1 package (15 ounces) refrigerated pie pastry
2 teaspoons all-purpose flour
1 egg, lightly beaten
1/2 pound sliced bacon, cooked and crumbled
1/2 cup ricotta cheese
1/2 cup shredded cheddar cheese
1/2 cup shredded part-skim mozzarella cheese
1 small onion, finely chopped
1/4 teaspoon garlic powder
1/8 teaspoon salt
Dash pepper
Dash cayenne pepper

Steps:

  • Sprinkle each pastry crust with 1 teaspoon flour; place floured side down on a lightly floured surface. Cut 12 circles from each crust, using a 2-1/2 in. round biscuit cutter. Press dough onto the bottom and up the sides of miniature muffin cups coated with cooking spray; set aside., In a small bowl, combine the remaining ingredients. Spoon about 1 tablespoon of mixture into each prepared crust. Bake at 400° for 14-18 minutes or until filling is set. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

1 14-ounce package refrigerated pie dough (2 sheets)
All-purpose flour, for dusting
4 slices bacon
4 large eggs
1/4 cup heavy cream
Kosher salt and freshly ground pepper
Chopped fresh chives, for topping

Steps:

  • Preheat the oven to 350˚. Roll out 1 sheet of pie dough on a lightly floured surface until very thin and about 14 inches in diameter. Cut out 12 rounds with a 2 3/4- to 3-inch cookie cutter. Repeat with the remaining sheet of pie dough. Press the rounds firmly into each cup of a 24-cup mini-muffin pan (preferably nonstick). Lightly prick the bottoms and sides with a fork.
  • Bake the crusts until lightly browned, 12 to 15 minutes. Let cool slightly.
  • Meanwhile, cook the bacon in a small skillet over medium heat, turning, until crisp, about 8 minutes. Transfer to paper towels to drain, then finely chop. Whisk the eggs, heavy cream and a pinch each of salt and pepper in a bowl until well combined.
  • Sprinkle the bacon in the bottom of each crust. Fill with the egg mixture and top with chives. Bake until just set, about 15 minutes (it's OK if some egg leaks through the pastry). Let cool 10 minutes, then remove from the pan.

6 slices bacon
5 eggs
1/2 cup heavy cream
1/4 teaspoon sweet paprika
1/4 teaspoon cayenne pepper
2 teaspoons Dijon mustard
Kosher salt and freshly ground black pepper
1 cup frozen peas
3 ounces shredded Gruyere cheese
One 14.5-ounce package refrigerated pie dough
Nonstick cooking spray

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the bacon to a medium skillet, turn the heat to medium high and cook until browned and crispy on both sides, about 7 minutes. Drain on paper towels, then dice. Set aside.
  • To a medium bowl, add the eggs, heavy cream, paprika, cayenne, Dijon and some salt and pepper; whisk to combine. Add the bacon, peas and Gruyere; fold to combine. Set aside.
  • Unroll the pie dough and cut out 7 rounds using a 3-inch round cookie cutter. (If necessary, roll out the scraps and cut out more rounds.) Spray a 12-cup muffin tin with nonstick spray. Press each dough round into a muffin tin cup, crimping the edges.
  • Divide the egg mixture between the 7 pie dough cups. Bake until just set, about 30 minutes. Let cool slightly before serving.

MINI SPINACH, BACON, CHEESE QUICHES

A delicious, crust-free mini quiche perfect to use when you have a little leftover bacon and fresh spinach. Choose good quality cheeses freshly grated (I used Beecher's Marco Polo in place of mozzarella and Parmesano-Reggiano) and these will be even better. Prep time is if you are using leftover bacon.

3 slices bacon, crisply cooked and crumbled
1 tablespoon bacon grease or 1 tablespoon olive oil
1/4 cup onion, diced
5 ounces fresh spinach, chopped
1/8 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon nutmeg
15 ounces ricotta cheese
8 ounces mozzarella cheese, shredded
1 cup parmesan cheese, grated
3 eggs

Steps:

  • In a skillet over medium heat cook the onions in bacon grease OR olive oil until tender.
  • Add spinach and seasonings and stir. Turn heat up to medium high to cook off spinach moisture. This will take only a couple of minutes; you want spinach just wilted and still bright green.
  • Remove from heat and stir in bacon. Allow to cool for at least 10 minutes.
  • Combine cheeses in a large bowl.
  • Add eggs and stir until well blended.
  • Add cooled spinach mixture. Stir to combine.
  • Divide mixture evenly among 10 lightly greased muffin cups. Fill other two empty cups 1/2 full of water (to allow for even cooking).
  • Bake at 350 for 40 minutes until filling is set.
  • Let stand for 10 minutes, then run a thin knife around edges to release.
  • Serve warm.

  • Combine the butter and cream cheese.
  • Cream until smoothy.

This is a simple and delicious way to use up extra eggs. The caramelized green onions go incredibly well with the smoked cheddar.The mini quiches are adorable and reheat well the next day. My boyfriend loves bacon (and I'm a vegetarian) so I made half the quiches with bacon and half without!

