A flaky, soft crust, farm fresh peaches and a little drizzle of almond flavored icing - just like grandma used to make!

Number Of Ingredients 17

2 ½ cups all-purpose flour ((318g))
1 teaspoon granulated sugar
1 teaspoon salt
8 tablespoons cold unsalted butter (cut into ½-inch pieces (4oz or 113g))
⅓ cup solid shortening (like Crisco (63g))
6 tablespoons ice cold water (plus 1 T if needed)
1 large egg mixed with 1 tablespoon milk (for brushing on the pies)
5 medium to large peaches
½ cup granulated sugar ((110g))
2 tablespoons cornstarch
¼ teaspoon cinnamon
dash of table salt
juice of ½ a lemon
a few drops of almond extract
1 cup powdered sugar ((115g))
1 tablespoon milk or cream (more or less for desired consistency)
¼ teaspoon almond extract

Steps:

  • Peel and dice the peaches into ½-inch pieces. Place the diced peaches in a large mixing bowl and sprinkle with ½ cup granulated sugar Gently toss to combine. Cover the bowl with plastic wrap and set aside for an hour.
  • While the peaches are making their juice, mix up the pastry dough.
  • Combine the flour, sugar and salt in the bowl of a food processor. Add the butter and shortening and pulse until the mixture resembles a coarse meal. Add the cold water and pulse just until the dough starts to hold together. Don't over process.
  • Gather the dough together and divide in half. Form each half into a disc. Wrap each tightly with plastic wrap and refrigerate at least 30 minutes or overnight.
  • Once the peaches have rested for an hour, drain the juice into a medium saucepan. Set aside the diced peaches. Whisk in the corn starch, cinnamon and salt until combined. Cooke over medium heat until the syrup boils. Whisking constantly, cook for about 2 minutes or until mixture thickens. Remove from the heat and stir in the lemon juice and almond extract. Gently fold in the peaches and any extra juice. Set aside to cool while rolling out the dough.
  • Remove the dough from the refrigerator and allow it to rest 10-15 minutes. Lightly flour a clean work surface and dust the dough with flour. Roll out one of the discs to about ⅛-inch thick and cut out as many 4-inch rounds as you can at first pass. Gather dough scraps together and set aside.
  • Place the 4-inch rounds of dough on a large piece of parchment or wax paper.
  • Beat together the egg and milk. Brush the egg mixture all over the pastry rounds. Place 1 heaping tablespoon of filling in the center of each pastry. Pull up the sides to make the hand pie look like a taco and start sealing the edges starting on the bottom working your way up to the middle. Lay the pies on their side and seal the edges together using the tines of a fork. Cut a few small slits in the top to vent. Move the unbaked pies to a parchment lined baking sheet and refrigerate for at least 30 minutes before baking. Repeat with the remaining dough and filling. If the dough become hard to handle or sticky, refrigerate 15-20 minutes and try again.
  • Preheat oven to 350°F.
  • Remove the pastries from the refrigerator and brush the tops of the pies with a little bit of the egg and milk mixture. Bake or 30 minutes or until golden brown. Transfer hand pies to a wire rack to cool.
  • Whisk together the powdered sugar, milk or cream and almond extra until smooth. Add additional sugar or milk to reach the desired consistency.
  • Drizzle the icing on the cooled pies and serve immediately. Refrigerate left over pies in a single layer in an airtight container.

Dessert is ready in 30 minutes with these Glazed Peach Hand Pies! The flaky crust and spicy cinnamon filling are the perfect combo in a hand pie, plus they're baked not fried!

2 boxes (14.1 oz each) refrigerated pie crust
1 can (21 oz) peach pie filling
1 tsp cinnamon
2 1/2 cups powdered sugar
1/4 cup milk
1 egg white, beaten

Steps:

  • Preheat oven to 425°F. Remove pie crusts from package and allow to come to room temperature while you prepare filling.
  • Dump pie filling in a shallow bowl and dice peaches using a fork and knife (you want them to be small pieces). Add in cinnamon and mix until blended. Set aside.
  • Unroll pie crusts and cut 6 circles from each crust using a 4-inch biscuit cutter. You may have to re-roll the scraps to get the 6th circle.
  • Using a 1 tbsp cookie scoop, drop peach pie filling into center of each pie crust circle. Fold in half and pinch edges completely. Fold pinched edges over and press with the tines of a fork to seal. Poke hand pie with fork once, to prevent bursting.
  • Beat egg white in a small bowl until frothy. Brush over the tops of each hand pie. Bake on a parchment paper lined baking sheet (1 inch apart) for about 15 minutes, until browned.
  • While pies are baking, whisk together the powdered sugar and milk until smooth. Remove cooked pies from baking sheet and drop (while warm) into glaze, coating it completely. I use two forks to flip it in the glaze and remove carefully. Return to parchment paper and allow to set (about 5 minutes). ENJOY!

