Nonstick cooking spray
0.75 cup all-purpose flour
0.333 cup sugar
0.25 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon apple pie spice
0.5 teaspoon salt
0.125 teaspoon baking soda
0.25 cup butter
1 egg, lightly beaten
0.333 cup plain low-fat yogurt
0.667 cup shredded unpeeled apple
3 tablespoon sugar
0.5 teaspoon ground cinnamon

Steps:

  • Coat six indentations of a doughnut pan or nine 2 1/2-inch muffin cups with cooking spray; set aside. In a medium bowl stir together all-purpose flour, 1/3 cup sugar, whole wheat flour, baking powder, apple pie spice, salt, and baking soda. Using a pastry blender, cut in butter until mixture resembles fine crumbs.
  • In a small bowl combine egg and yogurt. Add egg mixture to flour mixture; stir just until combined (do not overmix). Gently fold in apple.
  • Spoon batter into a pastry bag fitted with a 1/2-inch round tip. Pipe batter into the prepared doughnut pan indentations or muffin cups. Lightly coat a sheet of plastic wrap with cooking spray. Place plastic wrap, coated side down, over doughnut batter. Chill for 2 to 24 hours.
  • Preheat oven to 350°F. Remove plastic wrap. Bake about 15 minutes or until doughnuts are light golden brown and spring back when lightly touched. Cool in pan on a wire rack for 5 minutes. Carefully invert pan to remove doughnuts.
  • In a small bowl combine 3 tablespoons sugar and cinnamon. As soon as doughnuts are cool enough to handle, dip into cinnamon-sugar to coat. Serve warm.

2 cups Bisquick™ Complete pancake & waffle mix
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/3 cup milk
1/3 cup applesauce
1 teaspoon vanilla
1/2 cup powdered sugar
1/4 teaspoon ground cinnamon
1 tablespoon milk
1/2 teaspoon vanilla
Candy sprinkles, if desired

Steps:

  • Heat oven to 425°F. Spray mini doughnut pan with cooking spray.
  • In medium bowl, mix all doughnut ingredients with spoon until blended. Spoon batter into pan, using about 1 tablespoon for each doughnut.
  • Bake 6 to 8 minutes or until toothpick inserted near center comes out clean. Remove doughnuts from pan to cooling rack; cool 5 minutes.
  • Meanwhile, in small bowl, mix powdered sugar, 1/4 teaspoon cinnamon, 1 tablespoon milk and 1/2 teaspoon vanilla with whisk until smooth.
  • Dip tops of doughnuts in glaze; top with sprinkles. Serve warm.

2 red apples, such as Cortland or McIntosh
2 1/2 cups apple cider
3 1/2 cups all-pourpose flour, plus more for dusting
4 teaspoons baking powder
1/4 teaspoon baking soda
3 1/2 teaspoons ground cinnamon
1 teaspoon salt
1/4 teaspoon freshly grated nutmeg
1 2/3 cups granulated sugar
3 tablespoons vegetable shortening
1 large egg plus 1 egg yolk
1/4 cup buttermilk
1 teaspoon vanilla extract
1/4 cup confectioners' sugar
Vegetable oil, for frying

Steps:

  • Core and coarsely chop the apples (do not peel). Combine with 1 1/2 cups cider in a medium saucepan over medium heat; cover and cook until softened, about 8 minutes. Uncover and continue cooking until the apples are tender and the cider is almost completely reduced, about 5 minutes. Puree with an immersion blender or in a food processor until smooth. Measure the sauce; you should have 1 cup. (Boil to reduce further, if necessary.) Let cool slightly.
  • Whisk the flour, baking powder, baking soda, 1 1/2 teaspoons cinnamon, salt and nutmeg in a medium bowl.
  • Beat 2/3 cup granulated sugar and the shortening in another bowl with a mixer on medium speed until sandy. Beat in the egg and yolk, then gradually mix in the applesauce, scraping the bowl. Beat in half of the flour mixture, then the buttermilk and vanilla, and then the remaining flour mixture. Mix to make a sticky dough; do not overmix.
  • Scrape the dough onto a lightly floured sheet of parchment paper and pat into a 7-by-11-inch rectangle, about 1/2 inch thick. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  • Meanwhile, make the glaze: Simmer the remaining 1 cup cider in a small saucepan over medium heat until reduced to 1/4 cup. Whisk in the confectioners' sugar until smooth and glossy, then set aside. Mix the remaining 1 cup granulated sugar and 2 teaspoons cinnamon in a shallow bowl; set aside for the topping.
  • Heat 2 inches of vegetable oil in a large heavy-bottomed pot over medium-high heat until a deep-fry thermometer registers 350 degrees. Line a baking sheet with paper towels. Cut the chilled dough into 12 rounds, using a floured 2 1/2- or 3-inch biscuit cutter, then cut out the middles with a 1-inch cutter (or use a doughnut cutter). Slip 2 or 3 doughnuts at a time into the hot oil and fry until golden brown, 1 to 2 minutes per side, adjusting the heat as needed. Transfer to the paper towels to drain.
  • Dip one side of each doughnut in the cider glaze, letting the excess drip off; dip just the glazed side in the cinnamon-sugar or roll all over in cinnamon-sugar, if desired. Serve warm.

1 1/4 cups vegetable oil
2 cups sugar
3 eggs

Steps:

  • Preheat oven to 300 degrees.
  • Generously grease and flour 12 mini bundt pan cups or large muffin cups.
  • Combine oil and sugar in a large bowl and beat with a wire whisk until well blended.
  • Add eggs one at a time, beating after each egg.
  • In another bowl sift together flour, cinnamon, cloves, nutmeg, baking soda and salt.
  • Add flour mixture to the egg mixture and blend well.
  • Then add in the chopped apples and vanilla and stir until blended in.
  • Pour batter into the well greased and floured pans. Bake for 40 minutes. They should be very golden brown and toothpick comes out clean.
  • Remove from oven and let cool in the pans for about 10 minutes before removing onto a wire rack to cool.
  • During the last 10 minutes of baking time make the glaze. Melt the butter in a saucepan and then stir in sugars.
  • Add vanilla and cream stirring well. Bring to a boil, reduce heat and simmer 4 minutes. Remove from heat. Pour glaze over warm cakes. Sprinkle with powdered sugar.

Steps:
