MILLY'S OATMEAL BROWNIES

I wasn't a believer. I looked at this recipe and assumed it would be like an oatmeal cookie baked in a pan - but these are truly oatmeal brownies! So great! The best part is, you can throw in whatever extras you wish. In our case, pecans and chocolate chips won over everything else in the pantry - enjoy!

1 c. butter, room temperature
1 c. packed brown sugar AND 1/2 c. white sugar
2 eggs AND 2 t. vanilla
1/2 t. salt
1 t. EACH baking soda AND baking powder
1 1/2 c. flour AND 2 c. oatmeal
1 c. EACH chopped pecans AND chocolate chips (or any other additions that you're in the mood for)

Steps:

  • Preheat the oven to 350 and butter a 9 x 13 cake pan. Using your electric mixer, beat together the butter and both sugars until well blended and fluffy, then beat in the eggs, one at a time, scraping down the sides of the bowl as needed. Add the vanilla and blend well, then add in the salt, baking soda, baking powder, flour and oatmeal and stir on low until all of the ingredients are moistened. Stir in the pecans and chocolate chips and then press the whole mix evenly into your prepared pan.
  • Bake for 25 to 30 minutes until the middle of the brownies is set (wiggle the pan) and the edges are nice and brown. Leave the brownies to cool in the pan for a good half hour before you slice into them...this will allow for perfect brownie squares. Have one warm!

2 1/2 cups quick-cooking or regular oats
3/4 cup Gold Medal™ all-purpose flour
3/4 cup packed brown sugar
1/2 teaspoon baking soda
3/4 cup butter or margarine, melted
4 oz unsweetened baking chocolate
2/3 cup butter or margarine
2 cups granulated sugar
1 teaspoon vanilla
4 eggs
1 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
  • In large bowl, mix oats, 3/4 cup flour, the brown sugar and baking soda. Stir in melted 3/4 cup butter. Reserve 3/4 cup oat mixture for topping. Press remaining oat mixture in pan. Bake 10 minutes. Cool 5 minutes.
  • Meanwhile, in 3-quart saucepan, heat chocolate and 2/3 cup butter over low heat, stirring occasionally, until melted; remove from heat. Stir in granulated sugar, vanilla and eggs. Stir in 1 1/4 cups flour, the baking powder and salt.
  • Spread batter over baked base. Sprinkle with reserved oat mixture. Bake about 30 minutes or until center is set and oat mixture turnes golden brown (do not overbake). Cool completely, about 2 hours. Cut into 8 rows by 6 rows.

1 cup M&M's minis
1/2 cup all-purpose flour
1/2 cup packed brown sugar

1 package fudge brownie mix (13-inch x 9-inch pan size)

Steps:

  • In a large bowl, combine the oats, M&M's, flour, sugar, walnuts, baking soda and butter. Set aside 1 cup for topping. Pat the remaining mixture into a greased 15x10x1-in. baking pan. , Prepare brownie batter according to package directions. Spread over the crust. Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.

1/2 cup Gold Medal™ all-purpose flour
1/2 cup packed brown sugar
1/4 teaspoon baking soda
1/2 cup butter, softened
1 box (16 oz) Betty Crocker™ Supreme original brownie mix
Water, vegetable oil and egg called for on brownie mix box
1/2 cup chopped nuts

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom 9-inch square pan with shortening or cooking spray.
  • In medium bowl, mix oats, flour, brown sugar and baking soda. Add butter, mix with fork or with fingers until mixture is crumbly. Reserve 1 cup of the oat mixture. Press remaining oat mixture in pan. Bake 10 minutes. Cool 5 minutes.
  • Make brownie batter as directed on box. Stir in nuts. Carefully spread over baked layer. Sprinkle with reserved oat mixture; press lightly to adhere.

I love using oatmeal instead of white flour. It is a whole grain and adds moist chewiness to baked goods as well as being good for you. These easy brownies are super-easy to make.

1/2 cup cocoa
1 cup sugar
1 egg
1 teaspoon vanilla
1/2 cup quick oatmeal
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 and butter an 8 x 8 pan.
  • Melt butter in a glass bowl in the microwave.
  • Meanwhile, process oatmeal in a food processor or clean coffee grinder for a few moments till it is more flour-like.
  • Add the cocoa to the melted butter and mix well.
  • Stir in the sugar.
  • Stir in the egg.
  • Stir in the oat flour and vanilla.
  • The batter will be rather stiff. Spread it evenly in the buttered pan.
  • Bake for 25 minutes.
