This is the first and the best ganache I've made yet. I don't think I will ever stray from this recipe.

Steps:
- Chop chocolate bar into small pieces; place in a glass or stainless steel bowl.
- Combine cream and sugar in a small saucepan and bring over medium heat. Just as mixture starts to boil, pour it over chocolate and whisk until combined and chocolate has melted. Stir in butter. Set aside to cool and thicken, at least 15 minutes.

- Before using ganache, transfer it to the bowl of an electric mixer and whip on medium-low speed, just until it holds soft peaks. Do not overwhip.

FOUR-LAYER CHOCOLATE BIRTHDAY CAKE WITH MILK CHOCOLATE GANACHE AND NUTELLA BUTTERCREAM

- Preheat oven to 350˚. Butter two 9"-diameter cake pans and line bottoms with parchment paper rounds. Butter parchment and dust with flour, tapping out excess.
- Heat chocolate, coffee, and ⅔ cup cocoa powder in a medium heatproof bowl set over a medium saucepan of barely simmering water (water should not touch bottom of bowl), stirring until chocolate melts and mixture is smooth. Let cool, then whisk eggs, buttermilk, and vanilla into chocolate mixture.
- Using an electric mixer on low speed, mix salt, baking powder, baking soda, and 2 cups flour in a large bowl just to combine. Add brown sugar, oil, ½ cup butter, and ½ cup reserved chocolate mixture and beat on medium speed until flour is evenly distributed and mixture is smooth, about 2 minutes. Add remaining chocolate mixture in 2 additions, scraping down sides and bottom of bowl as needed and beating until smooth after each addition. Scrape batter into prepared pan and smooth top.
- Bake cake until top is firm to the touch and a tester inserted into the center comes out clean, 30-40 minutes. Transfer cake pan to a wire rack and let cake cool in pan 10 minutes before turning out onto a wire rack. Let cool completely.
- Using a serrated knife and moving it back and forth in long, even strokes, carefully halve cakes lengthwise.
- Place 1 cake layer, cut side up, on a platter. Using a rubber spatula, spread one-third of ganache over cake, spreading to edges. Place another cake layer, cut side down, on top and spread another third of ganache over cake. Repeat process once more with another cake layer and remaining ganache; top with remaining cake layer (leave top bare). Chill cake 1-8 hour.
- Spread buttercream all over top and sides of chilled cake, making decorative swirls and swooshes. Decorate with sprinkles, if desired.

- For ganache:
- Boil 1 1/4 cups Port in heavy medium saucepan until reduced to 1/4 cup, about 9 minutes.
- Meanwhile, simmer cream and butter in small saucepan. Remove from heat. Add chocolate; whisk until smooth. Stir 2 tablespoons Port reduction into chocolate mixture. Add 1/2 cup Port and 1 tablespoon sugar to Port reduction. Boil until syrup coats spoon thickly, 6 to 7 minutes.
- For mousse:
- Whisk yolks, 2 tablespoons water, 2 tablespoons cream, and sugar in heavy medium saucepan. Stir over medium-low heat until custard thickens enough to coat spoon, about 5 minutes (do not boil). Remove from heat. Add chocolate; stir until smooth. Transfer chocolate mixture to medium bowl. Using electric mixer, beat egg whites in another medium bowl until soft peaks form. Fold whites into chocolate mixture in 2 additions. Beat 8 tablespoons cream in another medium bowl until peaks form. Fold cream into chocolate mixture. Cover; chill at least 6 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled.
- For whipped crème fraîche:
- Using electric mixer, beat cream in medium bowl until soft peaks form. Fold in crème fraîche.
- Rewarm ganache in microwave in 10-second intervals until warm. Rewarm Port syrup, thinning with Port by 1/2 teaspoonfuls if too thick.
- Bring small saucepan of water almost to boil. Spoon 2 tablespoons warm ganache onto center of each of 8 plates. Dip large tablespoon into hot water; shake off excess. Starting at 1 edge of mousse, pull tablespoon in horizontal position across surface of mousse, forming oval-shaped scoop. Place mousse in center of ganache. Repeat procedure for each serving, dipping spoon into hot water and shaking off excess between scoops. Using slightly smaller spoon, repeat procedure to scoop whipped crème fraîche. Place 1 scoop of whipped crème fraîche alongside mousse on each plate. Drizzle warm Port syrup around ganache on each plate.

- Make the cupcakes: Preheat the oven to 350°F (175°C). Line 12 cupcake wells with paper liners.
- Sift together the flour, baking soda, baking powder, and salt. Stir in the espresso powder.
- Using an electric mixer on medium speed, beat the butter with the granulated sugar until light, 1 minute with a stand mixer or 2 minutes with a handheld mixer. Add the eggs, one at a time, beating well after each addition. Continue to beat the mixture for 1 minute with a stand mixer or 2 minutes with a handheld mixer.
- On low speed, alternately add the dry ingredients and the milk in 2 additions, stirring until incorporated after each addition.
- Pour the batter into the paper-lined cupcake wells. Bake until a skewer inserted in the middle comes out clean, about 20 minutes. Let cool to room temperature, then remove from the pans.
- Make the ganache: Place the cream in a small, heavy-bottomed saucepan and warm over medium-high heat until it begins to bubble around the edges, about 5 minutes. Remove the pan from the stove, add the chocolate, and whisk until smooth. Transfer to a bowl and place plastic wrap directly over the ganache. Refrigerate until cold.
- Make the frosting: Melt the white chocolate in a double boiler. Stir until smooth. Let cool to room temperature.
- Sift the confectioners' sugar into a medium bowl. Stir in the milk and vanilla. Add the butter and salt and beat until smooth. Stir in the cooled white chocolate. Refrigerate until firm enough to frost the cupcakes, about 30 minutes.
- Cut out about one quarter of the inside of each cupcake with a small paring knife. With a pastry bag, fill the indent with the milk chocolate ganache.
- Frost each cupcake with the white chocolate frosting.
- Note: The cupcakes can be made a day in advance; wrap in plastic wrap and store at room temperature.

