2 large fresh peaches, cut into cubes
2 large nectarines, cut into cubes
1 red Anjou pear, cut into cubes
1 cup seedless grapes, halved
2 lemons, juiced
¼ cup minced fresh mint (chocolate mint preferred)
½ lemon, zested
1 tablespoon honey (fireweed honey preferred)

Steps:

  • Combine watermelon, strawberries, peaches, nectarines, pear, and grapes in a large mixing bowl.
  • Whisk lemon juice, mint, lemon zest, and honey together in a small bowl; drizzle over the fruit mixture and toss to coat.
  • Refrigerate 1 hour before serving.

⅓ cup olive oil
2 tablespoons lemon juice
1 ½ tablespoons chopped fresh mint leaves

Steps:

  • Stir together olive oil, lemon juice, and 1 1/2 tablespoons of mint until well blended. Set aside for 2 hours.
  • Strain mint out of dressing with a fine mesh strainer. Stir in remaining 1 tablespoon chopped mint leaves and serve.

1 tablespoon chopped fresh tarragon

This fast and easy recipe makes raw zucchini the star. The key is to pump up the vegetable's subtle flavor with fragrant mint, crunchy pomegranate seeds and a creamy and bright dressing.

3/4 cup Greek yogurt
1 lemon, zested and juiced
1 long red chile, such as a Fresno chile (about 1 ounce), thinly sliced crosswise
1 bunch mint, leaves torn
Kosher salt and freshly ground black pepper
4 medium zucchini (about 2 pounds), thinly sliced into rounds on a mandoline
1/4 cup pomegranate seeds
1/4 cup shelled pistachios, chopped
Olive oil, for drizzling
Pomegranate molasses, for drizzling

Steps:

  • Put the yogurt, lemon zest, lemon juice, chile, half of the mint and 2 tablespoons of water in a large bowl. Season with salt and pepper and combine with a spoon. Add the zucchini and toss to coat.

1/2 cup rosemary
2 garlic cloves
1/2 teaspoon salt
60 ml olive oil (1/4 cup)
1 long fresh red chile, deseeded and finely chopped
1 lemon, juice of
6 chicken thigh fillets, trimmed
1 tablespoon Dijon mustard
1/2 lemon, juice of
100 ml olive oil
2 tablespoons mint leaves, chopped

Steps:

  • Place rosemary, garlic and salt in a mortar and pestle and crush well (or combine in a food processor and pulse until roughly chopped). Transfer to a non-metal bowl and add oil, chilli and lemon juice. Mix well.
  • Add chicken to marinade, cover and chill a minimum of 1 hour or overnight.
  • Cook on greased rack over hot coals or gas barbecue grill on high, 10-15 minutes, turning once and basting with marinade every so often.
  • For mint dressing, whisk mustard, lemon juice, olive oil, and mint leaves in small bowl until well combined. Serve drizzled over chicken (and accompanying vegetables, if desired).