6 peaches (about 1 1/2 pounds), peeled, pitted and chopped
1/2 cup water
1/2 vanilla bean, seeds scraped
1/4 cup granulated sugar
2 tablespoons packed light brown sugar
2 teaspoons lemon juice
Pinch of salt
2 rounds refrigerated pie crust
1 large egg, lightly beaten

Steps:

  • Combine the peaches, water, vanilla seeds and pod, granulated sugar, brown sugar, lemon juice and salt in a saucepan. Bring to a simmer and cook until syrupy and the peaches are soft and just beginning to break down, 12 to 18 minutes. (Add more water if the mixture is too thick.) Discard the vanilla pod and mash the peaches; let cool.
  • Preheat the oven to 425˚ F. Line a baking sheet with parchment paper. Gather the pie dough into 2 small compact squares; roll out each into a 12-inch square. Cut each in half, then cut each half into thirds to make twelve 4-by-6-inch rectangles.
  • Arrange 6 rectangles on the baking sheet and top each with 3 tablespoons of the peach compote. Cover each with another rectangle of dough; crimp the edges with a fork to seal. Cut a small vent into the center of each top; brush with the beaten egg. Bake until golden brown, 20 to 25 minutes.

1/4 cup sugar
1 tablespoon quick-cooking tapioca
1/4 teaspoon ground cinnamon
1/4 teaspoon grated orange zest
1/8 teaspoon salt
Dash ground cloves
3 cups frozen unsweetened sliced peaches, thawed
1 refrigerated pie pastry
1 large egg white, beaten
1 teaspoon coarse sugar
Additional ground cinnamon

Steps:

  • In a large bowl, combine the sugar, tapioca, cinnamon, orange zest, salt and cloves. Add peaches; toss gently to coat. Let stand for 15 minutes., Cut pastry sheet in half. On a lightly floured surface, roll out one half into an 8-in. circle. Transfer to a 7-in. pie plate; trim pastry even with edge. Add filling. , Roll out remaining pastry to fit top of pie. In New York, where I live, peaches mean summer, and the perfect specimens usually come from the farmer's market. But what's a peach-lover to do year-round? There is a solution: frozen peaches! The best ones have been picked at their peak and peeled, sliced and flash-frozen to seal in all that glorious peach flavor.

2 1/2 cups all-purpose flour, plus more for flouring the work surface
2 tablespoons granulated sugar
1 teaspoon kosher salt
2 sticks cold unsalted butter, cut into cubes
4 tablespoons ice water, plus a bit more if needed
2 cups diced peaches, fresh or frozen
5 tablespoons granulated sugar
1 tablespoon cornstarch
2 to 3 tablespoons bourbon
1 large egg
Pinch kosher salt
Coarse sugar, for sprinkling

Steps:

  • For the pastry: In the bowl of a food processor, combine the flour, granulated sugar and salt and pulse to combine. Add the butter and pulse until the mixture resembles coarse meal with some bigger pieces of butter. Add the ice water and pulse just until the crumbs begin to come together. Add a little more water if necessary but try not to add too much. Turn the mixture out onto a big sheet of plastic wrap, form it into a disc, wrap it and refrigerate for at least 1 hour.
  • Preheat the oven to 375 degrees F.
  • On a lightly floured surface, roll out the dough to an even 1/8- to 1/4-inch thickness. Using a 3-inch cookie cutter, cut out 16 to 20 circles. Transfer to a rimmed baking sheet and chill while you make the filling.
  • For the filling: In a small saucepan, combine the peaches, granulated sugar and cornstarch. Bring to a boil over medium heat, mashing the peaches with a fork, and cook until the mixture has thickened, 6 to 8 minutes. Stir in the bourbon to taste. Let cool completely, about 30 minutes.
  • In a small bowl, whisk together the egg and salt. On a rimmed baking sheet lined with parchment, lay out half of the dough discs. Dollop 1 to 2 tablespoons of the filling in the center of each disc. Brush around the edges of the pastry with some of the egg mixture. Top with another dough disc, pressing the edges with a fork to seal. Brush the tops with the egg mixture and sprinkle with coarse sugar. With a paring knife, make a little slit in each pie to vent steam.
  • Bake until golden brown, 25 to 30 minutes. Transfer the pies to a rack to cool or serve warm.
