Time 1h30m

Number Of Ingredients 23

2 tbs olive oil
1 cup medium grain rice
1 cup brown lentils
2 cups small macaroni noodles ((uncooked))
2 cups vegetable stock
1 garlic clove (, quartered)
1 tsp cumin
1 bay leaf
1/2 teaspoon salt
Salt to taste
For the Sauce:
2 tbsp olive oil
1 small onion (diced finely)
2 cloves garlic (finely minced)
1 15 oz can plain tomato sauce (cooked/pureed tomatoes)
2 tsp baharat spice blend
1/4 teaspoon red chile flakes ((omit if you don't like it spicy hot))
1 tbs red wine vinegar
Salt & pepper to taste
Crispy Onion Garnish:
2 large onions (, very finely sliced)
Oil for deep-frying
1 15 ounce can garbanzo beans (, rinsed and drained)

Steps:

  • Heat 2 tablespoons of olive oil in a medium saucepan over medium-high heat. Add the rice and fry it for 2 minutes, then add the vegetable stock. Bring it to a boil, decrease the heat to low, cover and simmer for 15 minutes or until the rice is cooked.
  • Rinse the lentils under cold water and add them to another medium saucepan with 2 cups of water. Add the garlic, cumin and bay leaf and bring it to a boil. Reduce the heat to low, cover and simmer for 20-30 minutes or until the lentils are tender. Once cooked, add the salt and stir to combine. Strain any excess liquid if necessary.Cook the macaroni according to package instructions until al dente.Note: Prepare the rice, macaroni and lentils while the sauce is simmering and leave them covered in the pots to keep warm.
  • To make sauce: Heat the oil in a medium saucepan over medium-high heat and add the onion. Cook until soft and translucent, about 5-7 minutes. Add the garlic and saute until golden brown. Add the tomato sauce, baharat, salt and pepper to taste, chile flakes (if using) and red wine vinegar. Bring it to a simmer, reduce the heat to low, cover and simmer for 20 minutes, stirring occasionally.
  • To make the crispy onions, heat the oil in a skillet. Add the onions and fry until dark brown. Using a slotted spoon, remove them from the oil and place them on paper towels to drain and cool.
  • Add the rice, lentils and macaroni to a large bowl and toss to combine (or simply scoop out desired amounts of each onto the plates). Sprinkle a little baharat over each portion and serve topped with some of the spicy tomato sauce. Top with garbanzo beans, the crispy onions and another sprinkle of baharat. Serve warm.

MIDDLE EASTERN GARBANZO SOUP

Middle Eastern Garbanzo Soup image

A hearty garbanzo and vegetable soup seasoned with Middle Eastern flavors: cumin, tomato, lemon... Cooking the zucchini separately and adding to the soup at the end allows it to retain a good texture and adds freshness. If you use canned beans, rinse them well. If you cooked your own from dried beans, reserve the cooking liquid to use in the soup.

Time 50m

Yield 10 cups, 6-8 serving(s)

Number Of Ingredients 23

5 tablespoons olive oil (divided)
1 large onion, diced
1 carrot, diced
1 stalk celery, including tops and leaves, diced
1/2 cup fennel bulb, sliced thinly
4 garlic cloves, minced
2 teaspoons cumin seeds
1 teaspoon fresh thyme
1/4 teaspoon crushed red pepper flakes
1 bay leaf
6 cups garbanzo beans, cooked (divided)
1 cup vegetable broth (chicken style preferred)
3 cups chickpea liquid (from cooking dry beans) or 3 cups water
1 (14 ounce) can diced tomatoes (with liquid)
1 small potato, diced
1/2 teaspoon ground coriander
1/3 teaspoon ground mustard
1 zucchini, diced
1 garlic clove, crushed
1 teaspoon mustard seeds
1 tablespoon lemon juice
salt and pepper
1 tablespoon red wine vinegar

Steps:

  • Saute 3 tablespoons olive oil, onion, carrot, celery, fennel, 3 cloves minced garlic, cumin seed, thyme, red pepper, and bay leaf over medium heat for about 5 minutes until vegetables begin to soften.
  • While vegetables are sauteeing, puree 5 cups garbanzos with vegetable broth (but leave a slightly coarse texture).
  • To sauteed vegetables, add garbanzo stock (or water), pureed beans, whole beans, diced tomatoes, potato, coriander, and ground mustard. Bring to a simmer and cook for 20-25 minutes. STIR FREQUENTLY because the bean solids tend to settle and will stick and burn.
  • Meanwhile, saute zucchini, smashed garlic clove, a pinch of salt, and mustard seeds in remaining 2 tablespoons olive oil over medium high heat, until zucchini is lightly browned but still crisp-tender.
  • Before removing zucchini from heat, add lemon juice and cook until juice is evaporated.
  • Add zucchini and red wine vinegar to soup. Simmer another five minutes. Season with salt and black pepper to taste.

AUTHENTIC MIDDLE EASTERN HUMMUS (CHUMMUS)

Authentic Middle Eastern Hummus (Chummus) image

Authentic chummus is very different and SO much tastier than its American counterpart. This chummus is creamy and delicate in taste rather than overpowered with garlic or thick and pasty. It is eaten warm, fresh, and as a whole meal spread out in a dish and drizzled with fresh olive oil. It is scooped up with pita, raw onion slices, or just a fork. Do NOT use canned chickpeas (garbanzo beans)!

Number Of Ingredients 9

3 cups dry garbanzo beans, soaked overnight
1 pinch baking soda
½ cup extra-virgin olive oil
¾ cup tahini paste
¼ cup fresh lemon juice, or more to taste

  • Drain the beans, reserving some of the water to use later. Reserve a small handful of the whole beans for a garnish. Transfer the rest to a blender or if you have a hand blender, a large bowl. Blend the beans until smooth, adding 1/2 cup of olive oil gradually. Add some of the reserved water if needed to help it blend. Add the tahini and blend in along with the lemon juice. Blend in the garlic, cumin and salt.
  • Spread the hummus into a flat serving dish and garnish with the reserved beans and a drizzle of olive oil.

MEDITERRANEAN SMASHED CHICKPEAS

Mediterranean Smashed Chickpeas image

You smash half the chickpeas in this recipe to make a spread, sort of a warm rustic hummus enhanced with garlic cumin and hot pepper, along with a liberal drizzle of olive oil. You can use either freshly cooked dried beans or canned chickpeas (also known as garbanzo beans), though freshly cooked is always preferable. Tuck some into a pita for a vegetarian sandwich or serve as a dip to eat with bread and olives; a dollop of minty yogurt and a drizzle of tahini sauce make nice additions.
