EASY MEDITERRANEAN BEAN SALAD



Easy Mediterranean Bean Salad image

Easy three bean salad recipe packed with Mediterranean flavors from fresh herbs, capers, and a zesty Dijon garlic vinaigrette. Instead of mushy canned green beans, use fresh steamed ones, or swap them out for another type of bean. I chose to use cannellini beans! After dressing the bean salad, allow it to chill in the refrigerator for at least 30 minutes before serving, so that the beans can absorb the zippy dressing.

1 15 oz can kidney beans, (drained and rinsed)
1 15- oz can cannellini beans, (drained and rinsed)
1 15- oz can garbanzo beans (chickpeas), (drained and rinsed)
1 green bell pepper, (cored and chopped)
1 red bell pepper, (cored and chopped)
1/2 English cucumber, (diced)
1 cup chopped red onions
1 1/2 tbsp capers, (drained)
1 cup chopped fresh parsley
10-15 fresh mint leaves, (torn or gently chopped)
10-15 fresh basil leaves, (torn or gently chopped)
1-2 garlic cloves (minced)
1/2 tbsp Dijon mustard
2 tbsp lemon juice
1 tsp sugar
1/4 cup Early Harvest extra virgin olive oil
Salt and black pepper

Steps:

  • In a large mixing bowl, combine the beans, chopped peppers, onions, capers and fresh herbs. Mix using a wooden spoon.
  • In a small bowl, add the vinaigrette ingredients. Whisk vigorously to combine.
  • Add the vinaigrette to the salad bowl. Toss to coat.
  • For best results, cover and refrigerate for a bit before serving so that beans soak up the vinaigrette flavors. Give the salad another quick toss before serving.

2 lbs fresh peas, shelled (about 2 cups shelled peas)
1/2 lb wax bean
1 tablespoon olive oil
1 tablespoon unsalted butter
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
1 teaspoon lemon juice
2 tablespoons of fresh mint, coarsely chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Add the peas and beans and cook until crisp-tender, 3 to 4 minutes.
  • Drain.
  • Heat the oil and butter in a large skillet over medium heat.
  • Add the peas, beans, salt, pepper, and lemon juice and cook until heated through, about 2 minutes.
  • Remove from heat, add the mint, and toss well.

1 lb green beans, ends snipped
1 lb yellow wax bean, ends snipped
1/4 cup light soy sauce
2 1/2 tablespoons pickled ginger, chopped
2 tablespoons sesame seeds, toasted

Steps:

  • Cook the beans until they are still crisp but heated well through apprx 5 minutes in boiling water.
  • Drain and rinse twice under cold water Just before serving heat the soy sauce& ginger in a large skillet, use high heat but do not burn.
  • Throw in the beans and stir coating the soy evenly with the beans.
  • Turn heat to medium and saute for apprx 3 minutes or until the beans are piping hot.
  • The beans should be nicely glazed.
  • Place in a heated serving bowl& sprinkle with the sesame seeds Serve.

6 tablespoons butter, cut into pats
1 small shallot, minced
Kosher salt and freshly ground black pepper
Two 16-ounce packages frozen petite peas, thawed
2 tablespoons chopped fresh mint
3 tablespoons heavy cream

Steps:

  • Add the butter to a large saute pan over medium-high heat. Once melted, add the shallots and saute until tender, 2 to 3 minutes. Sprinkle with a pinch of salt and pepper. Stir in the peas and cook until they are just warmed through, about 4 minutes. Add the mint and cream and stir together. Serve.

NANA'S YELLOW (WAX) STRING BEANS



Nana's Yellow (Wax) String Beans image

My Polish grandmother never used recipes. This so simple dish was the most difficult to duplicate because of it's simplicity. There are versions of this in Polish cookbooks using bread crumbs but they lacked the slightly sweet, butter baked flavor of cracker crumbs that accent the mild taste of the yellow beans. I haven't posted this recipe before because it sounds "too simple" but it's one of my most favorite!

1/4 cup crushed Ritz crackers or 1/4 cup townhouse cracker (about 6 crackers)

1 lb yellow wax bean, ends trimmed
2 tablespoons olive oil

3/4 cup whole blanched almond, coarsely chopped

  • Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of the salt and the wax beans, return to a boil, and cook until just tender, about 3 minutes.
  • Drain and plunge into a bowl of ice water. Drain again and set aside.
  • Heat the oil and butter in a large skillet over medium heat. Add the almonds and cook, stirring often, until they begin to turn golden but not brown, about 2 minutes.
  • Transfer to a plate and sprinkle with the remaining salt and the pepper.
  • Place the beans in a large bowl, toss with the almonds, and serve.