- Prepare cake according to package directions.Pour into a decorative Bundt pan, and bake according to package directions.
- Remove cake from oven, cool in pan 10 minutes, remove cake frompan and cool on wire rack completely.Place cake on serving plate.
- Pour heavy whipping cream into heavy sauce pan. Cook, over medium heat, stir occasionally, so not to scorch. Cook just until cream begins to boil.Remove from heat.

- FOR CAKE: Preheat oven to 350. Butter and flour 2 9-inch diameter cake pans with 2 inch high sides. Place cocoa in small bowl. Add 1 cup boiling water; whisk until smooth. Cool. Combine milk & lemon juice in another small bowl. Let stand until milk forms some thick curds, about 10 minutes. Sift flour, baking powder, baking soda & salt into medium bowl. Using mixer, beat butter until smooth. Add sugars and beat until blended. Beat in eggs one at a time. Beat in cocoa mixture and vanilla. Beat in flour mixture in 3 additions, alternately with milk mixture in 2 additions. Divide batter evenly between pans. Bake until tester inserted in center comes out clean, about 35 minutes. Cool cakes in pans on racks. Cut around cakes to loosen & turn out of pans. For frosting: Bring cream and corn syrup to simmer in heavy large saucepan over medium-high heat. Remove from heat. Add chocolate and salt; stir until meltec and smooth. Refrigerate until cold, about 25 minutes. Using mixer, beat frosting until just lighter in color, about 1 minute. ****This thickens very quickly, so don't overbeat. Assembly: Place 1 cake layer flat side up, on plate. TRUFFLES: MILK CHOCOLATE GANACHE
Steps:
- Bring the cream to a simmer in a small saucepan. Add butter and stir until melted. Add chocolate to saucepan. Stir until completely melted and smooth. Remove from heat and pour the chocolate mixture into a shallow bowl. Cool, cover and refrigerate until firm, at least two hours. Roll mixture into 1″ balls. Roll each ball in coating.
MILK CHOCOLATE GANACHE CAKE

- Preheat the oven to 350°F. Grease two 9-inch cake pan, line with parchement paper and grease paper for easy removal from pan. In a large bowl, combine the almond flour, cocoa powder, salt, and baking soda. In a medium bowl, combine almond milk, eggs, natural sweeteners and vanilla extract. Stir the wet ingredients into the almond flour mixture until thoroughly combined. Scoop the batter into the prepared cake pan. Bake for 35 to 40 minutes, until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for 1 hour. To make the Filling: place the butter in a saucepan and heat on high until the butter sizzles and you can see lots of brown (not black) flecks. Remove from heat and add the mascarpone or cream cheese, almond milk and natural sweetener. Stir until very smooth. Set aside to cool. This will thicken overnight. To make the Ganache: In a double boiler, place the chocolate, cream and natural sweeteners. Stirring constantly over low heat or the chocolate will separate. Once the chocolate is totally melted, remove from heat and transfer to a cool glass bowl (or the chocolate might separate). Set aside. To ASSEMBLE: Carefully slice each cake evenly into 2, so you have more layers. Place one layer of the cake on a beautiful plate. Top the cake with filling. Place another layer of the cake on top of the filling and repeat until you have a clean piece of cake on the top. Spread the ganache over the cake. Cool in the fridge for a few hours or overnight.
JIVARA MILK CHOCOLATE GANACHE TRUFFLE

- Place chocolate in large mixing bowl. In a medium pan, bring cream, corn syrup and coffee beans to a boil. Remove from heat and let sit for 5 minutes. Strain coffee beans. Gradually pour cream mixture over chocolate; mix well with spatula and finish with electric mixer. Let crystallize in refrigerator overnight. Using small scoop, make small balls and finish rolling by hand. In a small bowl, add cocoa powder. Roll truffles in cocoa power and set aside. Chill until ready to serve.
MILK CHOCOLATE AND PASSION FRUIT GANACHE

- Chop the milk chocolate into small pieces. Boil the passion fruit and heavy cream together and pour over chocolate. Stir until incorporated and the ganache forms. Wait a couple of minutes for the ganache to cool a bit and add the softened butter. Stir to create and emulsion. Let it harden a bit until it is pipeable and fill the macarons
ROASTED PEANUT MILK CHOCOLATE GANACHE AND JELLY CONFECTION
Steps:
- For the jelly confection: In a 1-quart saucepan, heat the strawberry jam and liquid pectin together until smooth and lump free. Place the strawberry and pectin mixture into twelve 2-ounce candy molds and cool.
- For the ganache: In a coffee grinder, combine the peanuts and agave syrup and process into a slightly coarse texture. Place the peanut mixture into a small microwaveable dish. Add the milk chocolate and heavy cream and microwave until smooth, about 30 seconds. Pour the mixture on top of the strawberry jelly in the candy mold. Refrigerate for 1 hour. Remove from the candy molds and serve.
- For the curds and whey: Mix the heavy cream and sugar together. Scoop the mixture into a ceramic spoon. Garnish with fresh cheese curds. Drizzle with vanilla syrup. Serve alongside the candy molds.

- Pour 1 cup ganache into a bowl set in the ice bath; stir until thick and spreadable. Keep the remaining ganache at room temperature, stirring every 15 minutes, until thick enough to coat the back of a spoon, 12 to 15 minutes. Use immediately.
