2/3 cup packed light brown sugar
8 tablespoons (1 stick) unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F. Coat the cups of 2 24-cup mini muffin tins with cooking spray.
  • Whisk together the flour, chocolate chips, baking powder, salt, cinnamon and baking soda in a medium bowl. Whisk together the pumpkin, sugar, butter, sour cream, vanilla and egg in a large bowl until thoroughly combined. Stir the flour mixture into the pumpkin mixture until just combined but with a few small lumps.
  • Fill each muffin cup with a generous tablespoon of batter. Bake until the muffins have pulled away from the sides of the pan and a toothpick inserted in the center comes out clean, 12 to 16 minutes. Transfer the muffins to a cooling rack. Serve warm or at room temperature.

1 3/4 c all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/8 tsp cloves
1/3 c vegetable oil
1/2 c brown sugar
1 egg
1 tsp vanilla extract
3/4 c canned pumpkin (not pie filling)
1/2 c milk
1/2 c (1 stick) butter, melted
2/3 c granulated sugar
2 Tbsp cinnamon

Steps:

  • 1. Preheat oven to 350 degrees. Spray or line mini muffin pan.
  • 2. Pull out two large bowls. In one bowl, whisk the flour, baking powder, salt, cinnamon, nutmeg, allspice and cloves.
  • 3. In another bowl, whisk the oil, brown sugar, egg, vanilla, pumpkin and milk. Mix until smooth and well combined by hand. (Not necessary to use a mixer!)
  • 4. Add dry ingredients to the wet ingredients, and mix until just combined - do not over mix!
  • 5. Divide the batter evenly among the 24 muffin cups (using a 2 tablespoon cookie scoop). I had enough batter left to make four more.
  • 6. Bake 10-12 minutes, or until toothpick comes out clean.
  • 7. While the muffins bake, prepare the final coating. Melt butter in one bowl and combine granulated sugar and cinnamon in another bowl. (When making again, I will cut this recipe for the cinnamon/sugar coating, including butter, in half. It made way too much!)
  • 8. Remove muffins from oven and cool for 2 minutes, or until just cool enough to handle. Dip each muffin top in the melted butter, then dip in cinnamon/sugar to coat. If you did not use paper liners, you can dunk the whole muffin in the melted butter, and roll in the cinnamon/sugar mix for a more donut feel!

1 and 1/2 tsp vanilla extract
3/4 cup pumpkin puree (not pumpkin pie filling)
1/2 cup milk
CINNAMON SUGAR COATING
1/4 cup (1/2 stick) unsalted butter
1/2 cup white sugar
2 Tablespoons ground cinnamon

Steps:

  • Directions: Preheat oven to 350F. Spray mini muffin tin with nonstick spray. Set aside. In a large bowl, combine the flour, baking powder, salt, cinnamon, pumpkin pie spice, and nutmeg. Set aside. In a medium sized bowl, whisk together the melted butter and brown sugar. Add the egg and stir for about 1 minute. Add the vanilla, pumpkin puree, and milk. Slowly pour wet ingredients into the dry. Stir together until just combined - do NOT overmix. Using a small spoon, spoon the batter into the muffin tins, about 2/3 way full. For ease, I used a small spoon sprayed with nonstick spray so that the batter easily fell off the spoon into the tin without using my fingers. Bake for 11-12 minutes, or until a toothpick inserted into the center comes out clean. While the muffins are cooling, make the coating. Combine the sugar and cinnamon a small dish. In a separate small dish, melt the butter. Once the muffins are relatively cool, dip into the melted butter and then into the cinnamon sugar. Muffins taste best on the same day though they can be stored at room temperature for 3 extra days.

1-1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. pumpkin pie spice
1/2 tsp. baking soda
1/2 tsp. salt
1 teaspoon cinnamon
1 tsp. cinnamon
1 cup canned pumpkin (not pumpkin pie)
1-1/4 cups sugar
1/3 cup oil
2 large eggs
Topping:
1/2 cup flour
1/3 cup brown sugar, packed
1/4 cup pecans or Walnuts, chopped finely
1/2 tsp. cinnamon
1/2 teaspoon cinnamon
3 Tbsp. butter, softened

Steps:

  • COMBINE flour, baking powder, pumpkin pie spice, baking soda, salt and cinnamon. Set aside.
  • COMBINE in a large bowl the wet ingredients; pumpkin, sugar, oil and eggs. Then combine in small bowl ingredients for topping until crumbly.
  • PREHEAT oven to 350˚F and place cupcake liners in a muffin tin. Divide batter into liners using a cookie dough scoop, add about 2 tablespoons. Sprinkle with topping.
  • BAKE for about 10-12 minutes or until a toothpick inserted in the center comes out clean.

1 can(s) pumpkin (regular sized can)
1 pkg cinnamon chips

Steps:

  • 1. 350 degree oven; bake 10 minutes Mix all ingredients together well. Pour into greased mini muffin pans. Bake 10 minutes.
  • 2. Some of you may not be familiar with cinnamon chips. They are a seasonal item in our local grocers and are with the other chocolate chips, etc. You may have to go to a larger grocer's to find them.
