2 pounds lean ground beef
6 ounces chili sauce
4 slices thick bacon (cooked and crumbled)
1 1/2 cups shredded sharp cheddar or cheddar blend cheese
1/2 cups panko breadcrumbs
2 large eggs (beaten)
1 tsp onion powder
1 tsp seasoned salt
1 tp granulated garlic
2 Tbsp Worcestershire sauce
1 tsp yellow mustard
1/2 cup prepared BBQ sauce

Steps:

  • Preheat oven to 425 degrees.
  • Cook and crumble bacon.
  • In a mixing bowl, mix together all meatloaf ingredients except the BBQ sauce.
  • Divide the mixture into 8 round loaves. Press a small depression into the middle of the meatloaves.
  • Brush BBQ sauce on top of the meatloaves.
  • Bake for 25 minutes. Turn on broiler and brown the BBQ sauce for 2 to 5 minutes.
  • Let rest 5 minutes before serving.

2 lb lean ground beef [90/10]
6 slices bacon (cooked and crumbled)
1 12 oz bottle chili sauce (i.e. Heinz) (divided)
1/4 cup buttermilk
2 Tbsp Worcestershire sauce
1 small sweet onion (minced)
1 1/2 cup shredded sharp cheddar cheese
1/2 cup panko breadcrumbs
2 large eggs (beaten)
1 Tbsp barbecue seasoning
1 tsp yellow mustard
1 tsp seasoned salt
1 tsp granulated garlic or 2 clove fresh garlic (minced)
Glaze:
Remaining chili sauce
1/4 cup brown sugar
1 Tbsp apple cider vinegar
2 tsp yellow mustard
1/2-1 tsp barbecue seasoning

Steps:

  • Preheat the oven to 425°F. Spray a large baking pan with cooking spray, set aside.
  • In a medium-size mixing bowl, mix together the beef, bacon, 1/2 bottle chili sauce, buttermilk, Worcestershire sauce, onion, cheese, breadcrumbs, eggs, BBQ seasoning, mustard, seasoned salt and garlic. Mix until the ingredients are fully combined.
  • Divide the mixture into 8 equal portions and form into oval loaves.
  • In a separate bowl, mix together the remaining chili sauce with brown sugar, vinegar, mustard and BBQ seasoning to make the glaze.
  • Spread 1/2 of the glaze onto the loaves before baking. (Reserved glaze to be used at the end of baking)
  • Bake for 23-25 minutes. Drizzle with the remaining glaze in the last 5 minutes of baking.
  • Rest for 5 minutes before serving.

1 package (6 ounces) stuffing mix
1 cup water
2 tablespoons hickory smoke-flavored barbecue sauce
1 pound ground beef
1 cup shredded cheddar cheese
Additional hickory smoke-flavored barbecue sauce, optional

Steps:

  • Preheat oven to 375°. In a large bowl, combine stuffing mix, water and 2 tablespoons barbecue sauce. Add beef; mix lightly but thoroughly. Press 1/3 cup mixture into each of 12 ungreased muffin cups., Bake, uncovered, 18-22 minutes or until a thermometer reads 160°. Sprinkle tops with cheese; bake 2-4 minutes longer or until cheese is melted. If desired, serve with additional barbecue sauce. , Freeze option: Securely wrap and freeze cooled meat loaf in foil. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Bake in a preheated 350° oven until heated through. Top with cheese as directed.
