These yummy mini cheeseburgers are topped with cheese and ketchup and served over rice or noodles.

1 pound lean ground beef
½ cup ketchup
½ cup shredded Cheddar cheese
1 egg
1 pinch garlic powder
¼ cup shredded Cheddar cheese
¼ cup ketchup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Mix ground beef, 1/2 cup ketchup, 1/2 cup shredded cheese, egg, and garlic powder in a large bowl. Form mixture into 1 inch balls, and gently press onto prepared baking sheet to form mini-burgers.
  • Bake in preheated oven for 20 minutes. Spread remaining ketchup on burgers, and sprinkle with remaining cheese. Return burgers to the oven, and bake until cheese is melted and bubbly, about 5 minutes.

1 pound lean ground beef
2 tablespoons ketchup
2 teaspoons instant minced onion
1 teaspoon yellow mustard
8 ounces American cheese, cut into 2-inch cubes (2 cups)
24 miniature sandwich buns, split

Steps:

  • Cook beef in 10-inch skillet over medium-high heat about 8 minutes, stirring frequently, until brown; drain. Stir in ketchup, onion and mustard.
  • Spray 3 1/2- to 4-quart slow cooker with cooking spray. Spoon beef mixture into cooker. Top with cheese.
  • Cover and cook on low heat setting 3 to 4 hours or until mixture is hot and cheese is melted.
  • Serve beef mixture with buns. Beef mixture will hold on low heat setting up to 3 hours.

1/2 cup chopped onion
1 tablespoon butter
1 egg, lightly beaten
1/4 teaspoon seasoned salt
1/4 teaspoon ground sage
1/4 teaspoon salt
1/8 teaspoon pepper
1 pound lean ground beef (90% lean) or ground beef
40 mini buns, split
8 ounces process American cheese slices, cut into 1-1/2-inch squares, optional
40 dill pickle slices, optional

Steps:

  • In a large skillet, saute onion in butter. Transfer to large bowl; add egg and seasonings. Crumble beef over mixture and mix well. Spread over bottom halves of the buns; replace tops. Place on baking sheets; cover with foil. , Bake at 350° for 20 minutes or until meat is no longer pink. If desired, place a cheese square and pickle on each hamburger; replace tops and foil and return to the oven for 5 minutes.

1/4 cup dry Italian-style bread crumbs
1 clove garlic, minced
1 egg
4-1/2 oz. sharp cheddar cheese, cut into 18 slices
18 grape tomatoes

Steps:

  • Heat grill to medium heat.
  • Mix first 4 ingredients just until blended; shape into 18 (1-inch) balls. Flatten slightly to form patties.
  • Spray large sheet of foil with cooking spray; place on grill grate. Add patties; grill 2 to 3 min. on each side or until done (160ºF).

1/2 lb ground beef
1 small onion, finely chopped
2 1/2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup ketchup
3/4 cup milk
1/2 cup butter or 1/2 cup margarine, melted
2 eggs
1 teaspoon prepared mustard
8 ounces shredded cheddar cheese

Steps:

  • Preheat oven to 425 degrees.
  • In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
  • In a mixing bowl, combine flour, sugar, baking powder and salt.
  • In another bowl combine ketchup, milk, butter, eggs and mustard.
  • Stir into the dry ingredients just until moistened.
  • Fold in the beef mixture and shredded cheese.
  • Fill greased miniature muffin cups three-fourths full.
  • Bake for 15-18 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  • Cool for 5 minutes before removing from pan to wire rack.
  • Refrigerate leftovers.
