TEXAS BAKED BEAN DIP

8 slices thick-cut bacon, chopped
1 small yellow onion, diced
1 bell pepper, diced
1 clove garlic, minced
1 1/2 cups packed brown sugar
1 cup brewed coffee
1 tablespoon ketchup
2 teaspoons mustard
1 teaspoon chile paste, such as sriracha
Kosher salt and freshly ground black pepper
Two 16-ounce cans pinto beans, drained
1/2 cup sour cream
1/2 cup grated Cheddar
1/4 cup sliced green onions
Butter crackers, such as Ritz, or tortilla chips, for serving

Steps:

  • Heat a Dutch oven over medium heat; line a plate with a paper towel. Add the bacon to the pot and cook, stirring occasionally, until crisp, 5 to 7 minutes. With a slotted spoon, transfer the bacon to the lined plate to drain.
  • Discard most of the bacon fat, leaving about 2 tablespoons in the pot. Return to medium heat, add the onion, bell pepper and garlic and saute until beginning to brown, about 3 minutes. Add the brown sugar, coffee, ketchup, mustard, chile paste and 1 teaspoon each salt and pepper, then add the beans and stir to combine. Bring to a simmer, then cover and cook until the sauce has thickened, 12 to 15 minutes.
  • Remove the pot from the heat and stir in the sour cream. Taste and adjust the seasoning as needed. Transfer the dip to a serving bowl and garnish with the Cheddar, green onions and reserved bacon. Serve with crackers or chips alongside.

  • Place cheese, tomatoes, and jalapenos and their liquid in small heavy saucepan. Set over low heat and cook, stirring often, about 15 minutes until cheese melts and mixture is smooth, or microwave 5 minutes on HIGH in covered, microwave-safe casserole, stirring once at halftime. 1 (30 ounce) can refried beans
1 (1.25 ounce) package dry taco seasoning mix
1 jalapeno pepper, diced, or more to taste
2 cups shredded Mexican cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cream cheese, sour cream, refried beans, and taco seasoning in a bowl. Fold jalapeno pepper into the dip; spread into a 9x13-inch baking dish.
  • Bake in preheated oven for 30 minutes. Top with shredded cheese and continue cooking until the cheese has melted, about 5 more minutes.

2 (9 ounce) cans bean dip (Like Fritos)
6 tablespoons mayonnaise
6 tablespoons sour cream
1 (1 1/4 ounce) package taco seasoning mix
3 cups mexican cheese, shredded
1 tomatoes, chopped
1 onion, chopped
1 green pepper, chopped
1 cup lettuce, shredded
1/4 cup black olives, chopped
1/4 cup green olives, chopped
1 (10 ounce) bag tortilla chips (Like Scoops)

Steps:

  • First layer:.
  • Spread bean dip into a 11 x 7 pan. ( you can use a 9 x 13 but it is thinner or you can use a 8x8x2 pan and make it thicker. Whatever you like).
  • Mix mayonaise, sour cream, and taco seasoning mix together and spread over the bead dip.
  • Sprinkle cheese over the mayo layer.
  • Then layer as wish:.
  • Tomato.
  • lettuce.
  • onion.
  • green peppers.
  • green olives.
  • black olives.
  • Refrigerate overnight. Serve with chips the next day and enjoy.
  • Note: You can add salsa and/or jalapenos (chopped). My family does not like it but it is good! Adds a little more spice.
