GERMAN MEATLOAF

Number Of Ingredients 13

4 pounds ground beef 80/20
3 slices white bread
8 slices bread and butter pickles
2 medium sized onions
2 tbsp. pickle juice
2 eggs
1 tbsp. parsley or one bunch fresh parsley
1 tbsp. salt
1 tsp. pepper
1 tsp. paprika powder
1 tsp. sugar
1 tbsp. yellow mustard
1 tbsp. butter

Steps:

  • Cut bread into cubes and soak in a cup of water.
  • Finely cube the onions and the pickles.
  • If you use fresh parsley, chop the parsley finely.
  • Add the ground meat to a large bowl.
  • Add the onion and pickle cubes, spices, eggs, parley, and mustard.
  • Squeeze the water out off the bread and add it to the bowl.
  • Mix everything well and add the meat to a casserole dish.
  • Form to a loaf and bake at 350 F in a preheated oven for 45 min.
  • Melt butter and brush the meatloaf every 15 min.

I clipped the original recipe from the newspaper many years ago. It is another from Marcia Adams. I've changed it a bit since then, but not much...it is hard to improve on anything by Marcia Adams.

1 1/2 lbs lean ground beef
1/2 lb ground pork
16 ounces sauerkraut, rinsed and drained
2 cups rye breadcrumbs (soft, not dry)
2 eggs, beaten
1/2 cup onion, minced
1/2 cup milk
2 teaspoons grainy mustard
1 teaspoon caraway seed
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl combine all of the ingredients. (Go on - use your hands -- you can't make meatloaf any other way!).
  • Form meat mixture into a loaf and place into a casserole dish.
  • Bake for 50-60 minutes.
  • Nice with scalloped potatoes and steamed green beans.

My husband loves kraut and meat loaf, so we tweeked a couple ingredients from one we found in the newspaper and came up with one we really like.

1 (10 ounce) can sauerkraut, drained
2 cups soft cubed rye bread
3/4 cup chopped onion
1/2 cup milk
1 teaspoon caraway seed
1/2 teaspoon pepper
2 lbs ground beef (you can use half beef and 1/4 veal and 1/4 pork if you prefer)

Steps:

  • Mix all ingredients together and place in abaking 8" x 10" baking dish.
  • Bake at 350 degrees for 1 1/2 hours.
  • Serve with baked potato or homemade noodles.

1 lb ground beef (or 1/2 lb Beef, 1/2 lb Pork)
1/2 cup fine dry breadcrumb
1 tablespoon butter
2 medium onions
1 tablespoon minced fresh parsley
2 large eggs
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon rosemary
1/2 teaspoon nutmeg
3 tablespoons flour
2 slices bacon
4 tablespoons butter
1 large carrot
1 cup beef broth
2 tablespoons sour cream
1 tablespoon flour (for thickening) or 1 tablespoon cornstarch (for thickening)

Steps:

  • Preheat oven to 375°F.
  • Grease or spray baking dish that will hold your loaf with room around the edges for veggies.
  • In large bowl, gently mix Ground Meat and Breadcrumbs until combined.
  • Peel and dice on 1 Onion , heat 1 Tbsp of Butter in hot skillet, add diced Onion and Parsley , sauté until Onion is golden brown.
  • Beat Eggs in large shallow container; add Salt, Pepper, Rosemary and Nutmeg to Egg and mix. Pour Onion/Parsley mixture and Egg mixture over Ground Meat, knead together until uniformly mixed.
  • Mold meat mixture into loaf; roll in Flour until coated on all sides.
  • Lay Bacon slices in the middle of small casserole dish, set floured Loaf on top of Bacon.
  • Peel and slice Carrot and second Onion, pour Broth into casserole dish; scatter sliced Carrot and Onion around Meatloaf.
  • Heat 4 Tbsp Butter in warm skillet.
  • Pour hot Butter over meatloaf and place dish in preheated oven.
  • Bake 1 hour (or until cooked through (at least 160 degrees - no pink should be left), basting often With 5-10 minutes cook time remaining, spread Sour Cream over Meatloaf.
  • Remove dish from oven, move meatloaf to serving dish.
  • Stir Flour or Cornstarch into the juice remaining in pan to make sauce, return to oven to thicken or transfer mixture to a pot which can go on your stove top.
  • Slice and serve while hot.

1/2 red bell pepper, chopped
2 cloves garlic, minced
1 cup fresh bread crumbs
2 eggs, lightly beaten

Pepper
2 teaspoon chili powder, optional
3/4 cup ketchup or tomato sauce
2 tablespoon mustard
1/4 cup chopped fresh parsley
4 slices bacon

Steps:

  • Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix well. Gently mound the meat mixture into a metal 9x5 loaf pan. Top loaf with 4 strips of bacon. Bake for 1 hour and 10 to 20 minutes. Remove from oven and let sit for 15 minutes before slicing.
