1 cup passion fruit pulp (see notes)
2 tablespoons honey
2-3 tablespoons white wine vinegar
½ cup extra-virgin olive oil
Salt and freshly ground white pepper (to taste)

Steps:

  • Combine all the ingredients in the blender or food processor.
  • Blend until smooth and emulsified. Taste for seasoning and adjust salt and pepper.
  • Use right away or refrigerate in a lidded mason jar for up to 1 week.

3 tablespoons balsamic vinegar
3 tablespoons olive oil
2 tablespoons water
1 tablespoon honey

1 medium navel orange, peeled and sectioned

2 bags ready to use mesclun greens
Pinch salt
Freshly ground black pepper
Balsamic Vinaigrette, recipe follows
1 pint grape tomatoes
1 yellow bell pepper, seeded, halved and thinly sliced
1 shallot, peeled and roughly chopped
1 tablespoon chopped fresh basil leaves
1/4 cup balsamic vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 cup olive oil

Steps:

  • Toss the greens, salt and pepper together with just enough vinaigrette to coat, about 1/2 cup. Place them in a decorative bowl and top with the grape tomatoes and bell pepper. Serve the remaining vinaigrette on the side.
  • Put the shallot and basil into the bowl of a food processor fitted with a metal blade. Pulse until the shallot is finely chopped. Add the balsamic, sugar, salt and pepper and pulse again. With the machine running, add the olive oil in a steady stream through the feed tube. Pour the vinaigrette into a small bowl and serve.

3/4 cup canned papaya nectar
2 tablespoons rice wine vinegar
2 teaspoons minced fresh ginger
1 tablespoon sugar
1/3 cup olive oil
Assorted fresh fruit, sliced
1 bunch mint, chopped fine (reserve some whole leaves for garnish)

Steps:

  • In a blender, combine papaya, nectar, vinegar, ginger and sugar, and blend until smooth. With motor running, pour in olive oil in slow, steady stream until incorporated. Pour into a bowl, stir in mint and refrigerate, covered until ready to use. Pour over fresh fruit and garnish with mint leaves.
