MICROWAVE LEMON BARS
A super easy & QUICK dessert . I make it when hubby is crying for dessert .. 5 min to make. about 7 min to cook & then a bit of time to cool.. as long as you can stand to wait :-)

Steps:
- 1. Melt butter in Microwave in a mixing bowl. Add 1 cup flour & 1/4 cup powdered sugar. mix with a fork. Press into an 8 x 8 glass pan. microwave on high power 2-3 min. Set aside .
- 2. In same mixing bowl, Whisk :2 eggs, 3 T lemon Juice, 2 T flour & 1 Cup sugar. Pour over baked crust. Microwave 3-4 min. ( Turning once or twice ) Sprinkle with powdered sugar. let cool 30 min.

- In a large microwavable bowl, combine the sugar and eggs, whisking until smooth. Then, stir in lemon juice, lemon zest, and the butter.
- Microwave the lemon and egg mixture for 3-4 minutes in 45-second intervals, stirring between each interval until the mixture is thick. What you're looking for is the lemon curd to be just thick enough to coat the back of a spoon.
- Transfer the lemon curd to a bowl and cover with a layer of cling wrap, directly touching the curd. This will keep the curd from forming a skin. Allow for full cooling.
- When cool, cover and refrigerate the lemon curd.
- The curd will keep covered in the fridge for up to 3 weeks.
MICROWAVE TORSK WITH LEMON BUTTER
My Scandinavian mother always referred to cod fish as torsk and my brother and I loved it when she made her baked torsk. I like this recipe because it's easy and I can make it in the summertime without having to turn on the oven. Serve with clarified butter for dipping if you're a real butter junkie.
