4 eggs
1/3 cup MIRACLE WHIP Dressing
1/3 cup milk
3/4 cup finely chopped fresh spinach
3/4 cup ATHENOS Crumbled Feta Cheese with Basil & Tomato

Steps:

  • Heat oven to 375ºF.
  • Whisk eggs, dressing and milk until blended.
  • Place spinach in 24 mini muffin pan cups sprayed with cooking spray; top with cheese. Spoon egg mixture over ingredients in cups.
  • Bake 17 to 20 min. or until centers are set and tops are golden brown. Immediately run knife around edge of each quiche, then remove from pan to serve.

A healthier quiche option with no crust and with homemade feta cheese!

2 bunches fresh spinach (washed and trimmed from stems. )
3 oz feta
3 cloves garlic, minced
1/2 - 1 tablespoon of olive oil
1/2 small white onion, diced
5 eggs
2/3 cups 2% milk
2 tablespoons Parmesan cheese, shredded
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
butter for greasing or non stick spray

Steps:

  • Pre-heat oven to 350°.
  • Grease a pie dish with butter. Add shredded parmesan cheese to bottom of dish and spread in a very thin layer.
  • In a large saute pan, heat olive oil on medium. Add garlic and onion until translucent. Add spinach and saute, mixing often until spinach is bright and wilted. Remove from pan and put in a bowl.
  • In a separate large bowl, add 5 eggs, 2/3 cup of milk, salt, and pepper. Whisk well.
  • Add crumbed feta to bowl with spinach. Add spinach mixture to large bowl with eggs. Mix well.
  • Pour egg and spinach mixture into pie dish so that it fills dish but doesn't overflow.
  • Bake for 50 minutes until egg has set.
  • Serve and enjoy!

1 tablespoon vegetable oil
1 onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
5 eggs, beaten
3 cups shredded Muenster cheese
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
  • Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
  • In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
  • Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

This is an adaptation of Sackville's Spinach, Tomato and Feta Quiche. I'm doing low carb and wanted to leave out the crust and make into muffins to go. I changed it up a little and wanted to get the nutrition facts.

6 eggs
1/4 medium tomatoes, chopped
1/2 cup mushroom, chopped
1/2 cup red onion, diced
1 (10 ounce) package frozen spinach, thawed and well drained
1/3 cup feta cheese
1 cup half-and-half
1/2 teaspoon pepper
2 teaspoons garlic, minced

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare muffin tin by spraying generously with cooking spray.
  • Crumble feta cheese in bottom of each well, top with spinach, tomatoes, and onions.
  • Beat the eggs, half and half and garlic together and pour over each.
  • Bake 20-25 minutes til tests done (knife inserted comes out clean).
