A quick way to make perfect salmon fillets. They stay firm and the house doesn't smell like you cooked fish at all.

¼ cup butter
¼ cup white wine
1 tablespoon lemon juice
1 tablespoon dried dill weed
1 teaspoon white sugar
salt and ground black pepper to taste
4 salmon fillets

Steps:

  • Combine butter, wine, lemon juice, dill, sugar, salt, and black pepper together in a microwave-safe casserole dish; place cover on dish.
  • Microwave butter mixture until butter is melted, 45 to 60 seconds. Add salmon, skin-side up, to butter mixture and place cover on dish. Microwave until salmon flakes easily with a fork, about 6 minutes.

2 cups sliced fresh mushrooms
2 tablespoons butter
2 tablespoons lemon juice
1/2 teaspoon dill weed
1/4 teaspoon salt
1/4 teaspoon pepper
4 (6 ounce) salmon fillets

Steps:

  • Combine mushrooms and butter in a microwave safe bowl.
  • Cover and microwave on high until mushrooms are tender, 3-4 minutes, stirring twice.
  • Add lemon juice and seasonings.
  • Place salmon in an 8 inch square microwave dish; spoon mushroom mixture on top. Cover and microwave on high until fish flakes easily with a fork, 4-6 minutes.
  • Let stand 5 minutes before serving.

LEMON MUSHROOM SAUCE

A lightly flavored sauce that can be served over chicken, fish or pasta. Cooking is a Creative Sport.

1 tablespoon olive oil
2 tablespoons butter
3 tablespoons flour
1/2 cup mushroom (a 5 ounce can drained is fine)
1/2 cup white wine (I like Dry Vermouth)
1/4 cup lemon juice
1 cup chicken broth (canned is fine)

Steps:

  • Heat the olive oil in a sauce pan, add the butter and stir until melted.
  • Add the flour, and stir until a paste has formed.
  • Add all the wine and lemon juice, followed by 3/4 of the chicken broth. Add the mushrooms. Then Bring to a simmer, and if the sauce is too thick, slowly add the rest of the broth.

Baked Salmon With Mushroom Sauce image

A wonderfully moist and delicious baked salmon dish fit for company. Garnish with extra fresh parsley and serve with lemon wedges.

1 1/2 lbs fresh salmon
2 tablespoons butter
2 cups sliced fresh mushrooms
2 green onions, chopped
2 tablespoons flour
2 teaspoons chopped fresh parsley
1/2 teaspoon salt
1/2 cup milk
1/4 cup dry white wine (or 2 T water with 2 T fresh lemon juice)

Steps:

  • Cut salmon into 4 equal portions.
  • Lightly butter a 13x9 baking dish.
  • Place salmon in the dish.
  • Heat butter in skillet and add mushrooms and green onions.
  • Saute over medium heat until mushrooms are tender.
  • Stir in flour, parsley and salt.
  • Add milk and bring to a boil.
  • Cook and stir until thick, then add wine or water and lemon juice.
  • Boil one minute, then pour sauce over salmon.
  • Bake at 350° for 20 to 25 minutes or until fish flakes easily.
