Mamma mia, this salad's big Italian flavor is almost as huge as I am!

Number Of Ingredients 6

2 Mini Babybel® Mozzarella semisoft cheeses
8 grape tomatoes
8 fresh basil leaves, whole
Extra virgin olive oil
Balsamic vinegar salad dressing
2, 8-to-10-inch bamboo skewers

Steps:

  • Cut each Mini Babybel into four equal pieces, so you have eight pieces of cheese. Assemble the skewers by threading onto the skewer: one grape tomato, followed by 1 basil leaf, followed by a piece of cheese. Repeat process 3 times to complete the skewer, and repeat full process for additional skewer. Drizzle the prepared skewers with extra virgin olive oil and balsamic vinegar.

1 lemon, juiced
1 small clove garlic, grated or minced
1 cup basil leaves, about 20 leaves, plus a few for garnish
1/3 cup extra-virgin olive oil
1 pint heirloom cherry tomatoes, multi colored if available, halved
1 cup bocconcini (bite-sized fresh mozzarella balls), drained, halved
Salt and freshly ground black pepper

Steps:

  • Combine lemon juice, garlic, basil in food processor or blender, process and stream in extra-virgin olive oil to form a smooth dressing. Combine tomatoes, cheese and dressing in a bowl and season with salt and pepper, to taste. Garnish with a few torn basil leaves.
