- Preheat oven to 375°. Separate tubes of dough into 8 rolls each; halve the rolls. Press dough onto the bottom and up the sides of miniature muffin cups coated with cooking spray. , Spoon pizza sauce into each cup. Sprinkle with onion, green pepper, pepperoni and cheese. Bake until the crusts are browned and cheese is melted, 15-18 minutes.

- Preheat oven to 425°F (220°C)
- In a large bowl mix marinara sauce, parmesan cheese, pepper, salt, and oregano.
- Lightly oil a 12-cup muffin tin or coat with nonstick spray.
- Lay tortilla on a flat surface. Using an empty can, cut 3-4 medium circles, pressing firmly enough in a rocking motion to cut through the tortilla.
- Fit tortilla circle into each of 12 muffin cup.
- Scoop 1 tablespoon pizza sauce into each muffin cup.
- Sprinkle with mozzarella cheese.
- Top with mini pepperonis.
- Place into oven and bake for 10-12 minutes, or until cheese has melted.
- Serve immediately.

- Place crackers close together on a microwave-safe dish, spoon about 1 tsp of pizza sauce on top of each cracker.
- Cut the canadian bacon slices into quarters, (cut the half slice in two).
- Layer 1 quarter slice of canadian bacon, 1 banana pepper ring, and 1 mushroom slice on top of each cracker, sprinkle each evenly with cheese; microwave uncovered on high for 45-50 seconds, or until cheese melts, serve hot.

TORTILLA PIZZA
These are a super quick light lunch or appetizer. My grandchildren love these little tasty treats. There is no telling how many I've made over the years as they continue to grow.

- 1. Spread pizza sauce over flour tortilla. Top with your favorite toppings. Microwave 40 seconds. Slice with pizza cutter. NOTE: For a healthier version, I use turkey pepperoni and whole wheat tortilla. For a crispier crust, I put mine in a toaster oven for about a minute and a half. Not only are they flavorful and quick to prepare, they are very economical.
