1 (6 1/2 ounce) can tuna
1 cup diced celery
1 cup shredded carrot
1/4 cup minced onion
3/4-1 cup Miracle Whip
2 cups shoestring potatoes

Steps:

  • Combine drained tuna,celery,carrots, onion, and salad dressing.
  • Mix and cover.
  • Chill for at least one hour.
  • Just before serving fold in shoe string potatoes.

1 (6 1/2-ounce) can tuna, drained
1 cup shredded carrot
1 cup sliced celery
1/4 cup minced onion
3/4 - 1 cup mayonnaise
1 (14-ounce) can shoestring potato
fresh parsley and carrot curls for garnish (optional)

Steps:

  • In a large bowl, separate tuna into chunks. Add carrots, celery, onion, and mayonnaise. toss until tuna is well coated. Cover and chill. Just before serving, fold in shoestring potatoes. To add a bright touch, garnish with parsley and carrot curls, if desired. Editor's Extra: Carrot curls are easy to make by running a vegetable peeler down the length of a peeled carrot.

2 (12-oz.) cans chunk light tuna in spring water, drained
2 cups julienne-cut (2x1/8x1/8-inch) jicama
1 cup sliced celery
1 cup coarsely shredded carrots
1/2 cup chopped red onion
1 1/4 cups purchased ranch salad dressing
2 (1 3/4-oz.) cans shoestring potatoes

Steps:

  • In large bowl, combine all ingredients except salad dressing and shoestring potatoes; mix well. Add dressing; mix well. Serve immediately, or cover and refrigerate up to 4 hours.
  • Just before serving, fold in shoestring potatoes.

My family has enjoyed this tuna salad for years. The salty crunch of the shoestring potatoes is a great complement to the creamy sweetness of the tuna and carrots. Add shoestring potatoes only at the very last moment as they become soggy after sitting. Make only as much as you will eat because these are not good as leftovers!

1 (7 ounce) can solid white tuna, drained
1 cup shredded carrot
1 cup diced celery
1/4 cup minced onion
1 cup Miracle Whip (Mayonnaise is OK but flavor is better with Miracle Whip)
1 (4 ounce) can shoestring potatoes
salt and pepper

Steps:

  • Mix all ingredients except shoe string potatoes together and refrigerate overnight.
  • Stir in shoestring potatoes just before serving.
  • Serve in lettuce lined bowl.
  • Note: cooking time is overnight refrigerating time.
