PIZZETTE - MINI PIZZA BITES WITH ASSORTED TOPPINGS
Steps:
- Dissolve yeast in lukewarm water with sugar. Let sit for 5-10 minutes.
- In a mixer bowl add flour and yeast water, give a quick stir.
- Using a dough hook attachment start to knead slowly increasing the speed.
- Add salt and extra virgin olive oil.
- NOTE: Don't add salt immediately as it'll weaken yeast quality!
- Knead for about 5 minutes.You should get a smoth and pretty soft dough. It'll be slightly sticky but manageable to handle it with your hands.
- Transfer the dough in large oiled bowl. Cover with a plastic wrap and let rise for 2-3 hours in a warm (not hot!) place.
- Past 2-3 hours the dough should double in size.
- Transfer it to a slightly floured work surface.
- Roll with a rolling pin to about 3-5 mm thick.
- Using a round cookie cutter about 3 inches in diameter cut out pizzette circles.
- Place pizzette on a baking sheet lined with parchment paper leaving some space in between.
- Cover with a linen towel and let rise for 30-60 minutes in a warm place.
- While pizzette are rising it's a good idea to prepare the sauce and the toppings.
- In a skillet pan add tomato puree/passata di pomodoro, let simmer on low heat until slightly reduced. The thickness of the sauce should be good enough to stay on pizzetta, not too liquid-y but also not paste-like.
- Add fresh basil leaved roughly torn with your hands.
- Cook for another few minutes and let cool.
- Cut, slice and pit all other ingredients that you've chosen as your pizza toppings.Here you can mix, match and be creative!
- Preheat oven to 375F / 190C
- Using your point finger press around and in the center of each pizzetta (see photo) to form a slight cavity to hold in the topping.
- Top with your favorite toppings.
- Bake in a preheated oven for 10-12 minutes until cheese is well melted and pizzette have a light golden edge. Be careful and don't overcook as the dough might become hard.
MINI ANTIPASTO CALZONES

- Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F.
- On a lightly floured work surface, roll out the dough ball into a 14-inch circle, about 1/4-inch thick. Using a 4-inch round cutter, cut the dough into 12 circles. Transfer the circles onto two heavy baking sheets dusted with cornmeal.
- In a medium bowl, combine the fontina, provolone, salami, peppers and olives. In a separate small bowl, beat together the egg and 1 teaspoon water. Place 1 tablespoon of the cheese mixture onto 1 half of each dough circle, leaving a 1/4-inch border at the edge. With a pastry brush, lightly brush the edges of the dough with the beaten egg. Fold the unfilled half of the dough over the filling and, using the tines of a fork, press the edges together to seal. Repeat with the remaining circles of dough.
- Brush the calzones with the remaining egg mixture. Bake for 14 minutes, rotating the baking sheets halfway through, or until the calzones are golden brown. Serve the calzones on a platter with warm marinara sauce for dipping.

- Position a rack in the middle of the oven and preheat to 450 degrees F. Sprinkle a baking sheet with the semolina and set aside.
- Lightly flour a work surface and roll the dough into a round that is about 12 inches wide and 1/2 inch thick. Cut out 8 rounds with a 3 1/2- to 4-inch biscuit cutter or drinking glass. Dust with flour and cover with a clean kitchen towel or plastic wrap.
- Beat the egg with 1 tablespoon water in a small bowl. Set aside.
- Combine the cheese blend, ricotta, 1/4 cup Parmesan, scallions and garlic powder in a medium bowl. Season with salt and pepper to taste.
- Place 3 slices of the pepperoni on one half of each round of dough, leaving a 1/4-inch border around the edges. Top each round with 2 tablespoons of the cheese mixture.
- Brush the egg wash around the edges of one dough round using your finger or a pastry brush. Gently fold the dough over the filling to enclose and crimp the edges with a fork to seal. Repeat with the remaining dough rounds.
- Brush the tops of the calzones with the egg wash and sprinkle with the remaining 1/4 cup Parmesan.
- Place the calzones on the prepared baking sheet and bake on the middle rack until golden, 14 to 16 minutes, rotating the sheet halfway through for even baking.
- While the calzones bake, heat the tomato sauce in a medium saucepan over medium heat until bubbling, 1 to 2 minutes. Transfer to a small bowl. Place the calzones on a platter with the sauce and serve immediately.
HANDY-PASTO - ANTIPASTO PIZZA
This is a white pizza with garlic topped with all the makings of an antipasto platter - cut into squares and it makes a great starter or party snack. Many of the antipasto toppers can be purchased at the salad bar counter in bulk so you only have to buy what you need of each.

- 1. Preheat oven to 400 degrees. Brush large baking stone with 1 tsp of olive oil.
- 2. Using a sawing motion cut dough in half lengthwise. Then cut dough crosswise into 16 half moons for a total of 32 half moons.
- 3. Arrange dough over baking stone leaving 1/2-in border around the edge and spacing each piece 1/2-in apart. Brush the remaining oil on dough; bake 14-16 minutes until golden brown.
- 4. Meanwhile, for antipasti chop artichokes. Dice mozzarella cheese into 1/2-inch and dice bell pepper. slice olives. Combine cheese, red pepper, salt, black pepper, olives and pressed garlic and mix well.
- 5. Remove baking stone from oven and using grater great half of the Parmesan cheese over crust; top with antipasti. Bake 5-7 minutes or until mozzarella is melted. Remove from oven; grate remaining Parmesan cheese over top.
