sweetened condensed milk!)
1/4 cup chunky peanut butter
your favorite ice cream or sliced poundcake

  • In a small saucepan, stir together sugar and cocoa powder.
  • Stir in evaporated milk.
  • Cook and stir over medium-high heat till mixture is boiling.
  • Remove from heat.

This is a gooey and chocolaty dream. It's very moist. It's a great dessert for potlucks, dinner parties, etc. Make sure you get a piece though because it will disappear quickly! I got the recipe from the Southern Living 30 Years of our best cooking book. It's a great cook book!

1 cup butter
1/2 cup cocoa
2 cups sugar
4 large eggs, slightly beaten
1 1/2 cups all-purpose flour
1 dash salt
1 teaspoon vanilla extract
1 1/2 cups pecans (optional)
4 cups mini marshmallows
1 (16 ounce) package powdered sugar, sifted
1/2 cup milk
1/3 cup cocoa
1/4 cup softened butter

Steps:

  • Preheat oven to 350°F.
  • Lightly grease a 9x13 inch pan.
  • Melt the butter in a medium saucepan.
  • Add the cocoa and stir.
  • Remove from the heat.
  • Pour butter mixture into a mixing bowl and add sugar and eggs.
  • Mix until blended.
  • Add the vanilla.
  • Mix in the flour and salt.
  • Stir in the pecans.
  • Put batter into prepared pan and cook for 35 minutes or until done.
  • Remove from oven and sprinkle with marshmallows.
  • Cool in the pan on a wire rack.
  • For the frosting: Combine all of the ingredients and mix until smooth. Spread frosting on cooled cake.
  • If your frosting is too thick, add more milk.
