Succulent chunks of turkey and a medley of colorful vegetables in a creamy white sauce, all wrapped up in a flaky pastry crust, make these individual turkey pot pies a perfect comfort food.

3 pie crusts (homemade or store-bought)
1 can (284ml) cream of chicken condensed soup
1 cup milk
2 cups cooked turkey
2 cups frozen mixed vegetables (thawed)

Steps:

  • Preheat oven to 375F. Spray the wells and rims of a jumbo 6-cup muffin pan with non-stick cooking spray.
  • Cut six 4″ and six 6″ circles out of your pie crusts. Fit the larger circles into the muffin cups.
  • Mix the rest of the ingredients together and divide the filling amongst the 6 cups.
  • Place the 4″ pie crust on top and press to seal the edges together. Cut a few slits for ventilation.
  • Bake for 30 minutes or until the crust is golden brown and the filling is bubbling.

Dough for 2 double-crust pies
2-1/4 cups sugar
1/3 cup all-purpose flour
7 medium tart apples, peeled and sliced (about 8 cups)
3 cups fresh or frozen cranberries
2 teaspoons grated orange zest
1-1/2 teaspoons ground nutmeg
1-1/2 teaspoons ground cinnamon
6 cups frozen or fresh raspberries
Optional: Egg wash, additional sugar or coarse sugar, and whipped cream

Steps:

  • Divide dough into 2 portions so that 1 is slightly larger than the other; wrap and refrigerate 1 hour or overnight., Roll out larger portion of dough between 2 pieces of waxed paper into a 18x13-in. rectangle. Remove top sheet of waxed paper; place a 15x10x1-in. baking pan upside down over crust. Lifting with waxed paper, carefully invert crust into pan. Remove waxed paper; press crust onto bottom and up sides of pan. Allow to chill while preparing filling. , In a Dutch oven, mix sugar and flour; stir in apples, cranberries, orange zest and spices. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, 10-12 minutes or until apples are tender and juices are thickened, stirring occasionally. Remove from heat; stir in raspberries. Set aside to cool completely. , Preheat oven to 375°. Add filling to prepared crust., On a well-floured surface, roll remaining dough into a 1/8-in.-thick rectangle; cut into 1-1/2-in.-wide strips. Arrange strips over filling, sealing ends to bottom crust. If desired, brush crust with egg wash; sprinkle with additional sugar or coarse sugar., Bake on lowest oven rack 45-50 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack. If desired, serve with whipped cream.

1 9 inch deep pie shell
1 tablespoon Dijon mustard
1 cup shredded swiss cheese
1 cup shredded cheddar cheese
1 tablespoon butter or 1 tablespoon margarine
1 medium onion, chopped
1 stalk celery, chopped
1/4 cup slivered almonds
1 1/2 cups diced cooked turkey
1 cup whole berry cranberry sauce
3 eggs
3/4 cup 2% evaporated milk
1/4 teaspoon dried rosemary or 1/4 teaspoon sage

Steps:

  • Preheat oven to 400 degrees F.
  • Place pie shell on baking sheet.
  • Prebake shell, if desired, 5 minutes.
  • Brush mustard on inside of shell.
  • Combine cheeses in bowl.
  • Melt butter in medium skillet over medium heat.
  • Saute onion, celery and almonds 5 minutes or until vegetables are softened.
  • Layer half of cheese mixture in shell.
  • Top with onion mixture, turkey, cranberry sauce and remaining cheese mixture.
  • In medium bowl, beat eggs, milk, and rosemary or sage together.
  • Pour slowly over pie.
  • Bake 15 minutes.
  • Lower heat to 375 degrees F and bake 25 to 30 minutes or until set, covering edges with foil if needed during last 15 minutes to prevent excessive browning.
  • Rest 10 minutes.
