BACON AND ONION PIE
A tasty pie that is simple to make and is sure to be popular with the whole family. Serve with baked beans or peas for a mid-week meal. A James Martin recipe.

Steps:
- Bring a pan of salted water to the boil and cook the potatoes until soft. Drain and mash.
- While the potatoes are cooking, heat and cook the bacon in half the butter and the oil in a frying pan until just beginning to brown and crisp. Remove from the pan with a slotted spoon.
- Add the onions to the pan. Add seasoning and the sugar. Fry gently until the onions are soft and caramelized. Take care not to allow them to burn.
- Return the bacon to the pan and stir evenly through the onions. Add a little broth or water to de-glaze the pan and then tip the mixture into a heatproof dish.
- Add the remaining butter and 4oz of the cheese to the potato. Season and mix well. Preheat the broiler to high.
- Spoon the mixture over the onions and bacon, scatter with the remaining cheese and top with the slices of tomato.
- Place under a hot grill until the cheese is melted and brown. Serve.

BONNIE'S POTATO AND ONION PIE
This is a great side dish with tons of flavor, and easy to prepare. The smell is fantastic! (No crust to make) Great served with chicken on the spit and a tossed green salad. Sliced potatoes and onions cooked in sour cream and cheese of your choice. I hope you try this side dish! Enjoy!

- 1. Cook's Tip: A word about cheese. I use jack cheese, fontina, gruyere cheese, cheddar, but I like fontina and jack cheese the best. For the milk mixture, I use a combination of sour cream, heavy cream and 2% milk, which is what I had on hand. You can use all milk, or all cream, or mix it up. Use what you like. Experiment to your hearts content. This is a fun recipe for that!
- 2. Pre-heat the oven to 375 degrees. Spray a 10 inch glass pie dish with Pam.
- 3. Scatter 2 teaspoons of garlic on bottom of Pam sprayed pie dish. Put half of the sliced potatoes on top of the garlic, overlapping the slices. Add half of the onion slices. Add salt and pepper (go easy on the pepper) Sprinkle 1/3 cup of cheese (your choice) over the onions evenly. Repeat the layer of garlic, potatoes, onions, and salt, pepper. Add the milk mixture evenly over the top, and then add the remaining 2/3 cup of cheese of choice, plus, the 1/4 cup of parmesan cheese.
- 4. Cover the pie with foil and bake 30 minutes, uncover and bake 30 minutes more. You may want to do a low broil to brown the top. Cut into wedges to serve. Enjoy!

5-Ingredient Fix Contest Entry. A delightfully simple but yummy appetizer, perfect for game days, picnics or last-minute guests. Made this for the Super Bowl with ingredients I had in the fridge. You can add lots more but staying within the 5 ingredients was a fun experiment. I often use two cans of dough to make a double batch, because they go so quickly.

Steps:
- Divide the mashed potatoes in half, returning one half to the bag to refreeze, thaw the remaining half and set aside.
- Thaw and drain 1/2 bag (about 8 oz.) of the peas and carrots, and place in a medium bowl.
- Over medium heat cook the sausage (the meat having been removed from the casing) and the onion in a nonstick skillet, stirring, until the sausage is browned and the onions are translucent, about 8 minutes. Drain off the grease and pour the meat-onion mix into a large bowl, set aside.
- In the same pan, with any residual grease left in the pan, cook the peas and carrots for another 2 minutes.
- Pour the peas and carrots into the meat mixture, then fold in the thawed (10 ounces portion) of the mashed potatoes.
- With a rolling pin, roll out the biscuit dough and cut into 12 (3-inch) rounds.
- Preheat oven to 350F degrees.
- Put a generous tablespoonful of the filling in the center of each round, brush the edges with water, and fold in half. Seal the edges with a fork. Cut 2 small slits in the top of each meat pie.
- Put the mini-pies on an un-greased baking sheet and bake for 15 minutes until they are golden brown. Remove, let cool slightly, and serve.
MINI ONION BACON PIES RECIPE BY TASTY

- Preheat oven to 325˚F (170˚C).
- Saute bacon in a medium-sized frying pan. Add squash and onion, until the onions are translucent and the squash golden brown. Season with sage, salt, and pepper. Set aside to cool.
- Roll out pie crust into an even thin layer. With a 6-inch (15 cm) diameter bowl, cut out 6 circles. Fill a 6-cup cupcake tin with the cutouts.
- Mix eggs, sour cream, and milk. Season with salt and pepper.
- Add the onion-pumpkin-bacon mixture into the cups.
- Carefully pour egg mixture into every cup. Decorate pies with leftover pie crust, if desired.
- Cover edges and decoration with egg wash.
- Bake for 40 minutes or until egg mixture is cooked through and crust is golden brown. (Cover top with aluminum foil for the last 10 minutes if decoration gets too dark.)

- Heat oven to 400 degrees Fahrenheit.
- In a 10" oven proof skillet, melt butter in oven.
- Add potatoes and onion.
- Bake, stirring once, for 15 to 20 minutes or until vegetables are tender crisp.
- Meanwhile, in a small bowl stir together cheese, parsley, milk, eggs, salt, and pepper.
- Pour over baked potatoes and onion.
