This recipe came from my mother-in-law. It was the best way to get her kids to eat their vegetables. Now my sister-in-law and I take turns making this for every holiday meal.

1 medium onion, chopped
1 clove garlic, chopped
1 tablespoon butter or 1 tablespoon margarine
1 (10 1/2 ounce) can condensed golden mushroom soup
1 (6 ounce) jar Cheez Whiz
2 (16 ounce) packages frozen vegetables (I like broccoli or broccoli cauliflower carrot mix)

Steps:

  • Sauté onion and garlic in butter.
  • Add soup and cheez whiz.
  • Cook until cheez whiz melts.
  • Pour vegetables into a 9x13 oven dish or baking pan.
  • Pour Cheez/soup mixture over top of vegetables.
  • Cook at 350F for about 20 minutes or until heated thoroughly.

3 small red potatoes, quartered
2 medium carrots, cut into 1/2-inch slices
1 small onion, cut into wedges
3 teaspoons olive oil, divided
1/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 large zucchini, cut into 1/2-inch pieces
1 large sweet red pepper, cut into 1-inch pieces
6 large fresh mushrooms, quartered
2 garlic cloves, minced
1/2 cup shredded cheddar cheese
1/2 cup shredded part-skim mozzarella cheese
1 tablespoon grated Parmesan cheese
1 teaspoon minced fresh basil
1 teaspoon minced fresh oregano

Steps:

  • Place the potatoes, carrots and onion in a large resealable plastic bag. Add 1-1/2 teaspoons oil, 1/8 teaspoon salt and 1/8 teaspoon pepper; turn to coat. , Place potato mixture in a single layer in a greased 15x10x1-in. baking pan (set bag aside). Bake at 425° for 20 minutes., Add the zucchini, red pepper, mushrooms and garlic to the reserved bag. Add the remaining oil, salt and pepper; turn to coat. Stir into potato mixture. , Bake 25-30 minutes longer or until vegetables are tender. Transfer to a large serving bowl. Sprinkle with cheeses and herbs.

3 cups fresh broccoli florets
3 cups fresh cauliflowerets
2 cups julienned carrots
1 small onion, diced
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/8 teaspoon salt
1/8 teaspoon pepper
8 ounces elbow macaroni, cooked and drained
2 cups shredded part-skim mozzarella cheese
2 cups shredded cheddar cheese
8 ounces process cheese (Velveeta), sliced
3/4 cup half-and-half cream
3/4 cup seasoned bread crumbs
1/4 cup butter
1/2 cup grated Parmesan cheese

Steps:

  • Place broccoli and cauliflower in a steamer basket. Place in a saucepan over 1 in. of water; bring to a boil. Cover and steam for 5-8 minutes or until crisp-tender. Rinse in cold water; drain and set aside. Repeat with carrots and onion, steaming for 4-5 minutes or until tender. , Place vegetables in a large bowl; add the garlic powder, Italian seasoning, salt and pepper. Stir in macaroni. Spoon half into a greased 3-qt. baking dish. Sprinkle with half of the mozzarella, cheddar and process cheese. Repeat layers. , Pour cream over the top. Sprinkle with bread crumbs; dot with butter. Top with Parmesan cheese. Bake, uncovered, at 350° for 30-40 minutes or until bubbly.

Something I threw together as a side-dish: I love cheesy veggies but didn't want that stodgy white-cheese-sauce kind of feeling weighing me down. This was pronounced delicious by the whole family!

1 brown onion, diced
2 carrots, cut julienne style
1 ear of corn, kernels sliced off cob
1/2 cup water
2 teaspoons plain flour
2 teaspoons onion salt
1/2 cup cheddar cheese, grated

Steps:

  • Place the brown onion, carrots and corn kernels in a saucepan with the water. Bring to a boil, and then reduce to a simmer for 2-3 minutes until the vegetables begin to soften.
  • Add the flour and onion salt, and simmer, stirring, for 3-5 minutes until the liquid begins to thicken.
  • Add the cheese, and stir until it has melted through.
  • Remove from heat and sit for 1 minute to thicken the sauce.
