1/2 cup pitted dates, chopped
1/2 cup breadcrumbs
1 1/3 lbs ground beef
3 onions, 2 thinly sliced and 1 finely chopped
3 slices cooked bacon, chopped
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
salt and pepper
4 tablespoons butter, melted

Steps:

  • Position racks in the top and bottom thirds of the oven and preheat to 375°F In a bowl, combine the dates and breacrumbs, working the mixture through your fingers to separate. Mix in the beef. Mix in the chopped onion, bacon, egg, worcestershire and vinegar; season with salt and pepper. Divide into 4 mounds and, on a baking sheet, shape into loaves. Place on the upper rack and bake for 45 minutes.
  • Meanwhile, on another baking sheet, toss the slices onions with the butter and season with salt; spread out evenly. Bake ont he lower rack, stirring occasionnally, until golden, about 30 minutes. Serve the meatloaves with the onions.

My family and I can't get enough of these little meat loaf muffins topped with a sweet ketchup sauce. They are the perfect portion size. 1 cup ketchup
3 to 4 tablespoons packed brown sugar
1 teaspoon ground mustard
2 large eggs, lightly beaten
4 teaspoons Worcestershire sauce
3 cups Crispix cereal, crushed
3 teaspoons onion powder
1/2 to 1 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3 pounds lean ground beef (90% lean)

Steps:

  • In a large bowl, combine the ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside. Add the eggs, Worcestershire sauce, cereal and seasonings to remaining ketchup mixture. Let stand for 5 minutes. Crumble beef over cereal mixture and mix well. , Press meat mixture into 18 muffin cups (about 1/3 cup each). Bake at 375° for 18-20 minutes. Drizzle with reserved ketchup mixture; bake 10 minutes longer or until meat is no longer pink and a thermometer reads 160°. , Serve desired number of meat loaves. Cool remaining loaves. Transfer to freezer container; close and freeze for up to 3 months. , To use frozen meat loaves: Completely thaw in the refrigerator. Place loaves in a greased baking dish. Bake at 350° for 30 minutes or until heated through, or cover and microwave on high for 1 minute or until heated through.

chopped fresh rosemary
1/2 lb sliced bacon
3/4 cup seasoned breadcrumbs
2 minced garlic cloves
2 lbs meatloaf mixture
1 egg
1 tablespoon Dijon mustard
1/2 cup ketchup
1 onion, finely chopped
chopped fresh parsley
1 dash Worcestershire sauce

Steps:

  • I start by sauteing my onion and garlic in a pan with some olive oil until soft.
  • I add the cooked onion and garlic to my meat mixture.
  • Mix everything in a bowl together except the bacon.
  • Don't over mix.
  • Now form your lovely packages into 5" long loaves. Cut bacon slices to drape over each loaf. About 4 half slices for each little mini meatloaf. Pack them tightly on the meat to keep them moist.
  • I bake them on a rack over a cookie sheet to catch the drippings. Less mess this way.
  • Bake at 350 degrees for about 35-45 minutes. Temperature should reach 160.
  • Let rest about 10 minutes on cutting board before slicing, otherwise the slices will fall apart. Let the juices redistribute and solidify.

Unusual! Baking the onions along with the meatloaves is a great idea! Makes a wonderful topping. Don't let the use of dates scare you! They make the meat very tasty. I have made it without the dates, but it wasn't as interesting. You can use a larger quantity of onions, too. A Rachael Ray recipe passed on to me by my daughter; it was delicious when she made it for us. Since she was out of dates, she used raisins; I think they made it a little sweeter.