3/4 cup chopped green onion
4 slices bacon
8 eggs
1 cup 2% milk
1 1/4 cups shredded smoked cheddar cheese
1 tablespoon butter
salt
pepper

Steps:

  • Preheat oven to 325 degrees.
  • Cook bacon in one pan and saute green onions with butter, salt, and pepper in another pan. Once cooled, crumble bacon in a bowl. The green onions should be slightly caramelized and set aside to cool.
  • Combine caramelized green onions, cheese, and salt and pepper to taste. Put half of mixture in separate bowl and combine with bacon.
  • Whisk together eggs, milk, and a little bit of salt and pepper.
  • Divide egg mixture into cups of a greased 12 cup muffin pan.
  • Top half egg muffins with a spoonful of the vegetarian mixture and half with a spoonful of the bacon mixture.
  • Bake for 30 minutes and let cool for 2 minutes before eating.

These are some yummy little quiches that I cooked up one morning when I was craving something low-carb, and different, for breakfast. I used my recipe for Muffin Tin Bacon & Mushroom Quiches as a base, and changed it up a bit. They turned out great!

6 large eggs
1/3 cup(s) cream
1/8 teaspoon(s) black truffle salt or plain salt
1 pinch(es) ground white pepper
1/2 tablespoon(s) chives
1/4 cup(s) finely chopped broccoli florets (no stems)
1/8 - 1/4 cup(s) real hickory smoked bacon bits
3 ounce(s) baby swiss cheese, shredded or small chop (or monterey jack or cheddar)

Steps:

  • 1. Gather and prep ingredients.
  • 2. Preheat oven to 350 degrees F. Use cooking oil spray to lightly grease a twelve portion, nonstick muffin tin; set aside.
  • 3. In a medium bowl, or 4 cup measuring cup (recommended for ease of pouring,) beat eggs with fork or whisk; add cream, beating well; add salt, pepper, chives and chopped broccoli; mix well.
  • 4. Pour a scant amount of the egg mixture into each muffin round in prepared tin (approximately 1/4 inch deep), stirring mixture between pouring to assure even distribution of veggies in mixture.
  • 5. Evenly sprinkle bacon bits and cheese into each.
  • 6. Evenly fill each with remaining egg mixture.
  • 7. Bake at 350`F for 18-20 minutes. Serve hot or warm. Cover and refrigerate leftovers (I like to place leftovers in a zipper bag in the refrigerator, then reheat one or two in the microwave for 20-25 seconds.)
  • 8. *Note: Quiches will rise during baking, then deflate somewhat when cooling.

MINI BACON-BROCCOLI QUICHES

3 cups broccoli florets
4 ounce (6 strips) turkey bacon
9 eggs
3 egg whites
1/2 cup 2% milk
1/2 cup grated cheddar
1/2 teaspoon salt
1/4 teaspoon pepper

  • Heat oven to 375 degrees . Bring a large pot of lightly salted water to a boil. Add broccoli. Cook 3 minutes; drain. Roughly chop and cool slightly. Set aside. Meanwhile, heat a skillet over medium heat. Cook bacon until slightly crispy, 8 to 10 minutes. Dice and set aside to cool. Whisk eggs, egg whites and milk. Stir in cheese, salt, pepper, broccoli and bacon. Coat a 12-cup nonstick muffin tin with nonstick cooking spray. Ladle mixture among cups. Bake at 375 degrees for 20 to 25 minutes, until cooked through. Cool slightly. Remove quiches with a small offset spatula. Cool completely and refrigerate. To serve: Wrap in a paper towel and microwave for 30 to 45 seconds, until warm.

12 ounces graham crackers, crushed
1 tablespoon butter, melted
2 eggs, slightly beaten
1/2 cup milk
2 ounces gruyere cheese, shredded
1/4 cup red bell pepper, finely diced
1/4 cup yellow onion, finely diced
1/8 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon fresh thyme
1/2 teaspoon fresh tarragon
1/2 cup turkey bacon

Steps:

  • Crush the cookies in food processor or large Ziplock bag, then stir in melted butter.
  • Put 1 teaspoon cookie mixture into 18-22 mini tart or mini muffin cups. Tamp down with thumb or tart press to create a bottom crust.
  • Combine the rest of the ingredients except the turkey bacon.
  • Spoon about 1-2 Tablespoons of the mixture into each mini tart cup.
  • Sprinkle turkey bacon over the tops of each quiche.
  • Bake at 375° for 15-20 minutes or until knife inserted in center comes out clean.
  • ***To bake a full pie: Cover with foil and bake at 375° for 50-60 minutes or until knife inserted in center comes out clean.

This is the recipe I made originally, but to make them healthier I omit the cheese and use only 2 whole eggs and the remaining egg whites to significantly reduce the fat count. They're still very tasty! Try varying the flavours... chopped capsicum and sundried tomatoes are great for a dinner party, or try corn and grated carrot for kids.

Steps:

  • Preheat oven to 180C
  • Lightly oil 16 holes of muffin/cupcake baking tray - you can use a pastry brush or just wipe it around lightly with a piece of kitchen roll if you don't have one
  • Put a small amount of oil in a frying pan and cook the chopped bacon and onion until lightly browned
  • Cut out circles of the puff pastry - they need to be just big enough to come up to the top of the baking tray holes A cookie cutter is ideal but you can also use cupcake/muffin cases as a guide
  • Place the pastry circles in each of the muffin/cupcake tray holes to form cup shapes
  • Spoon the bacon and onion mixture into the pastry cups
  • Place a pinch of grated cheese on top of each of the pastry cups
  • Whisk the milk and eggs together in a jug
  • Pour the egg and milk mixture into each of the pastry cups
  • Bake for 12-15 minutes or until lightly browned on top
