MINI APPLE CRISP
With my family's hectic schedule, I cook for one quite frequently. My mini apple crisp recipe is so simple to make. It works equally well as a nice single-serving dessert for me or as an afternoon snack when our oldest son gets home from school. -Sherry Krenz, Woodworth, North Dakota

Steps:
- Preheat oven to 350°. Place apple slices in a small greased baking dish. In a small bowl, combine flour, brown sugar and cinnamon; cut in butter until mixture resembles coarse crumbs. Stir in oats; sprinkle over apple slices. Bake until apple slices are tender, 35-40 minutes. Serve warm with cream, if desired.

MINI APPLE KNISHES
I wanted a new, and if possible, unique recipe this year for the Rosh Hashana holiday. Customary recipes include honey and apples. I found this one and give credit to Kosher Culinary.com and Brynie Greisman - Mishpacha Magazine. If you are one that loves to spend a little extra time just to make something fabulous and unexpectedly special this is for you. DON'T OVER COOK.

Steps:
- Put all filling ingredients in a 4 qt pot. Cook on low for about 20 minutes or until soft. (This is preferred over using fresh fruit so dough doesn't get soggy). Allow to cool. (This takes up to an hour! It can be done a day in advance).
- In a mixer, or by hand, mix together the dough ingredients. Divide in 4 (each weighs approx. 7 1/2 ounces in case you want to be exact!). Roll each into a 9x13 rectangle. Spread ¼ filling on each piece of dough, and roll up jelly roll style. Slice (you will get approximately 8 slices to a roll) and put "STANDING UP" (in exact position it was sliced) in a baking pan lined with parchment paper.
- Mix together syrup ingredients in a small bowl. Spoon over apple knishes and bake at 350F/180C for ½ hour or until golden.
- These freeze very well. This works perfectly with 70% whole wheat flour and cane sugar.
KNISH

- For pastry, in a large bowl, combine flour, baking powder and salt. Cut in butter until crumbly. Stir in sour cream, adding 3-4 tablespoons water to form a dough. Shape into a disk, mixture will be crumbly. Wrap and refrigerate at least 2 hours or overnight., Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-10 minutes., Meanwhile, in a large skillet, melt butter over medium-high heat. Add onions; cook and stir until tender, 8-10 minutes. , Drain potatoes; return to pan and stir over low heat 1 minute to dry. Mash potatoes; stir in onion mixture, salt and pepper. Set aside to cool. Stir in eggs., Preheat oven to 400°. On a lightly floured surface, roll dough into a 10x12 -in. rectangle. Cut into 16 squares. Spoon 1 tablespoon potato filling in the middle of each square. Brush the edges with water. Fold each corner toward the center, meeting in the middle. Arrange, seam side down, on ungreased baking sheets. Bake until lightly browned, 15-20 minutes.

MINI APPLE PIES (SO EASY, NOT MUCH HASSLE!)
These little tasty treats are always a hit. They taste just like an apple pie, except they are mini sized and easy to eat. They are great to take to a party because there is not cutting and serving needed. People always rave about these. I think their pretty tasty too! My hubby loves to eat them warm with vanilla ice cream on the side. Maybe a little caramel sauce drizzled over top! Mmmmm...

Steps:
- Preheat oven to 425 degrees. Get muffin pan out. No need to grease it.
- In food processor blend flour, salt and butter until it looks like little peas.
- Add in water and blend just until it looks like it's sticking.
- Take out and combine it by hand until well blended.
- Roll out on lightly floured surface until about 1/4 inch thick.
- Cut 12, 4 inch circles with cup or bowl.(You will need to roll out twice).
- Note: you can use the rest of the crust for anything you may want to do on top of the pies.
- Press each circle in muffin tins until all the way up each side, to form little bowls.
- Mix by hand all filling ingredients and spoon into muffin bowls.
- Cut up butter into 12 little pieces and place one piece on each pie.
- You can decorate them anyway you like with extra crust, or just leave plain.
- Bake at 425 degrees for 16-18 minutes. (Until crust is light brown and apples are bubbling).
- When cool, just loosen with a spoon and they'll come right out!
