1 tablespoon peanut oil
1/4 cup chopped fresh ginger
1/4 cup chopped fresh garlic
1 gallon chicken broth, plus
2 cups chicken broth
1/2 cup cornstarch
1 (10 1/2 ounce) package firm tofu, cut into 1/4 inch pieces
1 (8 ounce) can straw mushrooms
1 (8 ounce) can bamboo shoots, drained
1/2 cup soy sauce
1/4 cup rice wine vinegar
2 tablespoons sugar
1 teaspoon crushed red pepper flakes
2 (16 ounce) bags frozen oriental-style vegetables
1 lb peeled shrimp
1/4 cup chopped cilantro
1 (10 ounce) package spinach, trimmed and chopped

Steps:

  • In a large pot heat oil over medium heat.
  • Add the ginger and garlic and cook until tender, 3 to 4 minutes.
  • Combine 1-cup broth with the cornstarch and blend until smooth.
  • Pour the cornstarch mixture into the pot and add the remaining broth, tofu, mushrooms, bamboo shoots, soy sauce, vinegar, sugar and crushed red pepper flakes.
  • Bring the soup to a boil and cook until thickened.
  • Add the frozen vegetables, shrimp and cilantro.
  • Simmer until shrimp is just opaque, about 10 minutes.
  • Stir in the spinach and cook until just wilted.
  • They say if you eat a full pot every 2 to 3 days, that is all you need to drop pounds fast.

¼ cup chopped fresh ginger root
¼ cup chopped garlic
2 (32 ounce) packages fat-free chicken broth
½ cup cornstarch
1 (6 ounce) can mushrooms, drained
1 (8 ounce) can bamboo shoots, drained
½ cup soy sauce
¼ cup rice wine vinegar
1 tablespoon fructose (fruit sugar)
1 teaspoon crushed red pepper
2 (16 ounce) packages frozen mixed stir-fry vegetables
1 pound frozen, peeled and deveined shrimp
¼ cup chopped fresh cilantro
1 (10 ounce) package frozen chopped spinach, thawed and drained

Steps:

  • In a large pot, heat oil over medium heat. Stir in ginger and garlic and cook 3 minutes, until tender. Stir together 1 cup broth with cornstarch. Pour cornstarch mixture into pot with mushrooms, bamboo, soy, vinegar, fructose, crushed red pepper and remaining broth. Bring to a boil and cook until thickened.
  • Stir in frozen mixed vegetables, frozen shrimp and cilantro. Simmer until shrimp is opaque, about 10 minutes. Stir in spinach until just wilted, 2 minutes. Serve at once.

Enjoy a bowl with lunch and dinner! A pot lasts several days. This recipe was created by dietitian, Zonya Foco, and is so popular and delicious I had to share. I mean, come on, a soup that actually burns calories. What's not to love? And wait until you taste it.

6 cups water
4 cups low sodium vegetable broth or 4 cups low-sodium tomato juice
3 large onions, chopped bite-size
1 green bell pepper, chopped Bite-size
6 celery ribs, chopped bite-size
10 carrots, chopped bite-size
2 (14 1/2 ounce) cans diced tomatoes, no salt added
4 cups cabbage, shredded
1/2 cup salsa
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon red pepper flakes (optional)
1 teaspoon dried basil
1 teaspoon salt (optional)
2 teaspoons dried oregano
1 (10 ounce) envelope dry onion or 1 (10 ounce) envelope vegetable soup mix
5 dashes Tabasco sauce (to taste)

Steps:

  • Add water and Broth to large Stock Pot over medium-high heat.
  • Toss in all your chopped vegetables and other ingredients. Bring to a boil, then lower to simmer.
  • Cook until vegetables are tender, about 20 minutes.
  • SERVE and ENJOY!
  • This recipe makes 16 1-1/2 cup servings.
  • With the optional salt added, each serving has 70 calories with 0 calories from fat. It has 0 g fat, 4 g Fiber, 0 mg Cholesterol. 470 mg Sodium, 2 g Protein, 16 g Total Carbohydrates, and 10 g Sugar.
  • Before experimenting with the soup, I suggest you make the first batch exactly to get the nutritional values, and to also see how you really will not need to improve on it. It is delicious, it has some bite from the spices, it is filling and has no annoying cabbage taste, It is really comforting and full of flavor.
  • For the Soup mix, I use Lipton's Recipe Selects. They come in a box with two 10 ounce envelopes. For the cabbage, use a food processor or buy in a bag pre-shredded. 4 cups is about 1/2 head of a large cabbage. Where I live it is hard to find the Tomato Juice, but it is made by Campbell's. Sacramento brand has too much sodium. However, I find that the Vegetable Broth/Stock works just fine and is easier to get. For the canned tomatoes, you can also use canned Stewed tomatoes if they're available in low sodium.
  • Perfect for Lunch or Dinner when dieting with Low-Fat wheat crackers or a sandwich, and some sliced fruit.

5 tablespoons butter
2 large butternut squash, softened,* peeled and cubed
2 large leeks well washed and cut into broad slices (use pale green & white parts only)
3-4 large shallots chopped (or one small onion)
1 cup of chopped celery (tops and stems)
2 crisp apples peeled and thinly sliced
2 teaspoons dried thyme
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
4-6 tablespoons high quality curry powder such as "Madras"
7 cups very rich vegetarian chicken flavored stock (IE Carmel Kosher Chicken Dehydrated Chicken Soup)
2 ½ cups of apple cider
1 ½ cups of low fat ½ and ½ cream
½ heavy whipping cream
Sour Cream for garnish
Chives cut in 1" lengths for garnish

Steps:

  • • Place halved and seeded butternut squash in a pan of water in the microwave and cover. Cook on high for about 20 minutes or until softened. Remove and peel and cut in large cubes • Melt butter in large soup pot. • Sauté leek, shallots, and celery for 5 minutes. • Add butternut squash. Cook together for about 15 minutes or until softened. • Add apples, thyme, cinnamon, nutmeg, curry powder, chicken stock and apple cider. Cover and simmer for 40 minutes. • Cool a bit and then using a hand held stick blender, purée mixture. • When reheating add the heavy cream but do not let soup come to a boil • Serve with a dollop of sour cream and garnished with cut chives

1 bunch celery
2 large carrots
water (cover veg)
1 pkg onion soup ( my recipe)

Steps:

  • 1. In a large soup pot,combine all ingredient in bite size pieces.
  • 2. Cover with water and onion soup mix. Boil veg for 10 minutes. Cover, reduce heat to a simmer until veg are to you desire tenderness. Cool and Freeze up to 1 month. Great as a drink , blend til pureed .Add more water to thin out..
