1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 teaspoon grated ginger
1 teaspoon grated lemon peel
2 tablespoons minced onions
1/4 cup lemon juice
2 cups mangoes, peeled and chopped
1/2 cup honey

Steps:

  • Combine all ingredients in a saucepan.
  • Bring to a boil over medium heat. Reduce heat and simmer until mangos are completely cooked, about 15 minutes.
  • Puree mixture then return to saucepan and simmer 5 minutes.

2 tablespoons extra virgin olive oil
1 small yellow onion, diced
1 pinch red chili pepper flakes
2 teaspoons finely chopped ginger
2 lbs ripe mangoes, peeled and cut into 1-inch pieces
2 teaspoons yellow curry powder (Madras)
2 tablespoons honey
2 tablespoons white wine vinegar
1 cup water
zest of half a lemon
1/3 cup mint, chopped

Steps:

  • To make the chutney, heat 2 tablespoons olive oil a medium sauce pan over medium heat. Add onions and cook until golden and caramelized, about 8-10 minutes. Stir in chili flakes, ginger, mango, curry powder, honey, white wine vinegar and water.
  • Bring mixture to a boil, reduce to a simmer and cook until liquid has reduced by half and chutney has thickened, about 25-30 minutes. Remove from heat and stir in lemon zest and mint. Allow to cool to room temperature, then transfer to a jar and seal it tightly before refrigerating.

Yield Makes about 2 1/2 cups

Number Of Ingredients 10

1 tablespoon vegetable oil
3 mangoes, peeled, pitted, chopped
1 1/2 cups chopped onion
1 cup chopped red bell pepper
6 garlic cloves, thinly sliced
4 cups chicken stock or canned low-salt chicken broth
1 cup honey
5 tablespoons white wine vinegar
1 tablespoon minced peeled fresh ginger
1/2 cup chopped fresh cilantro

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add next 4 ingredients and sauté until onion is soft, about 3 minutes. Add stock, honey, vinegar and ginger. Reduce heat to medium and simmer until thick sauce forms, stirring occasionally, about 1 hour 40 minutes. (Can be made 1 day ahead. Cool, then cover and refrigerate. Before continuing, bring to simmer.) Stir cilantro into sauce. Season to taste with salt and pepper.
