HOLIDAY MINCEMEAT CAKE
I made this cake one year for Christmas when I was short of time and wasn't able to make a pie. It was a big hit. It is a very moist cake best served with just a dusting of icing sugar for garnish.

Steps:
- Stir the flour, baking powder, baking soda and salt together; set aside.
- Cream the butter, orange rind and vanilla in a large bowl with an electric mixer until light.
- Beat in the sugar.
- Add the eggs, one at a time, beating well after each addition.
- Blend in the mincemeat.
- Add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
- Stir in the nuts.
- Turn the batter into either a greased 12-cup Bundt or tube pan or a greased 9" x 13" cake pan.
- Preheat the oven to 350 degrees F.
- If using a Bundt pan, bake for 55 to 60 minutes or until done.
- If using a cake pan, bake for 45 to 50 minutes.
- In either case, cool in the pan for 10 minutes.
- Remove from the pan and cool completely.
- Dust with icing sugar before serving.
MINCEMEAT SPICE CAKE
Spice cake is baked halfway, then topped with a mincemeat and rolled oats mixture for a rich and delicious dessert.

- Heat oven to 350 degrees F. Line bottom of springform cake pan with wax paper and butter the sides.
- Place flour, baking powder, sugar and 1/2 cup butter in large bowl. Stir in milk, mincemeat, eggs and lemon peel. Mix on low speed of electric mixer 2 minutes or until thoroughly combined. Pour into prepared pan.
- Bake 30 minutes. While cake is baking, mix all topping ingredients in small bowl. Remove cake from oven and spoon on topping. Return cake to oven and bake an additional 30 minutes or until toothpick inserted in center comes out clean.

- Grease and line 2 1lb (450g) loaf tins.
- Simply mix all the ingredients except for the blanched almonds together until they are well incorporated.
- Spoon the mixture into your loaf tins. Stud with the blanched almonds/halved cherries.
- Bake for 1 hour if using 1lb loaf tins or 35-40 minutes for mini loaf tins or until the cakes are shrinking from the sides, risen and golden and a skewer inserted in the middle comes out clean.

PECAN MINCE PIE
Take this beautiful mincemeat, nut-topped tart along to a festive buffet or serve with an indulgent brandy cream as an alternative to the traditional Christmas pud

- To make the pastry, put all the ingredients in a food processor and pulse until it comes together, then tip onto a surface and knead into a ball. Wrap in cling film and chill in the fridge for 30 mins.
- Roll out the pastry on a lightly floured surface and use to line a 23cm tart tin, leaving any excess pastry overhanging. Chill for a further 30 mins.
- Heat oven to 190C/170C fan/gas 5 with a baking sheet on the middle shelf. Prick the pastry base with a fork and line the tin with baking parchment and baking beans or some dry rice. Place on the baking sheet and bake for 20 mins until golden around the edges. Remove the parchment and beans, and return to the oven for 10 mins more until the base is biscuit-brown.
- While the pie case is baking, make the filling. Finely chop half the pecans by hand or by pulsing in a food processor, then tip into a bowl. Mix in the eggs, golden syrup and melted butter until completely combined, then stir in the mincemeat.
- When the pie case is cooked, spoon over the mincemeat pecan filling and top with the reserved whole pecans. Bake for 20-25 mins until the top is just set, then remove from the oven to cool slightly.
- To make the brandy cream, whisk together the cream and the icing sugar until holding soft peaks, then gently whisk in the brandy, vanilla and cinnamon. Serve the pie warm in slices with a dollop of the cream.

This was so easy to make, and the raves never stopped! Could not beleive that this was possible, since I usually make tarts and pies with mincemeat. Definetly something different in cakes!

- Mix 3 eggs in a bowl along with all the extracts (do not need to beat, just mix).
- Empty cake mix into large bowl.
- Add egg mixture and mincemeat.
- Add alcohol if desired.
- Mix thoroughly using mixer or by hand.
- Pour into 9x13 cake pan.
- Bake at 350 for 45 minutes or until toothpick comes out fairly clean (do not over bake- mincemeat keeps cake moist so use discretion).
- Let cool for 30 minutes and remove from pan.
- Frost and serve.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
- Mix butter, milk, coconut milk, and vanilla extract together in a large bowl. Combine flour, sugar, cornstarch, baking powder, and salt in a separate bowl. Slowly mix into the milk mixture. Add egg yolks one at a time, beating well after each addition.

MINCEMEAT CAKE
I make my own mincemeat using green tomatoes and raisins. There is no suet in my mincemeat.

- 1. Cream together butter, sugar, and orange zest. Add each egg one at a time.
- 2. Mix spices, soda and salt with the flour and add to the butter mixture alternately with the mincemeat. If needed, add enough water to make a smooth cake batter. Pour into a greased 9 x 13 pan and bake at 350 degrees 35-45 minutes until done. Cool and drizzle with a little glaze; top with chopped walnuts.
- 3. Glaze: Combine a little Powdered Sugar, Vanilla and Milk, mix until smooth. Drizzle over warm cake and top with chopped walnuts.
