A refreshing strawberry cooler with a hint of mint - have this cool beverage ready in just 10 minutes.

5 cups fresh strawberries
1/2 cup sugar
3 cups ice
6 cups lemon-lime flavored carbonated beverage, chilled
1/4 cup packed small mint leaves

Steps:

  • In food processor, process 4 cups of the strawberries and the sugar with on-and-off motions until smooth.
  • Pour pureed strawberries into large pitcher. Slice remaining 1 cup strawberries; set aside.
  • Just before serving, stir in ice, carbonated beverage, sliced strawberries and mint.

During the dog days of summer, my family looks for a cold, thirst-quenching drink. I like this ons because it's sparkling, refreshing and fast and easy to make.

Number Of Ingredients 8

3 cups water
5 cups sliced fresh strawberries
3/4 to 1 cup sugar
1/4 cup lemon juice
2 teaspoons grated lemon zest
1 cup ginger ale
Crushed ice
Additional strawberries, optional

Steps:

  • In a blender, process the water, sliced strawberries, sugar, and lemon juice and zest in batches until smooth. Strain the berry seeds if desired. Pour mixture into a pitcher; stir in the ginger ale. Serve in chilled glasses over ice. If desired, garnish with strawberries.

2 pints strawberries, hulled
1 bunch fresh mint
2 quarts fresh mandarin juice, strained (from 32 mandarins)

Steps:

  • Divide strawberries among eight to ten 10-ounce glasses. Add 2 mint leaves to each glass. Muddle until strawberries are crushed and juicy. Add 4 or 5 ice cubes to each glass, then fill three-quarters full with juice. Garnish with mint sprigs.
